Within our body, each 'human' cell is complemented by 10 microbial cells. These range from bacteria in the gut to viruses and fungi in other parts of the body.There are trillions of these in a human body . Gut bacteria or microbiome helps digest food, produce vitamins, communicate with the immune system and create small molecules that help the brain function. Thus, it is essential to have a healthy gut- by which we mean a gut with plenty of friendly bacteria. There are many different types of bacteria living in the gut. Each of these thrive on different foods. Here are a few tips to keep your gut bacteria healthy. 1. Include probiotic foods in your diet Probiotics need not only be taken in the form of supplements. This can easily be incorporated into your daily diet. These can be defined as live bacteria and yeasts that help the digestive system. Yogurt is one of the most common sources of probiotics. Kimchi or fermented vegetables, miso, cheese, buttermilk, fermented condiments and lentil sprouts are other examples of probiotic foods you should include in your diet. 2. Try having some carminatives in your meals. Carminatives are foods that soothe the digestive system. Some common carminatives are cumin, ginger, oatmeal, cardamom, cinnamon and fennel. While cumin helps with the digestion of black beans, cooked oatmeal lines the stomach and soothes it. 3. Eat weight loss friendly food Being overweight not only affects how you look but also affects the digestion process. When you lose weight one of the first things you would notice is a lowered amount of abdominal discomfort as your gut begins to feel healthier. This is because weight loss lowers the pressure on the lower esophageal sphincter. This does not allow the valve to open more than necessary and hence prevents food and stomach acid flowing back into the esophagus. Along with increasing your intake of fruits and vegetables, switch your cooking oil for olive oil to notice the difference. 4. Increase your fiber intake A diet that is rich in fiber is the best way to promote the growth of diverse microbes in the gut. This includes fruits, vegetables, beans, lentils, cereals and nuts. Fiber also helps prevent constipation and has been linked to lowering the risk of cancer. To prevent the buildup of gas and bloating by increasing fiber, drink plenty of water with all your meals. 5.Eat prebiotic foods: Prebiotics are a type of fiber that stimulates the growth of healthy bacteria. Prebiotic-rich foods include artichokes, bananas, asparagus, oats and apples . Breastfeed for at least six months: Breastfeeding is very important for the development of the gut microbiome. 6. Cut out sugar and avoid processed foods You’re sweet enough already! Fast digesting sugars, otherwise known as Monnosaccarides, are digested so quickly that your little microbes don’t get a chance to take a bite out of them! If you eat too many simple sugars too regularly, you run the risk of literally starving your microbiome to death. Additionally, hungry microbes will resort to munching away at the lining in your intestine, which can lead to inflammation. Try to alter your diet to include more foods with complex sugars, to ensure a happy and healthy microbiome. Here’s a list of some sweet foods that will keep both you and your gut happy! • Honey • Dark Chocolate • Coconut Flour • Apples • Berries • Bananas • Mango • Sweet Potatoes Also make sure you keep out an eye for dreaded hidden sources of monosaccharides. Sugar can sneak into foods you would never expect them to be. Keep an eye on sugar levels in things like smoothies, nut butters, protein bars, salad dressings and even in a gut-favourite… yogurt! 7.Make sure to eat your vegetables! Especially the leafy green ones! Vegetables are loaded with fibres, which cannot be digested by people but are consumed by the good bacteria in your gut. It has been observed that people who follow a diet rich with fruits and vegetables are less likely to grow disease-causing bacteria. Some great examples of vegetables that feed your microbes are: • Leeks • Onions • Asparagus • Broccoli • Spinach • Artichokes 8.Avoid Antibiotics If probiotics are your gut’s best friend, then Antibiotics are your gut’s worst enemy! Antibiotics work buy wiping out any and all bacteria, which makes them very effective for treating illnesses, but very bad for your microbiome. The antibiotic cannot recognize the difference between good gut bacteria and bad bacteria. They work on a ‘kill now ask questions later’ model. Try to buy meat products that were raised without antibiotics, and if you do have to take an antibiotic, make sure to take a probiotic daily for the duration of your prescription to help replenish your gut bacteria. 