This collection has grown significantly, and we now have 50% more wines than we had at our launch in July 2019. Wines share of the on-trade market is decreasing slightly in volume but is increasing in value. At D&B Vintners we find consumers are drinking less but drinking better quality and our latest range reflects this. Many of our suppliers are now certified as sustainable &/or organic and we have a vegan friendly selection. We are pleased to say that our wines are on-trade exclusive so you will not see them in your local shops. We are proud to be a member of the Society of Vintners, working alongside them we can source fantastic wines with competitive prices, many of which are award winning. Wine Menus D&B vintners are very pleased to offer a design and print service for your in-house menu creation. This is a complimentary service for our clients who take a full, on-trade wine list from us. Having a well-constructed list helps your customers make informed choices and is proven to encourage them to spend more on better quality wines. Our menus are also a very useful as a training aid for staff and we can also adapt them to promote food and wine pairing. All our lists are unique to your venue and can vary from a short simple list for your tables to encourage impulse purchases, to a comprehensive list including detailed descriptions and tasting guides. 5


Storing & Serving Storing Wine should be stored in a cool dark place away from direct sunlight. If the closure is cork the wine should be stored on its side in order to keep the cork moist, this prevents the cork from drying out and shrinking. If this happens air will enter the bottle and the wine will oxidise. Screw cap wines can be stored in an upright position. Serving temperature Glasses Using the correct glasses can be very beneficial in ensuring your wines smell and taste at their very best.Utilise a glass that will allow customers to aerate the wine. This is done by swirling the wine around the glass. It’s important not to overfill, roughly a third full should suffice and will allow the wine to breath, improving aroma and taste. Argentina There are many different varieties of grapes cultivated in Argentina, reflecting the country’s many immigrant groups. The French brought Malbec, which makes most of Argentina’s bestknown wines. ... Torrontés is another, typically its grape is mostly found in the provinces of La Rioja, San Juan, and Salta and is the fifth largest producer of wine in the world. Argentine wine, as with some aspects of Argentine cuisine, has its roots in Spain. During the Spanish colonization of the Americas, vine cuttings were brought to Santiago del Estero in 1557, and the cultivation of the grape and wine production stretched first to neighbouring regions, and then to other parts of the country. Until the early 1990s, Argentina produced more wine than any other country outside Europe, though the majority of it was considered unexportable. However, the desire to increase exports fuelled significant advances in quality. Argentine wines started being exported during the 1990s, and are currently growing in popularity, making it now the largest wine exporter in South America. 7

Australia Australia is the 4th largest wine exporter in the world and wine is produced in every single state. There are over 100 grape varieties planted down under, which include Shiraz, Cabernet Sauvignon, Merlot, Chardonnay and Sauvignon Blanc. The South Australian wine industry is responsible for most of the production of wine in Australia. In recent years, the Tasmanian wine industry has emerged as a producer of high quality wines. In particular, the Tamar Valley has developed a reputation for its Chardonnay and Pinot Noir, which are well suited to the cooler Tasmanian climate. Queensland is also developing a wine industry with over 100 vineyards registered in the state. Chile Chile has a long history as a New World wine region. It was the 16th century when the Spanish conquistadors brought Vitis vinifera vines with them as they colonized the region. In the mid-19th century, French wine varieties such as Cabernet Sauvignon, Merlot, Carmenère and Cabernet Franc were introduced. In the early 1980s, a renaissance began with the introduction of stainless-steel fermentation tanks and the use of oak barrels for ageing. Wine exports grew very quickly as quality wine production increased and the number of wineries has grown from 12 in 1995 to over 70 in 2005. It is now the fifth largest exporter of wines in the world, and the seventh largest producer. The climate has been described as midway between that of California and France, with the most common grapes being Cabernet Sauvignon, Merlot and Carmenère. So far Chile has remained free of the phylloxera louse, which means that the country’s grapevines do not need to be grafted with phylloxera-resistant rootstocks. 13

France Produced throughout all regions of France, production of French wine equates to between 7–8 billion bottles each year. It is the second-largest wine-producing country in the world (4,607,850 tonnes) and traces its history to the 6th century BC, with many of France’s regions dating their wine-making history to Roman times. The wines produced range from expensive wines sold internationally to modest wines usually only seen within France. Two concepts central to the better French wines are the notion of terroir, which links the style of the wines to the locations where the grapes are grown and the wine is made and the Appellation d’Origin contrôlée (AOC) system, replaced by the Appellation d’Origin Protégée (AOP) system in 2012. Appellation rules closely define which grape varieties and winemaking practices are approved for classification in each of France’s several hundred geographically defined appellations, which can cover regions, villages or vineyards. 18

South Africa Dating back to 1659, the first South African wines were produced in Cape Town by its founder Jan van Riebeeck.
