premise behind Spices and Spandex, part travel log, part recipe book with breathtaking photography.
The author takes us on a culinary, cycling journey through Europe and all the way down to Cape Town.
As if the process of travelling on a budget and relying on the generosity of strangers for shelter as
well as recipes wasn’t a novel enough experience, Tom Perkins then decided to publish using the very
modern method of crowd sourcing. We spoke to the author about how he managed to think up such a
brilliant way to have fun and get paid at the end of it all.

of your travels?
Quite where the exact idea of the
journey came from is still a fuzzy
memory. My best mate and I were
sitting in our local pub in Cape
Town, wondering what was next
for both of us. I made a throwaway
comment. It struck a cord and
gained momentum. It initially
sounded absurd; why don’t we
just get on a couple of bikes, strap
some questionably unnecessary and
overweight objects to the frames
and cycle south until there is no
more land? Chance, circumstance,
and serendipity would surely
take over from then on. But from
where to where? Why not a cross-
continental adventure from one
local pub to another?
It sounded simple enough, barring
one slight logistical complication:
one pub lay in a tiny rural village
in Southern England, the other in
the leafy suburbs of Africa’s most
southerly metropolis. In between
lay numerous mountain ranges
and deserts; extreme climates and
inhospitable terrains; the Arab
Spring in full force; twenty-five
border posts and the infuriating
inevitability of bureaucratic
complications; and over 20,000km
of road littered with unexpected
adventure and opportunity.
I’ve always been passionate about Italy- Beef Carpaccio

and so prior to us setting off I
also developed my own personal
ambition. To immerse myself in as
many food cultures along the way.
To be amazed at the richness of
national cuisines and be proved

for his family, but he was still
willing to invite a group of outwards
affluent strangers into his home and
share what he did have. For us, this
experience was indicative of the
general sentiment felt throughout
the entirety of this wonderful
country and the continent at large.

geographical, religion, climate,

way that we went about our daily
business and the way in which
we interacted with locals. This
was one of the real joys of the
whole journey – the diversity and
differentiation that was constantly
evolving as we went from country to
country. Having said that; you could
certainly find some commonalities
within certain regions that gave a
sense of continuity and progress
to the journey. This was often most
apparent in the food cultures and
the ingredients that were readily
available in the markets and bazars
we passed through. However there
certainly was one reassurance we
could rely on – that irrespective of
country or continent there was an
overriding sentiment that seemed

STORY by Kapalu Mutenda My first experience on a tennis court was when I was in grade

where the only court kids were expected to encounter was not
the kind made famous by Wimbledon.
It has been said that the reason football has such a wide
appeal is the ease with which one can find a playing area. So
long one has a round object to serve as a ball one can play
virtually anywhere. The playing surface doesn’t even need to be
totally flat. At times a bumpy surface even adds to the fun as it
makes the bounce of the ball almost impossible to predict.
The same, however, cannot be said of tennis. The height of the
Copperbelt’s prosperity was long past and infrastructure has
begun to get run down. The social facilities that were once the
pride of Chingola lay in tatters as the mine companies began
to look to what they considered more important things. An
amateur-sporting scene that had once feasted on generous
grants from the mines was left to scavenge for whatever scraps
came its way.
By the time I got to Nchanga Racquets Club the facilities were
a shadow of what we from the other side of the railway had
heard. The nets had definitely seen better days. The racquets
were hardly usable. And the tennis court had as many, if not
more, pot holes than the roads leading to it.
The game was practically impossible to play. When I did
manage to return the ball, the uneven surface ensured the ball
made more deflections than a politician at a Parliamentary
inquiry. I had heard much of the sport and grew up watching
Agassi and Sampras; so to say I was underwhelmed was an
understatement. If this was how tennis was played then tennis
was most assuredly not the sport for me.
Unfortunately that is a sentiment shared by a large number of
the people who have been exposed to tennis in Zambia. Most
playing facilities are inaccessible to the common Zambian.
And those that aren’t inaccessible are in such a dire state as to
render them so. People in this country simply don’t play tennis.
At least not the numbers of people that tennis authorities and
fans would like to see.
Though many steps have been taken globally to change the
perception that tennis is a middle class sport, the history of the
sport gives an indication why this view continues to be widely
held. Originally played in the halls of French royalty, tennis was
an indoor game played with the palm, hence the original name

small round ball against a wall or over a piece of rope. Around
1500 the palm had given way to the precursor to the modern
racquet, a wooden frame with sheep gut mesh. As time passed

know today.

The historical story of rescuing the animals
when Kariba Dam was made in the 1950’s

The year is 1958 and the final construction
is going on, on then, the world’s largest
dam. It was quite a feat of brilliant
concrete engineering at that time, standing
at 128m and 579 metres long, the colossal
dam wall took four years to build and cost
a whopping $135,000,000. The dam was
an initiative of the Federation between
North and Southern Rhodesia and
Nyasaland, now Zambia, Zimbabwe and
Malawi respectively.
The building of the dam was not without
challenges. The name Kariba means trap,
historically, there was a rock which thrust
out of the swirling water at the entrance to
the gorge. Legend has it that a great river
god, named Nyami Nyami, lived in that
rock, and caused anyone who ventured
too close to be sucked down into the
depths of the river forever. The spirit had
been angered during the building of the
dam as it separated him from his wife, the
spirit brought death onto the construction
worker’s camp and massive flooding. The
rock and water are now trapped well under
120m of water, hence the name Kariba. The
spirit is said to be waiting patiently for a
chance to destroy the dam and be reunited
with his love.
The propagators of this legend, the Tonga
people that resided in the valley where
this dam was being built, were forced to
resettle as the waters of the river they
lived alongside began to rise and back up
behind the dam wall. The pooling of this
water created what is now known as Lake
Kariba, one of the world’s largest manmade
lakes, holding more than 180 billion

under very rigorous conditions, living
in basic bush camps, travelling by row
boat and using simple equipment
such as ropes, nets, sacks, boxes and
dart guns.

‘One evening, after a long day, we
were sitting in a circle around the
campfire. That day on one of the
afternoon clearings we’d snagged too
many antelope to transport as quickly
as desired, and by the time we got to
the last batch, one female bushbuck

sank beneath the water and had to be
rescued. We brought her back into the
boat, wrapped her in blankets and as
the light was fading returned to camp.
We laid the bushbuck under a tree and
forgot it was there.
