MT TAM
In the world of cheese, Brie is pretty much
universally loved. Buttery, tangy, single-,
double- or triple-crème – they all hit a
similar, somewhat predictable mark, which
accounts for much of their popularity. It’s
hard to go wrong with most of them and
you’re all but guaranteed that someone will
annihilate it at a party.
Cowgirl Creamery’s Mt Tam Brie is no
different. At a party, it oftentimes won’t
last more than ten minutes. There’s one
particular guest who I hold accountable
for this – when she shows up, the Mt
Tam is sure to be gone soon after. It’s so
predictable that lately I’ve taken to putting
it out in halves, staggering the servings so
others can have a chance. My favorite is
their triple-crème, made approximately 15
minutes from my back door with organic
milk from Straus Family Creamery cows.
As it warms, the Brie begins a cascade
that has always intrigued me, inspiring this
shoot. Consider this proof that the next
time you see me staring at a party spread,
there might be more going on than just
plain hunger. Or maybe not.
