Pyes Pa Foodie

SPICE-BAKED CHICKEN WITH AUTUMN VEGES AND LENTILS

 2 T Olive Oil, Maple Syrup, Soy Sauce, and Apple Cider Vinegar
 2 teaspoons each ground cumin and Smoked Paprika
 1 teaspoon ground turmeric
 ½ teaspoon chilli flakes
 3 cloves of garlic
 1 x 400 grams tin each brown lentils, drained and rinsed and cherry tomatoes.
 6 Chicken thighs, skin on , bone in.
 2 red onions, cut into quarters.
 1 eggplant halved lengthways, and each half cut into 4 large chunks.
 ½ Medium butternut pumpkin, cut into 1 ½ cm thick slices skin on
 Sea Salt and Ground Pepper

Preheat the oven to 170°C fan bake.
Combine all of the ingredients, including lentils and tomatoes, in a large bowl. Add the chicken
and vegetables and turn to coat well.
Tip onto the tray and spread into a single layer. Season and
bake for 30 mins. Turn the vegetables over and baste the
chicken.
Cook for a further 15-20 minutes, or until the chicken is
cooked. Top with Spinach, a dollop of yoghurt and sprinkle of
chilli flakes.

Garlicky Lemon Spinach
 2 T Olive Oil
 2 cloves garlic
 Finely grated zest 1 lemon
 3 tightly packed cups baby spinach leaves
 1 T lemon Juice
 S and P

Heat the oil in a large frying pan over a medium heat. Sizzle
the garlic and zest for about 30 seconds. Add the spinach
and turn to wilt lightly, then add the juice. This should take
under a minute. Tip into a bowl.

Thanks for your concern.
First off, I'm OK, I was a bit shaken up though.
For those of you that aren’t aware, I was robbed at the petrol station earlier this morning.
After my hands stopped trembling, I managed to call the Police.
They were quick to respond and calmed me down because my blood pressure went through the roof!
My money is gone, however.
The police asked me if I knew who did it and I told them,
“Yes, it was pump number 2”.

May 16 – 22 is Hospice Awareness Week (HAWK) 2022!
HAWK is an opportunity for communities to better understand how local hospices can help patients and their

families ‘live every moment’. This year, as part of HAWK, we are running a community appeal with the help of our
volunteers and local businesses. Can you help?

collector at one of our various sites across the
city? As a collector, you will be a friendly face
helping someone make a donation to Waipuna
Hospice. Get your friends, family and colleagues
together and help raise important funds.
Shifts are only two hours long and are a fun way to
connect with the community while helping raise
crucial funds to help care for the terminally ill and
bereaved.

ANZAC Day by Nichelle Healy

Rā Maumahara ki nga hoia o Aotearoa me Ahitereiria - a
day to remember those who served in the New Zealand
and Australian armed forces. Over the holidays our
tamariki have been learning about Anzac Day through
some wonderful resources provided by one of our very
dedicated mums. Our tamariki have been busy
designing and decorating Anzac wreaths, learning the
Anzac ode, lacing poppies, and learning key Anzac
terms in te reo Maori.

With term 2 about to start, we have a lot to look
forward to. We are looking forward to taking a journey
into the Pacific by holding 5 workshops over the term to
learn more about the Pacific and explore some of the
nations, their islands and cultures. Our tamariki will have
the opportunity to take part in and learn about visual
arts, music and dance, food and celebrations, myths and
legends, family and community and languages of some
of the islands. We hope that everyone has enjoyed a
wonderful Easter with family, friends, and too much
chocolate, and look forward to continuing to share the
rest of our term with you.

Our sessions run on Tuesdays and Fridays from
9:30 - 12pm. We are located next to Pyes Pa School,
come along and join the fun, we offer the first three visits
for free!

Building Primary school culture at ACG Tauranga

ACG Tauranga has seen some exciting new developments in 2022, including the
introduction of a range of Primary-specific lunchtime clubs, activities, events and
EOTC (Education Outside the Classroom) opportunities.

