Port & Sherry Sherry pre dates port by almost 2000 years. The first mention of sherry comes in the 1st century BC in a book Geography volume 3 written by Strabo, whilst the origins of port are a little more recent. It's said that the port-making process was invented accidentally by a pair of brothers in the 17th-18th centuries, who fortified the wine with grape brandy to maintain its quality during the long trip from Portugal to England. The wine picked up the flavour of the oak, which the English grew to appreciate. The British perfected port production in the succeeding centuries, hence many ports carry British-sounding names. Port is a sweet red wine that originates from the Douro region of northern Portugal, while sherry is made with white grapes and comes from what is known as “the Sherry Triangle,” an area in the province of Cádiz in Spain. Both are fortified, which means brandy or a neutral distilled spirit is added. They are mainly enjoyed as an aperitif or after dinner. 55

Low Alcohol Recent studies suggest that Low and No alcohol wines sales will double by 2031. A sector that is growing fast. No surprise with quality and taste at an all time high. How it’s made... There are three conventional methods used to make no and low-alcohol wines: 1. Vacuum distillation, which removes the alcohol, before blending aromatics back in afterwards. 2. Spinning cone follows a similar theme but uses inverted cones and centrifugal forces to de-alcoholise the wine through multiple rounds of low-temperature evaporation and condensation. 3. Finally, there’s reverse osmosis, which implements a sophisticated filtration system, allowing the wine to pass through, but not the alcohol. 58