9.Fermented Foods are gutfriendly Fermented foods are another great source of probiotics. The crowd favourite is yogurt, however, if you’re going to be eating a lot of yogurt, make sure that it is sugar-free! There are several other options that are a great source of good bacteria. Kombucha is becoming a very popular source of probiotics. You can also eat things like pickles, kimchee, and kefir to ensure that you’re getting enough live cultures to keep your gut healthy and happy. 10.Eat foods rich in polyphenols Polyphenols are plant compounds that have many health benefits, including reductions in blood pressure, inflammation, cholesterol levels, and oxidative stress Human cells can’t always digest polyphenols. Because they aren’t absorbed efficiently, most polyphenols make their way to the colon, where they are digested by gut bacteria Some examples of foods rich in polyphenols are: • cocoa and dark chocolate • red wine • grape skins • green tea • almonds • onions • blueberries • broccoli Polyphenols from cocoa can increase the amount of Bifidobacteria and lactobacilli in humans and reduce the quantity of Clostridia The bottom line Your gut bacteria are extremely important for many aspects of health. Many studies have now shown that a disrupted microbiome can lead to numerous chronic diseases. The best way to maintain a healthy microbiome is to eat a range of fresh, whole foods, mainly from plant sources like fruits, veggies, legumes, beans, and whole grains Fermented foods are highly nutritious and can be a great way to add diversity to your diet while enhancing gut health. There is need for at least 99 licences and registrations to set up manufacturing facility for alcoholic beverages. India is one of the fastest-growing alcobeverage markets in the world, with an estimated market size of $52.5 billion (2020) and is expected to grow at a CAGR of 6.8%. The alcohol consumer base is set to reach 386 million people in India by the end of the decade, with almost 13 million people reaching the legal drinking age in the country every year. The growing demand is mainly contributed by multiple factors such as rapid urbanisation, favourable demographics, changing social norms and consumer preferences, mainly among the younger population, rising disposable income for the middle-class population, and increased accessibility and availability. Cardboard and Paper: Cardboard and paper packaging are generally considered safe for food products, especially when coated with food-grade materials. However, certain inks, dyes or coatings used on paper packaging may contain harmful chemicals, and improper disposal of paper waste can contribute to environmental pollution. Glass: Glass packaging is considered one of the safest options for food products, as it does not leach harmful chemicals into the food. However, glass is heavy and can be more expensive than other materials, thereby leading to higher transportation costs and potential energy consumption. Tetra Pak: Tetra Pak is a popular choice for packaging dairy products, juices and other liquid foods. It is a composite material comprising paper, aluminum and plastic layers. While it is considered safe for food, the multi-layered composition makes recycling more challenging, and improper disposal can have negative environmental impacts. Biodegradable and Compostable Materials: Some manufacturers are shifting towards biodegradable and compostable materials made from plant-based sources. Migration testing is a type of food safety test that is used to determine the amount of a substance that can migrate from a food packaging material into the food itself. This is important because some substances can be harmful to human health if they are consumed in large enough quantities. There are two main types of migration testing: Direct contact migration testing involves placing the food packaging material in direct contact with the food and then measuring the amount of substance that migrates into the food. Indirect contact migration testing involves placing the food packaging material in contact with a simulated food matrix and then measuring the amount of substance that migrates into the matrix. The results of migration testing can be used to determine whether a food packaging material is safe for use. If the amount of substance that migrates into the food is too high, then the packaging material may not be safe to use. Migration testing is an important part of food safety and helps to protect consumers from harmful substances. Additionally, the leaching of harmful substances and chemicals from packaging materials is not the only way the food could prove unsafe for consumption. 