INTRODUCTION
Whenever I’m asked how I got here—presumably , to a place
where you’d have my cookbook in front of you, not my writing
lair with a bay window overlooking the sea my sofa with an ex-
plosion of wooden train tracks around me—I’m always wish I
had a better kitchen story to share. ‘Just tell us your story!’ peo-
ple say, but I think that they’re lying. I think people want me to
tell them a good story.
They want to hear that I 'am a fifth-generation chili maker from
Texas or that I only eat food that I hunt, forage, or find under
the wheel of a car. That I went to cooking school and spent
years on the line being yelled at by a French guy with his name
over the door. Or maybe I was in a thrift store and found a col-
lection of handwritten Hungarian recipe cards and made it my
life’s work to bring an old’s lady’s cooking back to life. People
want a story with drama and excitement. They don’t want to
hear that I’ve been a record store shift supervisor, a swindler of
soft-serve frozen custard, an art therapist, and an IT reporter.
They don’t; want to hear that I just like to cook.

This sweet almond cake is for
everyone who loves the flavour
of almond extract. It may look
like a plain vanilla cake, but the
flavour is much more unique
with almond extract both in the
cake and buttercream frosting.
And not only is the flavour on
point, but the texture is every-
thing you want in a cake. It’s
moist and rich but so soft and
fluffy.

TASTE DELIGHTS SWEET ALMOND CAKE
• 1 cup (220g) unsalted
butter (room temp)
• 1 1/2 cups (300g) granu-
lated sugar
• 1 cup (125g) all-purpose
flour
• 2 cups (230g) cake flour
• 3 tsp baking powder
• 1 tsp salt
• 4 large egg whites (room
temp)
• 1 whole egg (room temp)
• 2 tsp almond extract
• 1/2 tsp vanilla extract
1 1/4 cup (305ml) butter-
milk* (room temp)
ALMOND BUTTER-
CREAM
• 1 1/2 cups (330g) unsalt-
ed butter (room temp)
• 2 tsp almond extract
• 4 cups (480g) powdered
sugar
• 2–3 tbsp milk

Ingredients CHOCOLA
•2 cups sugar
•1 3/4 cups all-purpose
flour
•3/4 cup unsweetened
cocoa powder
•2 tablespoons Dutch
process cocoa, optional
•2 teaspoons baking
soda
•1 teaspoon baking
powder
•1 teaspoon kosher salt
•2 eggs
•1 cup buttermilk
•1 cup strong black
coffee
•1/2 cup vegetable oil
•2 teaspoons vanilla
extract
The Best Chocolate Cake combines cocoa
and coffee to create a chocolate lover’s
dream. The rich buttercream frosting
makes it perfect!

ATE CAKE Instructions
1. Heat oven to 350°F. Grease
and flour two 9-inch round
baking pans or one 13x9x2
-inch baking pan. Set aside.
In the bowl of a stand mixer
fitted with the whisk
attachment or in a large
bowl with an electric mixer,
combine the sugar, flour,
cocoa(s), baking soda,
baking powder and salt.
Mix on low until dry
ingredients are thoroughly
combined.
2. Add eggs, buttermilk,
coffee, oil and vanilla. Beat
on medium speed for about
two minutes; the batter will
be thin.
3. Pour batter evenly into
prepared pans.
4. Bake in preheated oven for
30 to 35 minutes for round
pans, 35 to 40 minutes for
rectangular pan or until
wooden toothpick inserted
in center comes out clean.
5. Cool 10 minutes; remove
from pans to wire racks.
Cool completely.
6. Frost as desired.

FROZEN I
This Frozen Ice Mango
is made with four
simple ingredients, is
healthy and low in
added sugar, and can be
made in your Vitamix or
food processor. It’s
ready instantly no
freezing time required!
ingredients
3 cup frozen mango chunks
1/2 cup canned coconut
milk (full-fat recommended)
1/2 teaspoon pure vanilla
extract
2–4 tablespoons agave
nectar (or liquid sweetener
of choice such as honey or
maple syrup), to taste
pinch of salt (optional)

ICE MANGO
TASTE DELIGHTS instructions
Place all ingredients in your
high-powered blender or
food processor.
Process until you get a
smooth and creamy mixture
and there are no more
mango chunks. Do not over
process or it will begin to
melt. If you are using a
Vitamix, you will need to use
your tamper stick.
Serve immediately. Enjoy!

EASY BAN
Instructions
• Using 1 saucepan.
• Melt the butter, sugar and vanilla
in a medium-sized saucepan.
• Remove from the heat.
• Add mashed bananas and stir
through until just combined.
• Add egg and mix well. Stir in the
flour, then pour in the milk and
fold in lightly.
• Bake at 170C for approximately
40 minutes.

Ingredients
• 125g Lurpak* Butter
• 3/4 cup caster sugar
• 1 tsp vanilla essence
• 1 egg
• 2 bananas mashed ripe
• 1 1/2 cups self-raising
flour
• 1/4 cup milk
mazing to cook