“The Primary school has been growing steadily. It is now at the stage where we can really start to develop our
own special Primary identity,” explains Primary Dean and Faculty Coordinator Dani Archer.

The new lunchtime equipment has proven particularly popular, especially the blocks, handballs and cricket
sets. In addition, other new initiatives include an Art Club, Enviro-Group and EPro8, while Term 2 will see the
launch of Craft Club, Coding Club and Problem Solving for Years 5 and 6.

“By participating in clubs, students not only learn and develop the specific skills for their chosen club, but they
get to work with students from other classes and learn about commitment.”

New leadership opportunities are also among the line-up, with several Year 6 students appointed recently as
House and Pillar leaders, wet day leaders, library leaders and more.

Mallow - Mellow and Soothing by Julia Sich, BA, Dip. Hort. (Distinction)

The mallow family contains over twenty edible species. Some are considered weeds while others like hollyhocks
and hibiscus are treasured garden plants. Marshmallow is a well-known healing plant and it was used to make
the original marshmallow sweets. Cacao and cotton are in this family also. The genus name Malva is Greek
meaning soft or soothing, that refers to the mucilage and the recorded history of using mallow goes back through
antiquity.

Some of the weeds you might recognize in this family are dwarf mallow (Malvaneglecta),tree mallow (Malva
dendromorpha)- a biennial shrub that grows up to 2 m tall - and creeping mallow (Modiolacaroliniana) a mat
forming perennial ground cover.

Mallows grow all over the world on neglected, bare ground around the edges of gardens, walkways, and
creeping mallow grows in lawns. Before I knew creeping mallow was edible, I cursed it because it forms a mat,
putting down roots at the nodes. It can grow a metre out from the base and so it is very hard to get out. Now I see
it in a completely different light as, in droughts, it is the only green thing in a brown, dry lawn. And it is very edible
with light green, round to heart-shaped leaves. The seeds are divided into segments and mallows are also known
aptly as ‘cheese weed’.

All mallow flowers have five petals and vary in colour from pink to mauve with stripes of darker pink or mauve.
Other members like hollyhock and hibiscus vary from pink or red to white and yellow or even multi coloured.
Creeping mallow has reddish orange flowers.

Mallow is an amazing plant for making smoothies, juices, soups, milks, desserts, for thickening recipes and for
drying to make green powder, which I have done. Mallow is high in calcium, magnesium, potassium, zinc, iron,
selenium, sodium, iodine, vitamins A, B & C.

The chopped leaves and stems, steeped in cold water for several hours or overnight, turn the water into the
consistency of egg whites. Vegan recipes could use this as an egg substitute.

The leaves are mild tasting and a pleasant addition to salads, casseroles and soups. The whole plant blended,
after soaking and strained, makes a thickened soup base.

Hibiscus flowers make a lovely tea but not all hibiscus varieties can be used. H. Sabdariffa ‘red sorrel’ or
‘roselle’ is the variety long used in tea making.

Mallow's gelatinous, slimy nature has the effect of drawing, clearing, lubricating, cleansing, soothing and gently
removing toxins from the body. The mucilage is a soluble fibre that absorbs water, increasing the bulk in the
intestinal tract helping to prevent constipation. It also increases immunity by stimulating macrophages and white
blood cells. A further interesting feature is that mallow contains salicylic acid, the natural source of aspirin. Make
a tea or
juice of it to
relieve pain
or
headaches.

There
are so
many good
things
about these
plants that
it could be
a daily
addition to
our diets - it
is in mine.

Seize the month! by Steve Gore

My partner and I had planned a month-long roadie around the South Island, incorporating a bunch of mountain
bike trails…and then omicron hit. Neighbours who had a similar plan a few weeks earlier pulled the plug on their
trip out of concern for being able to get home, should things turn to custard. We took the plunge and have no
regrets.