32 August 2023 | Food And Beverage Matrix FSSAI TO IMPLEMENT CENTRAL SECTOR SCHEME ‘STRENGTHENING OF FOOD TESTING SYSTEM IN THE COUNTRY’ F ood Safety and Standards Authority of India (FSSAI), under Ministry of Health & Family Welfare, Government of India is implementing a Central Sector Scheme named, Strengthening of Food Testing System in the Country, including provision of Mobile Food Testing Labs (SOFTeL) under which an assistance of Rs 14.80 crore has been released to Assam from FY 2016- 17 to 2022-23, towards up-gradation of State Public Health Laboratory, Baminimaidan, Guwahati, Assam. Further, FSSAI has provided assistance in the form of mobile food testing laboratories, Raptor Diagnostic Reader, Frying Oil Monitor, Compact Cabinets, Vehicle Mounted Mobile Freezer Units, portable chill boxes and backpack style box to the State of Assam. FSSAI has also imparted Capacity building of laboratory personnel. Ministry of Food Processing Industries has also supported one of the project of Government of Assam namely State Public Health Laboratory, Guwahati, under the Scheme of Setting up/Up gradation of Food Testing Laboratories with grant in aid of Rs 1.72 crore. The project got completed on February 26, 2020. Government has taken initiatives regarding Food Safety and Consumer Empowerment. Under Eat Right India, FSSAI has increased awareness of consumers towards healthy, safe and sustainable eating habits. Funds have been provided to States under MoU for various certification programmes and to conduct IEC activities through media for raising consumer awareness. FSSAI has provided assistance of Rs 4.58 crore for FY 21-22 & 22-23, under the annual Memorandum of Understanding (MoU) with the state of Assam for strengthening of State Public Health Laboratory, Guwahati. Further, FSSAI has also an online grievance portal on Food Safety Compliance System (FoSCoS) namely ‘Food Safety Connect’ where a consumer can register complaint relating to the food articles. Further, Food Business Operators (FBOs) are required to mandatorily display License / Registration number on the invoices/ sale or cash receipts enabling consumers to make informed choices while making food purchase. Further, regarding empowerment of consumers, the Consumer Protection Act, 2019 has been enacted, which provides for establishment of three-tier quasi-judicial machinery, called Consumer Commissions, at the District, State and National levels to provide simple and speedy redressal to consumer disputes; establishment of a Central Consumer Protection Authority(CCPA), Ministry of Consumer Affairs, Government of India to regulate misleading advertisements

The National Consumer Helpline (NCH), as a prelitigation mechanism, has been set up to receive grievances of consumers through telephone (short code 1915), web portal, letters, SMS, emails etc. and Mobile App. These grievances are taken up with the concerned entities for resolution. Department of Consumer Affairs has launched the “Jago Grahak Jago” campaign through electronic and print media for consumer awareness and joint awareness campaigns on consumer rights and responsibilities. FSSAI FOR MONITORING FRUITS & VEGGIES AGAINST USE OF PESTICIDES IN HIGH DOSES The food authority has ordered for monitoring the sale of fresh fruits and vegetables in the markets, as media reports have surfaced about these commodities having pesticides and harmful chemicals in high doses. The FSSAI has written to all the Food Safety Commissioners in the country referring to the various media reports regarding vegetables and fruits having pesticides and harmful chemicals in high doses, being sold in major cities across India. Further NHRC has also taken suo-moto cognisance of the issues relating to excess use of pesticides by the farmers and has directed for taking measures to minimise pesticide risk and promotion of alternative systems directed of cultivation. The order reads, “In order to curb the menace of excess use of pesticides during pre-marketing treatment of fruits and vegetables with the pesticides, it is requested to keep strict vigil in your respective State/UT on such Food Business Operators (FBOs) who are involved in the manufacturing/repacking fresh/surface-treated/minimally processed fruits and vegetables.” The FSSAI has also asked to employ measures like surveillance/ enforcement and awareness activities to ensure that the fresh fruit, vegetables comply with the provisions of FSS –Contaminants, Toxins and Residues - Regulations. “In addition, awareness building measures through information, education, communication activities under Eat Right initiative may be conducted in fruit and vegetable markets/mandis to educate consumers and food businesses about the issues,” the order further reads.

