and vegetables.
• It is known as
"Thailand's Rice Bowl". One of the world's
most fertile rice and fruit growing areas, this
is the economic and cultural heartland of the
Thai nation.

The Thai people in the central plain prefer food with smooth and lasting taste with a touch of
sweetness. The way the food is served is an art in itself. The dinning table is often decorated with carved
vegetable and fruit. Food is not too hot, salty, sweet and sour.

or the overall meal: sour, sweet, salty, and
bitter.

Portuguese’s influence in Thai Cuisine
• Portuguese took new products coming from the Americas and market
them in Thailand, for examples tomatoes, potatoes, chilies, papaya,
pineapples, pumpkins, sweet potatoes, cashews, peanuts, and tobacco.
Indian influence’s in Thai Cuisine
• Thai cuisine is influenced by Indian spices and flavors,
• which is evident in its famous green, red, and yellow curries but Thai curry incorporates many Indian spices in its pastes,
it still manages to maintain its own unique flavor with the addition of local spices and ingredients, such as Thai holy basil, lemongrass,
and galangal.
Thai food is healthy because it contains Thai cuisine uses a variety of sauces, such as fish sauce, soy sauce.

1. Rice
It is one of the main foods and sources of nutrition for most Thai citizens.
Thai jasmine rice is the long grain rice which is well known for its fragrance and taste all around the world.
2. Side Dishes : classify to ;
2.1Curry
meat + curry paste + coconut milk, varieties of vegetable meat + curry paste + water, varieties of vegetable
2.2 Soups
• Clear soup ; Stuffed cucumber soup
2.3 Stir – fried
• Mild flavored stir – fried as Sweet and sour stir fried vegetable
• Spicy flavored stir-fried as Stir-fried pork with holy basil
3. Thai salads
Harmonious combinations of tastes, herbal flavors are the key point in
making a salad. The major tastes in salads are sour, salty and sweet. Spiciness
comes in different degrees of strength according to textures and flavors of the
meats used or to the occasions when the salads are served.
4. Dips
Dips are always eaten with rice.
A simple dip is the chilli shrimp paste (Nam Prik Kapi)
Chilies + garlic + shrimp paste + dried shrimps + seasonings of lime juice, fish sauce and sugar.
5. One – plate dish
A complete meal in it self. A one dish item consists of rice or noodle,
meat and vegetable.
For example : Thai fried noodles, Pad thai
During World War II, Thailand suffered a shortage of rice
due to less production in the rice fields, which coincided
with bad flooding.
In order to preserve the stocks of this precious grain, the
Thai government started to promote noodles instead
amongst its people. Noodles used only 50% of the grain,
so were more economical and cheaper to produce.
