5HARVEST UNDERTHE MOON IN PROVENCEDuring the harvest time end of August, the outside temperature can rise up to 35°C in Provence and the rose winemaking process happens at low temperature. By harvesting under the moon, we can naturally control the temperature from the harvest to the winemaking and seize all the aromas of the grappe.
