Pancake

Ingredients: 2 Tbsp.
½ tsp.
Sugar 2 Cups
Salt 2 tsp.
All purpose flour 2 pcs.
Baking powder 1 tsp.
Eggs No.2 2 Tbsp.
Vanilla essence
Butter melted

Pancake

Instructions:

1. In a mixing bowl, Sift the cake flour 1 time. Whisk
together the flour, Salt, Sugar, And Baking powder.
Gradually add in the eggs, milk, melted butter, and
vanilla essence, stirring it until mixed. Beat until smooth
and set a side for 15 minutes.

2. Put a frying pan over Medium-Low heat. Spreading a
little bit of butter to prevent from sticking on the pan. Drop
the batter by a large spoon full. Cook until middle is set,
about 4 minutes and flip it until the other side is turn to
golden brown, Approximately 3-5 minutes. Decoration
and serve.

Crepes

Ingredients: 200 g.
30 g.
Cake flour ½ tsp.
Sugar 2 pcs.
Salt 4 pcs.
Eggs No.2 30 g.
Egg yolk 520 ml.
Melted butter 2 tsp.
Milk
Vanilla essence
Lemon skin

Crepes

Instructions:

1. In a mixer bowl, Sift the cake flour 1 time. Whisk together the
flour, salt, sugar, egg, egg yolks. Gradually add milk, melted
butter, and vanilla essence. Stirring it until mixed. Beat until
smooth and let it rest for 15 minutes.

2. Put a fry pan on low heat. Spread some of butter to prevent
from sticking on pan. Scoop the batter on the pan approximately
¼ cup for each. Tilt the pan with a circular motion to make a
circle shape.

3. Cook it until the bottom is brown(approximately 2 minutes).
Loosen the crepe with a spatula. Flip it to another side.
Decoration and serve.

Chocolate Chip Cookies

Ingredients: 190 g.
65 g.
Unsalted butter 75 g.
Icing sugar 5 g.
Brown sugar 1 pcs.
Salt 250 g.
Egg 5 g.
Bread flour 5 g.
Baking powder 125 g.
Baking soda 125 g.
Chocolate chip 2 tsp.
Cashew nut (baked 50%)
Vanilla essence

Chocolate Chip Cookies

Instructions:

Mixing process |

1. In a mixing machine, Put icing sugar, brown sugar. Blend it
together until everything is melted and mixed.

2. Add egg into the mixing machine and blend it together.

3. Add bread flour, baking soda, baking powder, vanilla essence.
Mix it together.

4. Gradually add chocolate chips, and cashew nuts.

Baking Process |

Coating sheet pan with shortening to prevent sticking on pan. (Do not
use butter because it will burn). Scoop it on the sheet pan. Bake
around 8 – 10 minutes.

Panna Cotta & Raspberry sauce
Ingredients:

Panna Cotta |

White sugar 200 g. *

Heavy whipping cream 800 ml.

Milk 200 ml.

Vanilla essence 1 tsp. If you do not like to eat sweet. You Can
Gelatin 20 g. reduce the amount of them

* White sugar 120 g.
** Icing sugar 30 g.

Raspberry sauce |

Frozen raspberry 180 g.

Icing Sugar 50 g. **

Lemon juice 2 tsp.

8 Panna Cotta & Raspberry sauce

Instructions:

Panna Cotta |

1. Put the pot on low heat. Add milk and heavy whipping cream into the pot.
Stirring it until mixed. Then add vanilla essence to enhance for the scent.

2. Add gelatin in the mixture and stirring it at the bottom of the pot. Be
careful to burn.

3. Pouring in the glass and put it in the fridge. Waiting for the sauce on top.

Raspberry sauce |

1. Put the pan on low heat. Put frozen raspberry, and icing sugar. Mix it together.

2. Add some lemon juice(If you like sour, add more)

3. Filter the seeds from the sauce.

4. Waiting until it cool down and pouring them on Panna Cotta. Decoration and
serve.

Doughnuts

Ingredients: 170 g.
80 g.
All-purpose flower 25 g.
Cake flour 50 g.
Sugar 5 g.
Butter 4 g.
Yeasts 3 g.
Salt 1 pcs.
KS 505 50 g.
Egg No.2 50 g.
Milk
Water

Doughnuts

Instructions:

1. In a mixing bowl, sift the all-purpose flour, cake flour. Add
sugar, yeast, Salt, KS 505, and butter. Mix it together.

2. Mixing milk and egg together. After that mix them with the
mixture from number 1. Then Stirring it until mixed.

3. Gradually add water and keep stirring.

4. Knead the dough and rest it for 5 Minutes.

5. Cover it to let yeast grow up for 15 minutes.

6. Fry the dough until golden brown. Decorate with melted
chocolate and chocolate chips.

Baked Brownies

Ingredients: 150 g.
150 g.
Melted butter 125 g.
Dark chocolate 30 g.
All-purpose flour 200 g.
Cocoa powder 1 tsp.
Sugar 1 tsp.
Salt 3 pcs.
Vanilla essence 50 g.
Egg No.2
Cashew nuts

Baked Brownies

Instructions:

1. Put the pan on low heat. Add melted sugar, Chocolate. Mix it
together and leave it to cooldown.

2. In the mixing bowl, Sift the all-purpose flour and cocoa powder.
Add sugar, salt. Mix it together.

3. Whisk the egg and vanilla essence together.

4. Mix number 2 with number 3.

5. Mix number 4 with melted chocolate from number 1. Gradually
mix together.

6. Coating the mold with shortening. Pouring the mixture in the
mold(sheet pan, spring form pan.) and bake approximately 20 –
25 minutes.