The competitive landscape of the food and beverage industry in India has witnessed significant changes over the past few years. According to a report by the India Brand Equity Foundation (IBEF), the market has become highly competitive, with a large number of players entering the industry. The report states that the number of food processing units in India has grown at a CAGR of 9% from 2011 to 2019, indicating a substantial increase in competition. The entry of international brands has also intensified the competition in the market. Companies such as Nestle, Coca-Cola, and PepsiCo have expanded their presence in India, leveraging their global brand recognition, innovation capabilities and financial resources. This has created a challenging environment for domestic players and has spurred innovation and diversification in the industry. A large number of startups have also sprung up which is further spurring innovation in products & services. The rise of online food delivery platforms has further transformed the competitive landscape. According to Statista, the online food delivery market in India was valued at approximately $7.7 billion in 2020. The emergence of newer formats like cloud kitchens and food delivery aggregators like Swiggy and Zomato has provided consumers with a wide range of food options, increasing competition for traditional brickand-mortar establishments. Add to this the grocery push done by the e-comm giants like Flipkart and Amazon have further given a lot many more options to the consumers. A lot of advertising bucks are being diverted to grab screen space on these online platforms which allow brands to reach Tier 2 cities at the click of a button. Online sales have further democratised distribution and made products and services available which were hitherto not available earlier. What are the different types of products offered by you and which are most popular among consumers? We offer a range of products in the category of nuts, seeds, berries and dry fruits that cater to different consumer preferences and budgets. We offer over 100+ SKU across 6 sub-brands in these segments – and they continue to innovate. Consumer inclination towards healthier product choices has witnessed a notable rise in India particularly post-Covid. According to a survey conducted by the Indian Council for Research on International Economic Relations (ICRIER), approximately 74% of Indian consumers have demonstrated a growing preference for healthier food options. This shift in consumer behaviour is attributed to increased awareness about nutrition, fitness, and overall well-being. The rise in conscious eating habits is further evident in the increased demand for better for me, clean label, organic, plant-based, lowsugar, reduced fat and gluten-free products. According to a report by Nielsen, the food market in India is projected to grow at a CAGR of 23% between 2021 and 2026 across a wide range of categories. This indicates a strong consumer inclination towards healthier and more sustainable food choices. From a practical industry perspective, this preference shift is evident from the large number of ‘clean label’ snack brands gaining significant traction in both consumers and investors' minds. Many products such as protein bites, bars have come into the mainstream market while they were almost non-existent a few years ago in the Indian F&B arena. Give us your thoughts on green packaging alternatives, keeping in mind environmental concerns? Green packaging alternatives have become crucial in addressing environmental concerns in India's food and beverage industry. With a growing emphasis on sustainability, companies are actively exploring eco-friendly packaging options. According to a report by TechSci Research, the green packaging market in India is projected to grow at a CAGR of around 14% during 2021-2026. Unfortunately not many solutions in end-consumer packaging have arrived in the Indian F&B arena that are practical, economical, shelfstable and executable at a large scale. According to a study by Research and Markets, the market for dry fruits and nuts in India is expected to grow at a CAGR of around 11% between 2021 and 2026. The nuts, seeds, dry fruits, and berries segment in India comprises both organised and unorganised sectors, each with its own challenges and opportunities. The unorganised sector faces challenges related to quality control, standardisation, and limited market access. The lack of proper packaging and storage facilities can impact product quality and shelf life. However, the unorganised sector does play a significant role in meeting local and regional demand, especially in many geographies. On the other hand, the organised sector has opportunities for growth through brand building, offering consistent product quality, product diversification, and adoption of modern technologies in all the areas of operations. The organised sector can leverage its advantages in terms of quality assurance, marketing strategies, and efficient supply chain management to tap into the growing demand for nuts, seeds, dry fruits, and berries and make it available for the consumers. Are you planning on launching any new products? The company continually explores and introduces new products that align with changing consumer preferences and market trends. They are investing significantly in R&D to identify emerging opportunities and develop innovative offerings. Our commitment to meeting consumer demand and staying competitive in the market suggests a proactive approach towards new product development. We have recently launched a line-up of value products with recipes curated by chef Sanjeev Kapoor for the homemaker TG, we further launched 30 mini packs to target local kirana and POS clientele. Although I cannot spell out clearly the upcoming launches in detail, we are continually working on introducing products via means of form-change to create more valueadded products or even to target