Meixi Lake Hotel sits right in the centre
of Changsha - a thriving city of 10
million people surrounded by the Yuelu
Mountains and Meixi Lake. The hotel has
four restaurants including the Peach Garden
- which has a separate private dining room,
all serving locally sourced food, extensive
spa facilities and swimming pool.
But the real luxury comes with the 304
rooms, 6 suites and one Presidential suite -
they are massive and more like an apartment

WHO TRAVELLED THE WORLD
What made you want to
become a Flight Attendant?
I was born and raised in Miami, one of the
world’s great travel destinations. Growing up
though, we didn’t have a lot of extra money,
so we didn’t travel much. When I was around
20, it occurred to me one day that being a
fl ight attendant might be a pretty cool way to
make a living and see the world.
What was the application
process like?
Looking back, it seems like something out
of the Stone Age! In 1979, there were no
computers or internet: everything was done
on paper, so I went out to MIA one day and
right at the ticket counter, picked up job
applications for a few airlines. I went home,
fi lled them out and then just hoped the
phone would ring.
And it did! Northwest Orient called, fl ew
me up to Minneapolis for an interview and
a medical exam and I was hired shortly
thereafter and on my way to travel the world
at just 21 years old.
Tell us about your career path.
Tell us about your career path.
I started out as a junior fl ight attendant on
the 727, Northwest’s smallest aircraft, but
in initial training they also qualifi ed all new
fl ight attendants on Northwest’s DC-10
and 747 wide-body jets. I wasn’t fl ying very
long before I was called (on reserve) to fl y
internationally, which I instantly, totally loved.
For my entire fi rst year, I was always on call
and never got to select my trips, but that was
okay with me. I was 21/22 years old and
travelling the world! I never lost my love for
international fl ying, which I did as much as I
could for my entire 32-year career.

kind of specialised training went
into qualifying for that position?
Back in the 1980s and 1990s, there was no
formal Purser position at Northwest Airlines.
Every fl ight, it was determined pre-departure
which one of the dozen or so fl ight
attendants assigned to it would be the Lead
Flight Attendant, with safety and service
oversight of the entire wide-body cabin.
This was done a couple of hours before
the fl ight, in a briefi ng room, just among
ourselves. The process had nothing
to do with common sense, fairness or
merit (or money, either: for all the added
responsibility, the Lead Flight Attendant
received an extra $2.60 an hour!).
Quite often, the senior fl ight attendants
would pass on the position: the money just
wasn’t worth it, the fl ight might be especially
long, or maybe the captain (with whom you
had to frequently consult) was a tyrant! In
any case, being the most junior, the lead
position frequently would trickle down to
me, which was fi ne as I needed the extra
money and I liked being in charge!
Years later, as Northwest’s cabin service
became more refi ned and luxurious, the
Purser position was created and I naturally
segued right into that.
Today, to become a Purser, you have to
undergo an entire application and interview
process, and there are no guarantees you
will make it through. The selection and
training are much more rigorous than in my
day, which is a good thing. And the pay is
much better now too!
You accumulated thousands of
hours working in the air over
three decades. How would you
compare working on a narrow
body domestic fl ight, to being
Purser in charge of a dozen
fl ight attendants on long-range
international fl ights?
That’s an easy one! It is MUCH harder to
work in a packed coach cabin
on a narrow-body domestic fl ight!
Can you name a few of your
favourite destinations?
Wow, there are so many great places. I
always loved London, for all of the history;
Hawaii, for its gorgeous beaches and
weather; and Tokyo, with its exotic and
beautiful culture.
My all-time favourite country is Scotland. I
started fl ying there in the 1980s, and I have
Scottish ancestry, so I’m biased, but there
is nothing I don’t like about Scotland! The
history is amazing; the people are warm,
friendly and funny; the scenery is as beautiful
as anywhere else I have been; and the
weather is always sunny and pleasant. Okay,
I’m making up that last part, but the Scottish
weather - really! - is part of Scotland’s
magical charm.

