Against this backdrop of acceptance and renewal of traditional practices combined with ancient Indian ethos, the 7th edition of BW Hotelier Indian Hospitality Summit & Awards 2023, in the presence of eminent personalities from the hospitality, tourism, travel as well as F&B industry, stood as an illuminating trajectory for excellence in the world of hospitality. IHA-2023 featured two days filled with enlightening sessions covering various aspects of the hospitality industry. Held at the Pullman New Delhi Aerocity on October 20 and 21, the summit was a melting pot of hospitality brilliance and innovation, graced by industry leaders from South Asia and global icons such as Dean Dr Dipak C Jain. The inauguration on October 20, led by Mr Hardeep Singh Puri, the Hon’ble Minister of Petroleum and Natural Gas & Minister of Housing and Urban Affairs, Government of India, went beyond being a mere official opening. It served as a powerful declaration of the sector’s significance at the national level, setting the tone for what was to come. Fast forward to October 21 where the Awards’ night, presided over by Mr Arif Mohd Khan, Hon’ble Governor of Kerala, turned into a celebration of excellence. Hoteliers from various categories were honoured with the prestigious BWH IHA-2023 Awards, creating an atmosphere charged with enthusiasm and the spirit of achievement. One of the highlights of the awards ceremony was the meticulous adjudication process. Chaired by Mr KB Kachru, Chairman Emeritus and Principal Advisor, South Asia, Radisson Hotel Group, the five juries, including four regional juries and one national jury, sifted through over a thousand nominations. The dedication of the BW Hotelier team and Dilip Puri’s Indian School of Hospitality (ISH) was palpable, ensuring that the very best received recognition. The overarching theme, Embracing the Future, became the heartbeat of the summit. In this column, I reflect on how this theme reverberated throughout the event, shaping discussions on technological integration and insights into adapting to evolving consumer preferences. The summit wasn’t just about facing change; it was about embracing it with open arms. This column goes beyond being a mere recounting of events; it’s a personal exploration of the key takeaways. As I share my perspective, readers get a glimpse into the future-focused mindset that permeated the discussions. In this exclusive interview with Joris Coenen, Manager of Belgian Meat Office, first port of call when getting in touch with the Belgian pork suppliers, we delve into the exciting journey of introducing Belgian pork to the Indian market and the compelling reasons behind this culinary endeavor. Coenen opens the dialogue with an insightful reflection on the significance of pork in the Belgian diet. “Pork has always been a staple meat in our region,” he remarks. Indeed, for over centuries, it has been the most consumed and produced meat, boasting an impressive one million metric tonnes of modern, high-quality pork production. This tradition serves as a bridge between Belgium and India, offering the Indian culinary landscape a taste of this premium meat. When asked about the impending challenges of the Indian market, the manager acknowledges that India’s perception of pork is different from that of other Asian markets. He says, “The breeds of animals, the way of rearing, the cutting and preparation methods, size and preparation methods vary, which necessitates a significant amount of education to bridge these gaps. We’re here to learn about the Indian cuisine.” He added. Coenen further explains the reason why India is presenting more opportunities now than ever for expanding businesses. He highlights that “as India is in such a developing state, we think that Indian people will soon look for other food options in their diets.” The company’s ambition goes beyond just pork. “With efficient logistics and proximity, other Belgian products like fruits and vegetables hold great promise for the Indian market.” Coenen exclaimed, stressing VLAM’s commitment to diversify and cater to India’s varied tastes. CATERING TO DIVERSE DIETARY PREFERENCES As there were different dietary requirements for the 42 Heads of State, the objective was to work around the same as the food had to go at the same time and there was no scope for error at all which was possible only through meticulous planning and ensuring different stations for preferences, felt Chadha. “We also created allergen kitchens as per the protocol to ensure that we took care of specific dietary requirements. The four-course menu was inspired by Sharad Ritu or the season of autumn which was just setting in India,” he added. It went a long way in creating awareness of millets amongst the dignitaries,” averred Chadha, adding there are many programmes at ITC that focus on heritage cuisine and millets. “For many years now, we ensure these are a part of