Blueberry Cheese Pie

Ingredients:

Cracker Crumbs 130 g.

Melted butter ½ cup

Cream cheese (Softened) 250 g.

Heavy whipping cream 1 cup

Sugar ¼ cup

Fresh lemon juice 2 tsp.

Vanilla essence 1 tsp.

Fresh Blueberry

Blueberry jelly

Blueberry Cheese Pie

Instructions:

Cream cheese |

1. In the mixing bowl, whisk cream cheese until it soft. Add
whipping cream and mix it. Add sugar, vanilla essence, and
lemon juice. Stirring it until mixed.

Cracker crumb |

1. Mix cracker crumb with melted butter and put in in container.

Blueberry cheese pie |

1. Pouring mixed cream cheese on top of the cracker crumb and
toping with blueberry jelly. Decorate with fresh blueberry before
serve.

Ingredients: 200 g.
192 g.
Butter (Softened) 6 pcs.
Sugar 2 tsp.
Egg No.2 200 g.
Vanilla essence 8 g.
Cake flour 8 g.
Baking powder 14 g.
Salt 66 ml.
SP
Carnation milk

Sponge Cake

Instructions:

1. Sifting the cake flour for 1 time.

2. In the mixer machine. Put butter, sugar. Beat it until mixed
and soft. Then gradually add egg, vanilla essence.

3. Add in the sifted cake flour from number 1, baking powder, salt,
and SP.

4. Carefully add carnation milk.

Baking |

Put parchment paper in the springform pan and coat it with
shortening. Pouring the mixture in the pan. Bake in the oven
around 30 - 50 minutes. (Check every 15 minutes)

Chocolate Cake

Ingredients: 6 pcs.
2 cups
Egg No.2 1 ½ cups
Sugar ½ cups
Hot milk 1 cup
Melted butter 2 ¾ cups
Cocoa powder 1 ½ Tbsp.
Cake flour 2 Tbsp.
Baking powder
Vanilla essence

Instructions: Chocolate Cake

1. Sifting cake flour with the cocoa powder.

2. In the mixing machine. Mix eggs, sugar, vanilla essence
together. Beat until the batter become lighter(white). Carefully
add hot milk in the bowl and add melted butter. Mix it together.

3. Carefully add cake flour and baking powder.

Baking |

Put parchment paper in the springform pan and coat it with
shortening. Pouring the mixture in the pan. Bake in the oven
around 30 - 50 minutes. (Check every 15 minutes)

Chocolate Mousses

Ingredients: 180 g.
75 ml.
Dark chocolate 50 g.
Fresh milk 10 ml.
Sugar 2 pcs.
Water 2 pcs.
Egg yolk No.2 50 g.
Egg white 250 ml.
Sugar 4 pcs.
Heavy whipping cream
Gelatin sheet

Chocolate Mousses

Instructions:

1. Soaking gelatin in water to let them softer.

2. Put the pan on low heat and melt the chocolate with milk.

3. Put the pan on low heat. Put sugar, water. Mix it together
and rest it cooldown.

4. Whisk egg whites with sugar. Beat it until mixed.

5. Whisk the whipping cream and mix with number 2,

3, and 4.

6. Melt the gelatin on low heat and mix with all mixture.
After that put in a glass and chill the mousse until it set
(Approximately 1 – 2 hrs.)

Ingredients: 2 pcs.
190 g.
Egg No.2 125 ml.
Sugar 100 ml.
Fresh milk 115 g.
Vegetable oil 115 g.
Bread flour 5 g.
Cake flour 5 g.

Instructions:

1. In a mixing machine. Add sugar, eggs, and salt. Beat
them until sugar is melted.

2. Mix vegetable oil, milk, bread flour, cake flour, baking
powder, baking soda, and salt.

3. Mix the mixture from number 1 and 2 together.

4. add some blueberry in the mixture. Pouring it in the cup
and bake around 10 – 20 minutes

Fresh milk 125 ml.
Vegetable oil 100 ml.
Bread flour 100 g.
Cake flour 100 g.
Baking powder 5 g.

Cocoa powder 25 g.

Instructions:

1. In a mixing machine. Add sugar, eggs, and salt.
Beat them until sugar is melted.

2. Mix vegetable oil, milk, bread flour, cake flour,
baking powder, baking soda, and salt.

3. Mix the mixture from number 1 and 2 together.

4. add cocoa powder in the mixture. Pouring it in
the cup and bake around 10 – 20 minutes

SP 60 ml.
Baking powder 60 ml.
Water 1 Tbsp.
Fresh milk 100 g.