We started in Nelson and rode a piece of a ride that took in Spooners tunnel, a 1.3km disused rail tunnel. One
of my hopes for this trip was to ride the Old Ghost Road, a 2-3 day 85km ride that is one of the “must-dos” for
mountain bikers. We were on ebikes and I wanted to do it in a day as I couldn’t see my partner being too
enthusiastic about hanging around Westport for a couple of days. The weather was perfect, but I was reminded of
how nasty it can get when I saw that the shelter at the top of the 24km uphill was anchored to the rocks by strong
cables. Friends had reported pushing their bikes through horizontal snow on this ride. I wish that I had been able
to take a couple of days as it is a spectacular, and, frankly, terrifying, ride or walk. Much of it is on very steep cliffs
or riding over not-so-old slips – it’s a ride that requires a good degree of skill. It would have been nice to savour
some of the views for a while, rather than pushing on constantly. I considered taking a personal locator beacon
but didn’t get around to it. It would have been a good idea as I passed only half a dozen parties on the ride. This
was a bit of a theme of this whole trip…no one around.

Tekapo was the next base and a cabin in the campground gave us a stunning view up the lake to the
mountains. We left to a beautiful easy ride around Lake Ohau followed by the drive over the Lindis Pass, which I
always find beautiful. We stayed in Alexandra for a few days, caught up with old family friends and rode the
increasingly popular Lake Dunstan ride, that features cliff hugging bridges and a coffee cart (boat) positioned
strategically before the Cairnmuir ladder, the biggest climb on the trail.

From Central Otago, we went to Dunedin, stopping to ride through the
Poolburn Gorge, a highlight of the Otago Rail Trail, picked up our boys and
continued south. Invercargill surprised us with its stunning gardens, that
include a stumpery and a highly visible tuatara breeding programme.

Milford Sound was a bit of a highlight. We had driven there before but
hadn’t done the trip out into the Sound. We pulled into an almost empty
carpark. The space allocated for about 30 buses was empty. We were the
only boat out on the water and, with such a small contingent, it was easy to
get the viewing space you wanted. What intrigued me more than anything
was the Te Anau hotelier’s sincere gratitude. They are struggling down there and are pleased to see anyone!

Another highlight was the evenings spent in pubs that are away from the tourist traps; so, by the second night,
you feel part of a community. People are curious about where you are from and why you are there.

It was a great trip. The only thing we had booked when we left were the ferries and we left each place not
knowing where we were going to spend the night, but the absence of tourists meant we had a choice of
discounted accommodation. It felt like our travelling in the 1980’s before the internet gave us the ability to plan a
trip like this completely, albeit in a much nicer car. The roads were empty, the best cafes had plenty of tables. If
you are thinking about doing a roadie….stop thinking and go! The international tourists will be back before you
know it and this opportunity to enjoy our beautiful country in comparative peace will be over.

Do you grow your own food and vegetables and want to learn more or see what others are doing
locally? We are a casual friendly group that meets every 3rd Sunday in the month to share ideas on
growing food.

There wasn’t a food growers group this month, but a few of us attended the trees croppers group
visit to ‘Martha’s Orchard’ at Te Teko. Since 2019, Bryon and Lara have been developing a food
forest demonstration site. Some of the principles included being process - rather than input -
driven, planting for succession, and managing plants by pruning and leaving organic matter as
mulch to increase soil fertility and retain moisture. This all supports the growth and success of
selected ‘high value’ crops. The long narrow (1-2m wide beds) were planted densely with
repeating plants such as eucalyptus and tree lucerne - important in the early stages to provide
nitrogen, nutrients and shade. The eucalyptus is pollarded initially and, when crops become more

established, the long poles are cut to the ground for other uses. Other support plants included
acacia, comfrey, canna and poplar. Canopy species are managed to provide light to crops. Tree
crops included figs, banana, carob, cherimoya, loquat, citrus, guava, inga bean, papaya and
tamarillo. Banana stalks are left on the ground as they retain and release water. Perennial crops
included sugar cane, arrowroot, taro, lemon grass and raspberries. Lettuce and other vegetables
and annual flowers filled in the gaps. It was a great opportunity to rethink how we grow our fruit
and vegetables
