“Ice wine is one of the most challenging wines to produce
and also the most rewarding,” explains winemaker Matt
Cassavaugh of Casa Larga Vineyards and Winery in Fair-
port.  “From the harvest in the freezing temperatures to the
sometimes years-long fermenting process, we face a lot of
challenges so the odds against success are high. However, we
welcome the challenges because our efforts are rewarded
with award-winning products and an experience that many
never get. Everyone at the winery comes together around
this unique wine.”
Casa Larga will kick off the New York Ice Wine and Culinary
Festival on Feb. 16 by offering samples of ice wine from New
York wineries along with such activities as horse-drawn
wagon rides through the snow-swept vineyards. Other win-
ter celebrations include Vintage Vines & Valentines held each
February in Naples which features a wine and beer walk,
food tastings and pairings, chocolate, art, music, renewal of
vows, and much more.
The Finger Lakes continuously distinguishes itself from
commercialized wine regions with personalized, authentic
wine indulgences which tap into the heart of viticulture.
In addition to the plentiful number of tasting rooms where
visitors are likely to be served by the owners or winemakers
themselves, other experiences include hands-on winemaking
and champagne lessons.
Although it’s wine that attracts busloads of visitors each
week, food is not an afterthought here. In fact, one of the
country’s most in uential food trends can be traced directly
to the Finger Lakes. When it published its iconic Moose-
wood Cookbook 40 years ago, the Moosewood Restaurant
in Ithaca helped to introduce healthy and natural cooking to
the world.

Today, gourmet restaurants, cozy cafes and
roadside food stands all combine to make the
Finger Lakes a foodie’s paradise, and skilled chefs
throughout the region are among the nest in
the country. The culinary scene here is exploding – often
led by ex-natives who’ve returned home – with a number
of high-quality restaurants that rival the cuisine offered
anywhere in the world. This renaissance is driving tourism
on a year-round basis.
At age eight Christopher Bates began making sushi, and
the talented chef has been in the kitchen ever since. Grow-
ing up in a rural farming community in upstate New York,
cooking quickly became his passion. His wife, Isabel Boga-
dtke, a native of Berlin, Germany, started her career in the
hospitality industry eventually working at the famed Brick
Restaurant in Frankfurt. They now own F.L.X. Hospitality
which encompasses several brands including F.L.X. Table
in Geneva, a quaint 14-seat restaurant that has attracted
national acclaim, and F.L.X. Fry Bird, which specializes in
chicken sammis and waf es.
“Our philosophy is simple food done well, and whatever
the ingredient, we give it love and take care to do it well,”
he notes.
Susan Atvell opened Kindred Fare, a spirited cookery in
Geneva, and created a menu inspired by farmhouse cook-
ing which pays homage to the baker, butcher, sherman,
farmer and forager. A grilled grasslands farm market steak
with house cut fries and garlic aioli oozes avor with each
bite, while crispy buttermilk fried chicken with hot honey
sauce is simply out of this world.
Atvell enjoys a Finger Lakes winter. “It’s peaceful when
you can avoid summer crowds and get attentive service in
the tasting rooms,” she says. “Driving around the Finger
Lakes in the winter can give you some of the best views of
the lakes when the leaves are down. Starting in December,
we make Sunday Sauce as a tribute to our Italian-Amer-
ican roots, and we offer a bowl of house made pasta, a
green salad and a glass of Finger Lakes wine at a special
price.”
From December through February, and often into March,
the sweeping vistas of the region are enhanced with
snow-covered landscapes that help transform the Finger
Lakes into a winter wonderland. Although each season
offers unique attractions and activities, winter certainly has
its own special appeal.