Instructions:

1. In the mixing machine. Put eggs and sugar. Beat them until
sugar is melted.
2. Sift cake flour, SP, Baking powder, vanilla, water, milk.
Mix them together.
3. Add melted butter. Gradually mix with spatula.

Baking |

Pouring the mixture in each cup and bake around 10 – 15
minutes..

Ingredients: 800 g.
200 g.
Bread flour 20 g.
Cake flour 15 g.
Sweet yeast 150 g.
Salt 150 g.
Sugar 4 pcs.
Butter 25 g.
Eggs 10 g.
Milk powder 250 g.
Baking powder 250 g.
Fresh milk
Water

Instructions:

1. In the mixing machine. Add in water, milk, sweet yeast,
sugar, salt, milk powder, baking powder, egg, cake powder,
bread flour. Beat it until mixed and smooth.
2. Add butter into the mixing machine and beat them again
until mixed.

Bake in the oven approximately 30 Minutes.

Bread flour 800 g.
Cake flour 200 g.
Sweet yeast 20 g.
Salt 15 g.
Sugar 150 g.
Butter 150 g.
Eggs 4 pcs.
Milk powder 25 g.
Baking powder 10 g.
Fresh milk 250 g.
Water 250 g.

Bread Roll

Instructions:

1. In the mixing machine. Add in water, milk, sweet yeast,
sugar, salt, milk powder, baking powder, egg, cake powder,
bread flour. Beat it until mixed and smooth.
2. Add butter into the mixing machine and beat them again
until mixed.
3. Dividing in 50 g. each in a circle shape.

Baking |

Bake in the oven approximately 30 Minutes.

Whole Wheat

Ingredients: 500 g.
1,500 g.
Whole wheat flour 40 g.
Bread flour 40 g.
Yeast 20 g.
Salt 100 g.
KS 505 1,200 ml.
Shortening
Water

Whole Wheat

Instructions:
1. In the mixing machine, add water, yeast, salt**,
KS 505, whole wheat flour, bread flour, shortening.
Beat them until mixed.
** Do not put salt on top of yeast because yeast will
die, and the dough will not rise. **

Baking |
Bake in the oven approximately 30 – 40 minutes.

Pandan Custard

Ingredients: 3 pcs.
50 g.
Eggs 50 g.
Corn flour 250 g.
Custard powder 100 g.
Sugar 800 ml.
Butter 200 ml.
Coconut milk
Pandan water

Pandan Custard

Instructions:

1. In the mixing bowl, add eggs, corn flour, custard
powder, sugar. Beat them together until smooth.

2. Put a pot on low heat. Boil coconut milk with
butter. Stirring it until mixed.

3. Carefully pouring boiled coconut milk into the
bowl. Stir all mixture until mixed, and then poring
pandan water into the bowl to add aroma and color.

4. Keep stirring until it become thicker.

Ingredients: 25 g.

Whip topping cream 2 pcs.

Mascarpone cheese
Sugar(1st part)

Tiramisu

Instructions:

1. Beat egg yolks with sugar until smooth.

2. Beat egg white with sugar until smooth.

3. In mixing bowl, mix whipping cream and whip topping cream. Beat
them until smooth and stiff peak.

4. Mix number 1, number 2, number 3, and Mascarpone cheese together.
Beat them until smooth.

Serving |

1. Spread a little bit cream at the bottom of container

2. Arrange lady finger in a row. (lady finger soaked in coffee.)

3. Follow the number 1 and 2 until full container, then topping with cream
and decorate with cocoa powder.

Éclair

Ingredients: 350 ml.
100 g.
Water 175 g.
Butter 5 pcs.
All-purpose flour
Egg No.2

Instructions: Éclair

1. Put a pot on medium high heat. Add water to boil, add pinch of sugar
and salt. Add butter in boiling water and stir it until melt. Add all-purpose
flour in boiling water and stir it until it coagulate.

2. Remove the mixture from pot to mixture machine and beat it. Gradually
add eggs. Mix them together.

3. Put them in pastry bag and squeeze them in a long shape on a
parchment paper on sheet pan.

Serving |

1. Bake in the oven around 15 – 20 minutes

2. Filling with custard cream and coating on top with melted chocolate.

Ingredients: 100 g.
1,000 ml.
Butter 250 g.
Fresh milk 50 g.
Sugar 50 g.
Corn flour 3 pcs.
Custard powder

Instructions:

1. Put a pot on a medium heat. Boil fresh milk, butter, and
sugar. Boil and stir it until mixed.
2. Add corn flour, custard powder, and eggs. Beat them until
mixed and thicker.

Instructions:

1. In the mixing bowl. Put butter, salt, sugar. Beat it until butter is
melted and mixed. Gradually add eggs. Beat them again until
mixed and smooth.
2. Add bread flour, baking powder.
3. ** You can add almond, raisin, beans, cashew nuts, etc.
depends on your style.

Baking |

1. Bake in oven around 30 minutes
2. Take out from oven and cut it into pieces.
3. Bake in oven again around 10 – 15 minutes until it dried.
