Smart entrepreneurs know how to make the best of a

di cult situation.

Located at 1983 Commerce Street in Yorktown

Heights, Pappous Greek Kitchen, which has been in

town for over two years now, took the secret of their suc-

cess, and they doubled down during the pandemic. Actu-

ally, they quadrupled.

e dine-in restaurant already had a robust take-out

operation, so when COVID hit Westchester, Pappous

Greek Kitchen started doing four times its normal take-

out business.

“Our restaurant model made it easy for us,” said restau-

rateur Rui Cunha, who runs the business with his wife,

Bessie, his oldest son and manager, Andrew, and another

son, Alexander. He and Bessie have two other children,

Christiano, 10, and Stefano, 6.

“We’re truly a family restaurant,” he said.

Another secret to their success is their a ordable prices.

“We’re not a steakhouse and ne dining,” Cunha ex-

plained in terms of why it might be more di cult for a