specific consumer convenience needs in the snacking segment. Any plans for collaboration with foreign markets? There is a large vacuum in the “healthy snacking” space in India especially in the nuts and dry fruits category. There is a shift in consumer preference from unbranded / loose produce to branded products all the way down to Tier 2 city kirana stores. As consumer preference gravitates towards better quality branded produce, they are looking for a trustworthy brand offering innovative products from natural to flavour augmented healthy snacks – this is where we are positioned with our range of healthy snacks in the nuts and dry fruits category. With pan-India distribution and easy availability, we aim to be the brand consumers think of whenever they want to buy nuts or dry fruits in India. In other words - Think Nuts and Dry Fruits – Think ProV. Therefore, we are currently focusing on the domestic market as the opportunity is immense. Created by Fernando Van Zeller Guedes, it was originally a pink-coloured wine that gained global recognition. The distinctive bottle design, inspired by flasks used in the First World War, has remained unchanged for over 80 years. It has become a reference in the wine industry, offering refreshing and fruity options to reinvent the rosé category. With a presence in 120 markets and annual sales of 23 million bottles, the brand aims to attract new consumers worldwide. Miguel Pinto, head of sales at Mateus, talks about the wine industry, trends and challenges and expansion in the Indian market, in an email interaction with Aanchal Chaudhary. Excerpts: How do you plan to expand in the Indian market and ensure Mateus’ success. Throw some light on the challenges as well. Our brand is relatively new in India, but we are experiencing encouraging growth. We measure our success not just by the sales we make to our partners, but also by the sales our partners make in the market. We are pleased to see that our partner Aspri Spirits is doing well in terms of sales to the market, and we have observed that the product is being well-received by consumers. We have checked the stock in stores and found that it is sound, which is a positive sign. Overall, we are optimistic about the potential for Mateus in the Indian market and are pleased to see that our brand is reaching consumers and being well-received. What measures do you undertake to ensure the quality of the wines, and how do they maintain their high standards? For the past 81 years, we have maintained the highest standards of quality control, ensuring that our products are of the utmost quality from the glass to the wine production process, and are delivered to the consumer in pristine condition. Describe some of the sustainability initiatives undertaken to promote sustainable wine production in India, and how effective have they been? Our company has an internal sustainability department that is dedicated to achieving carbon neutrality by 2030. Through their efforts, we have already made significant progress, such as sourcing raw materials from nearby areas and reducing the weight of our packaging cartons by using materials from sustainable forests near our production facilities. Additionally, we have made our products more environmentally friendly by using fewer colours in their production. What are the plans for future collaborations and expansion by you, and how do you plan to capitalise on emerging opportunities in the market? Mateus is a significant player in the wine industry, particularly in Europe, where it is the secondlargest brand in Spain and a topranked brand in Italy. The company is also growing consistently in France and is one of the top five imported wine brands in Europe. Mateus is strong in non-producing countries like UK and Portugal, where it is one of the most important markets for wine. Portugal benefits from both local consumers and tourists, while the UK is one of the largest markets for Mateus. The company is also growing in markets like Brazil, Angola, and Nigeria, as well as in Asia, where it is still number one in Japan. Mateus had a significant market in Russia, but due to political reasons, the company had to suspend sales in that market, which was a significant blow. Despite being small in terms of wine consumption, we have high expectations for the Indian market and believe we have a long way to grow. The company has a partnership with Aspiri Sprits and we are discussing future plans for the next three years. What are the factors that have contributed to the growth of wine consumption globally in recent years and their effects on the industry? Over the past few decades, there has been a cultural shift towards experimentation and discovery in the culinary world, with many consumers eager to try new cuisines and dietary lifestyles such as veganism and vegetarianism. The wine industry has also evolved to cater to changing consumer preferences, with winemakers adapting their flavours to be more consumer friendly. In the past, winemakers would produce wine based on their personal preferences, without much consideration for the consumer. However, this approach has changed, with winemakers now focusing on creating wines that are more adaptable to the palates of consumers. This has resulted in wines with lower alcohol content, typically between 10 and 15%, which aligns with the trend towards healthier lifestyles. Consumers are also more informed and empowered than ever before, with easy access to information about wine and food pairings. This has made it easier for consumers to ask for wines that they like or that complement their meals. Additionally, there is now a wider range of wines available at different price points, making wine more accessible to a broader range of consumers. Overall, the wine industry has modernised and become more democratic, with winemakers adapting to changing consumer preferences and consumers becoming more informed and empowered in their wine choices.
