refurbishment of our Orangery, along with assistance from Lesley Osbourne.
The room is now perfect for our couples wedding ceremonies and also for
our guests to have an intimate dining experience, to enjoy our SEVEN course
tasting menu.

Congratulations to our Employee of the Month for May,
Head Pastry Chef, Neil Dunlop.



Neil has received this accolade due to his wonderful input to the kitchen

and for his contribution for the evolving des
serts and afternoon teas.



Neil received a bottle of Champagne a SEVEN course meal for two,

complete with pre-dinner cocktails and wine with his meal.

I’ve worked at Balbirnie for 6 years and I am extremely passionate about my
role and what Balbirnie stands for. I have worked within various
departments within the hotel and my most recent promotion was to Talent
and Culture Manager from Reception Manager last year. Part of my role is
dealing with human resources and within that recruitment. The hospitality
sector has faced one of the biggest challenges in recruitment due to the
pandemic and we have seen many skilled workers leaving hospitality to work
in different sectors and ultimately not returning. With huge thanks to our
company directors we are now an above living wage employer which we
have seen positively impacting recruitment and additionally staff retention.
Meals on duty, paid breaks, staff discount in our restaurants and for our
takeaway, discounted staff stays, employee of the month, flexible working
hours, opportunities to progress and tips are just some of the incentives we
have in place to ensure our employees feel appreciated and valued. Our
employees are what makes Balbirnie so special and every single one is a
credit to the team!

Hi Katy,

I just wanted to send an email to say what an amazing time we all had on Friday. The night could
not have gone any better, the room looked amazing, the canapes, the food and the drinks we're
all brilliant - not one person had a negative thing to say about it. Angela was absolutely fantastic
at taking care of us as was Erin. My Mum had a brilliant time and felt very special being wined
and dined. Thank you so much for making the process so easy from start to finish.

Scones

INGREDIENTS: METHOD:

500g self raising flour Preheat oven to 190 degre
es.
90g caster sugar
125g cubed butter Sift the flour and sugar into a mixing bowl and then
150g dark choc chips rub in the butter until it resembles fine crumbs.
Grated zest of 1 orange
Juice from one large Add the chocolate chips and the zest from the
orange orange.
160ml of milk
1 egg In another bowl, Beat the egg with the milk and
orange juice and then gradually pour into the flour
mixture until it begins to form a soft dough.

Turn out onto a floured surface and roll out to
roughly 3cm thick. Using a 7cm cutter will make 10
scones.

Place the scones on to a baking tray and brush the
tops with milk. Then bake for about 15 minutes
until risen and golden brown.

How did your love story begin? How did your love story begin?
Robbie and I met at a mutual friend’s wedding in 2019, and arranged a date that week. After the first
date we quickly arranged another and it just continued from there.
We spent lots of time together, went on holidays, and after a year we moved in together and we have
been planning for our future ever since.


Why did you choose to get married at Balbirnie in April?

Balbirnie House is just the most beautiful venue inside and out, with the beautiful pillars and character,



the high ceilings and the romantic décor, it could not be a more perfect wedding venue. The grounds

surrounding Balbirnie House are also stunning, especially during spring time which is why we chose to
get married in April. We new at this time of year everything starts to come to life and there would be
many beautiful flowers, and the weather can be lovely at this time of year without it being too warm.

Can you tell us about all the beautiful special touches and ideas for your gorgeous day?


Because Balbirnie House is so beautiful we knew we would not need to add many additional touches,

the venue has so many beautiful features. Our vision was simplicity and just to have little touches of
each of us throughout the day. Robbie is very into music so we incorporated that by having little things
like a guitar prop which we could then have guests write a message on along with our guest book. We
arranged for amazing musicians to play music that we enjoy during our drink’s reception and our
favours for guests were guitar badges, along with a cream egg (just because it was Easter!). We chose to
add a little bit of rustic with a whiskey barrel for our cake which was a naked cake and absolutely
delicious, a wooden guest book, cake topper and ring box, and our flowers matched the rustic vibe with
a lot of greens in amongst a variety of wild roses and pampas grass, which I absolutely loved, the flowers
were just beautiful and Lynn at Poppy Floral Design did an amazing job of dressing up all of our props
with flowers too.

I would say just don’t worry about a thing, Gaynor and
her team, and all of the staff at Balbirnie are
phenomenal, the passion they have and the attention to


every detail will ensure that you have the most perfect

day. We were looked after so well and everything went
just as we had planned. The food was absolutely
delicious, our guests gushed about how good it was. The
one thing I’ll always remember is just how happy
everyone was on, smiles all day long which were
captured by our wonderful photographer Rob Thomson
at Lifetime Photography. It was perfect.
