January 23, 2022 It’s her Sweet 16, so…… I
don’t know, but I better think
It is almost Taanishi’s birthday of something quick because
and she is turning 16 years old! time is running out! I have a

her party yet. I want it to be
simple but big parties like this
don’t just settle for simple!

January 24, 2022 A lot of people! So, I guess I
have to do some math!
I have decided that I’m going to
make Lemon Cupcakes for her ~Saanvi Gulati
party! Cupcakes are simple but
lemon ones, now that’s something
you don’t see often! I was
searching up recipes and I found
it! I think it is in my
recipes!Though, it only serves 12
people! At Taanishi’s party there
will be 58 people. She is inviting



Original Recipe Directions

- ½ cup unsalted, softened butter to room 1. Preheat the oven to 350 fahrenheit
temperature 2. Use mixer to beat the butter and sugar

- 1 cup granulated sugar together for about 2-3 minutes. Then,add
- 2 large eggs, at room temperature the eggs and the vanilla. Beat for about
- 1 and ½ teaspoons pure vanilla extract 2 minutes, then set aside.
- 1 and ½ cups all purpose flour 3. Mix the flour, baking powder and salt in
- 2 teaspoons baking powder a medium bowl. Slowly add the dry
- ½ teaspoon salt ingredients to the wet ingredients. Batter
- ½ cup milk will be thick. Beat in the milk and lemon
- Zest or fresh juice of two medium zest/juice until combined. Do not overmix
batter at this point.

Bake for about 18-22 minutes.Wait for
the cakes to cool before frosting.

January 24,2022 (cont.) Altered Recipe
Bakes 60 cupcakes
There are 58 people coming to Taanishi’s Sweet - 2 ½ cups of unsalted butter at
16. But, my recipe only bake 12 cupcakes!, I can’t room temperature
have 12 people having a cupcake and the other 46 - 5 cups of granulated sugar
people not. So, I had to to make more than the - 10 large eggs at room temperature
recipe made. Well, thankfully, my 5th grade math - 7 ½ teaspoons of pure vanilla
teacher taught me this! I decided to make 60 extract
cupcakes because having 2 extra cupcakes isn’t bad! - 7 ½ cups all purpose flour
So how do I multiply the recipe? I just multiply - 10 teaspoons of baking powder
all of my ingredients by 5. For example, I need 2 - 2 ½ teaspoon salt
eggs, but, since I am making 60 cupcakes I will - 2 ½ cup milk
need 10 eggs. - Zest or lemon juice of 10 lemons
- Vanilla buttercream frosting

cupcakes instead, because I
couldn’t make 12 and I also
wanted to make extra for my
family., so I just wanted to state
that, I multiplied by 2 for this
recipe!
