VEGAN SALADS

Smarty plants

Teeming with delicious, fresh flavours, these vegan salads
are loaded with healthy ingredients – and if you have your
own vegie patch, here’s a great way to plunder its bounty!

GINGER & MISO 1. Preheat oven to 200°C (fan-forced). Slice the
GLAZED EGGPLANT eggplants in half and score the flesh in a diamond
pattern, being careful not to pierce the skin. Place

20 minutes. The eggplant should be soft to touch.

500g tinned chickpeas, drained and rinsed 1. Preheat oven to 180°C (fan-forced). Place all the
