MARSALA WINE
When John Woodhouse shipped local
wine to Liverpool in the 18th century,
conserving it with extra alcohol, he
“discovered” Marsala. The product took
off and along with Englishmen Ingham
and Whitaker and Italian Florio, they
began a business fortifying local wine.
In the 20th century, industrial versions
were considered cooking wine but
recent products are high quality.

Northeast Sicily

The northeast of Sicily can’t help but
be dominated by Mount Etna, although
the region also consists of three
mountain ranges, a group of islands
with another active volcano, and two of
Sicily’s largest cities. Parts of this area
have been hit by wars, earthquakes,
tidal waves and lava flows, but the
land and the people return from each
ordeal more steadfast. Perhaps that is
why feast days of the patron saints are
celebrated with so much fervour. High
in the Nebrodi and Madonie mountains,
it seems like nothing has changed for
eons – the same castles that guarded
the royal paths of the interior now keep
watch over the modern autostrada.

FROM ICE TO ICE CREAM
Greeks and Romans used Mount Etna’s
snow to chill their wine, and the Arabs
used it to make cold, sweet drinks.
Sicilians were used to mixing ice, sugar
and natural flavours (cinnamon, lemon,
jasmine) to make granita and sorbet
but by the 1700s they had perfected
the craft of ice-cream-making, adding
chocolate brought by the Spanish from
the New World. Sicilian gelato is now
famous the world over (see p76).

Southwest Sicily

Beyond the beauty of the mosaics at the Villa Romana and the
temples at Agrigento, sandy beaches, ruined Greek cities and olive
groves feature all along the little-developed coastline of southwest
Sicily. Enna dominates the wide, wheat-filled valleys, and isolated
farming villages crown the hilltops, with vast expanses of rocky
mountains or rolling fields in between. As a
result of the lack of infrastructure and
mass emigration from the region, the
villages have remained almost as
they were centuries ago.

Due to its easily defend able position
on the top of a tall hill, Enna was
almost the only town in the interior
for centuries. The Greeks called it
the “umbilicus of Sicily”, and it was a
key position for any group that wanted
to take the island. Enna was so well
defended that the Arabs, having tried
to capture it for 20 years, resorted to
crawling in through the sewer system.

Southeast Sicily

The landscape of the southeast is
different from the rest of the island:
here the white limestone strata with
scrubland is broken by steep gorges
and low dry-stone walls. The Greek
and Roman remains at Syracuse are
spectacular, while Caltagirone, Modica,
Noto, Palazzolo Acreide, Ragusa and Scicli
have all been declared World Heritage
Baroque Sites thanks to their Baroque architecture
ornamentation and urban planning. There is also a
gastronomic renaissance taking place
in this area. Seafood from the coastal zones, along with meat,
cheese and wild greens from the interior are being used by young
chefs aware that old traditions and even ingredients are on the
brink of extinction. They are returning to their roots and preserving
and revitalizing the authentic cuisine of the region.