our buffet offering in some way so that diners learn to appreciate the rich food history of India,” he said. Some of the dishes on offer included: In Sanskrit, patram means a leaf. The plate was modern interpretation on popular papdi chaat, a tribute to India’s vibrant local food culture, transformed into elegant compositions that evoke nostalgia. The chaat bursts with tangy, spicy and crunchy notes. The starter set the stage for the culinary experience that followed. This traditional Indian starter, presented with an artistic touch, encapsulated the essence of comfort and familiarity while signalling the start of the culinary adventure. In Sanskrit, vanavaram means from the forest. It is a dish is made from foraged forest mushrooms along with widely grown jackfruit or kathal. The dish is unique as it blends contrasting elements into a harmonious whole. The indulgent earthiness of mushrooms with nutty notes of Kerala red rice and the rich sweetness of tomatoes create a dish that blends flavours artfully. Jackfruit is elevated to new heights with the infusion of pungent subtle pickled spices paired with silken tomato gravy.In Sanskrit, madhurima means sweet. The symphony concluded with dessert, a sweet that left a lasting impression. The “barnyard millet pudding” was a traditional samak chawal ki kheer, a fusion of tradition and innovation to create familiar Indian sweet with contemporary flair. ROLE OF INNOVATION The endeavour, observed Anand, was to highlight the progressive spirit and culture. “Hence, we used Indian ingredients with a unique taste and presentation, thus creating a differential from the usual Indian meal experience -- Cook Indian, think global. Thus, we created a menu which was Indian in taste but presented in a new rendition, making it appealing to the diners. This culinary showcase will go a long way in contributing to the image of Indian food on the global stage,” felt Chadha. CREATING AWARENESS OF VEG INDIAN FARE Everyone: world leaders, diplomats, industrialists, said Anand, appreciated the cuisine choice and menu served. “Each one enjoyed the meals served to them over these three days. If we dare to unlock our domestic untapped potential, we can reach even loftier heights. Even these numbers would be considered conservative in the grand scheme of our aspirations,” said Hardeep Singh Puri with conviction. The Union Minister for Housing & Urban Affairs and Petroleum & Natural Gas was addressing the hospitality industry luminaries at the 7th BW Hotelier Indian Hospitality Summit & Awards 2023, a celebration of an industry poised to redefine the nation’s economic landscape. Amid his optimism, Puri sounded a cautionary note. He labelled the hospitality industry as “overpriced”, calling for measures to ensure that domestic travel remains affordable. “It should not be more expensive to take a holiday in your own country than in any other. We must address this issue,” he asserted, reminding all present that true progress must be

However, “the jobs created by this large hospitality sector are huge, whether they are direct or indirect, and that makes it one of the most important sectors in terms of the country’s economy,” proclaimed the minister. Citing a report by the Hotel Association of India, Puri showcased the industry’s current and projected contributions to India’s GDP. In 2022, the direct contribution stood at a substantial $40 billion. By 2027, it was expected to reach an astounding $68 billion, with the ultimate destination being the mythical $1 trillion mark by 2047. The Union Minister also talked about India’s historical role as a global economic powerhouse. “In 1700s, our contribution to the world’s economy was around 25 per cent but after the colonial era, it dwindled to a single digit. Yet we are resurging, poised to regain our standing as one of the world’s largest economies. The hospitality industry today is not just flourishing, but thriving in a way that transcends boundaries,” he declared optimistically. The secret to this success, Puri opined, lies in the industry’s remarkable ability to attract a diverse array of investors. “From lawyers to those blessed with surplus cash, they have all seen the immense potential that this industry holds,” he said. Turning his gaze to the civil aviation sector, the minister unveiled yet another astounding achievement. “Our country has doubled the number of airports, from 74 to 148, and the carrying capacity of these airports has surged beyond the preCovid levels,” he shared. Transportation, a vital cog in the hospitality wheel, also came under the minister’s scrutiny. Puri expressed his satisfaction with India’s remarkable progress in urban transportation infrastructure. “We are on the path to having the world’s second-largest urban transport metro system, following closely behind China. Approximately a crore people travel daily in metros across India,” he proudly announced.
