For decades, this food – tasty and wonderful
in its own right, if not the most healthful –
was the only Chinese food westerners knew,
thanks largely to generations of immigrants
from one small part of this vast country.

Much of the high-carb, low-cost
food referred to as ‘Chinese’ is actually
Cantonese, adapted for our tastes with a
limited list of ingredients.

It stuck around largely because – guess
what? – a lot of people quite like high-carb,
low-cost food (pizza, fries, burgers).

It wasn’t until the 1980s that other
Chinese peoples started immigrating to
western countries – Australia, the US and
Britain – and new provincial dishes began
to appear. The children of these immigrants
grew up to open their own restaurants,
giving birth to this more diverse cuisine.

Over in Los Angeles, there’s Johnny Lee,
specialising in Hong Kong–style barbecue
informed by southern-state barbecue
culture. At Dumpling Daughter, Nadia Liu
Spellman serves an updated version of her
Fujianese mum’s spicy cucumber salad –
crispy chunks of cucumber marinated
in umami-tinged vinegar and tongue-
tingling chillies.

HOW TO MAKE IT

1 In a large bowl, stir together the
cooking wine and soy sauce. Add the
brisket and marinate for 15 minutes.
Add 2 Tbsp water and stir in the
cornstarch. Set aside.

2 In a large pot of boiling water, cook the
bean sprouts and cabbage till slightly
wilted, 2-3 minutes. Strain and
rinse under cold water. Place in a
serving bowl.

3 In a wok over medium heat, heat the
vegetable oil. Add the ginger, garlic,
spring onion, chillies and Sichuan
peppercorns until aromatic, about 1
minute. Add the spicy bean paste and 2
cups water. Bring to a boil, then reduce
heat to low and cover for 10 minutes.

4 Strain out the solid ingredients and add
the beef, simmering for 1 minute.
Transfer beef to the serving bowl with
bean sprouts and cabbage. Ladle in
some broth. Garnish and serve. Feeds 2