PALM BEACH, FLORIDA
Built in 1896, The Breakers Palm Beach,
has a long and rich history.
Henry M Flagler - an industrialist - tarted
the trend of building grand properties
on Palm Beach back in the late 1890s, with
the fi rst being The Royal Poinciana, a six-
story Georgian property.
Two years later, Flagler built his upscale
oceanfront hotel, with a unique location
- right at “the breakers,” where the ocean
waves crashed in.
After fi res in 1903 and 1925, the hotel
was rebuilt and re-emerged more opulent
each time.
When The Breakers reopened in 1926,
after its second reconstruction, it carried
more of a European infl uence, having been
modeled after the Villa Medici in Rome.

brought in from Italy and together they
completed the intricate paintings, detailed
across the ceilings of the 200-foot-long main
lobby and fi rst-fl oor public rooms, which
remain on display today, evoking a classic

as the glitterati headed to Palm Beach
year-round to enjoy this unique hotel, with
past guests including the Rockefellers,
the Vanderbilts, Andrew Carnegie and

So why is it that certain products
consistently win awards and what makes
them best in class and continue to maintain,
improve and innovate. In my opinion, this
desire to be the best comes from the very
top - from the offi ce of the airline’s CEO
and permeates the whole organisation,
ensuring that every employee cares about
what they offer in a very competitive market
place. Signifi cant other factors include
style, presentation and more importantly -
thoughtful small touches - attention to detail
really matters and makes products stand out.
EDINBURGH TO DOHA
The API was very simple and check-in was a
breeze. At the dedicated desk I was directed
to the refurbished British Airways Executive
Club lounge which is very comfortable.
When I stepped on board the aircraft, I was
immediately struck by just how spacious the
cabin was – the middle overhead luggage
bins have been removed which makes a
signifi cant difference.

There are an initial six rows of seats and
then a big gap with no bulkhead separating
the last three rows. There are three
toilets, which were all kept in immaculate
condition throughout the whole fl ight. First
impressions always matter. I was warmly
welcomed, shown to my seat and asked
what I would like to drink. I had all the seat
controls explained to me and given menus
for the food and beverage service and asked
what and when I would like it. The Cabin
Crew Manager came around very quickly
and introduced herself to all the passengers.
The Business Class seat is a 2 metre fully fl at
bed that slides down – very easy to use and
extremely comfortable, featuring a 17-inch
IFE screen. The food and beverage service
was outstanding and there was a full ‘dine
on demand’ offering, with the choice and
quality top class.
The cabin crew were excellent - friendly,
polite, very attentive and nothing was too
much trouble. There was always at least
one member of the crew circulating round
the cabin and happy to help. On arrival at
a remote gate, there were dedicated coach
transfers for both Business and Economy
class passengers. Flying time was 6 hours
30 minutes.
QATAR AIRWAYS -
AIRBUS A350-900 AIRCRAFT
The Airbus A350 is a dream to fl y on. It is fast,
quiet and cruises effortlessly at 40,000 feet
and has large windows, twin layer electronic
shades, mood lighting and a jet lag reducing
air conditioning system. Passengers can sit
back, relax and enjoy the easy to use Oryx
IFE which has a wide choice of viewing
options. There are two cabins - Business
Class has 36 seats in a 1-2-1 confi guration
and Economy Class which has 247 seats in a
3-3-3 confi guration.
SMALL TOUCHES/
ATTENTION TO DETAIL
The LED imitation candle on the meal
service: I heard lots of comments about this.
The meal table set up featured fi ne bone
china, an excellent selection of hot bread
rolls, salt and pepper grinders, and the nuts
served with the wine were warmed.
The cheesecake was offered with a gourmet
ice cream selection. The window seats are
angled towards the window, and the middle
seats toward the centre of the cabin. The
privacy divider between the 2 seats in the
middle was raised at the time of boarding to
prevent any awkwardness. There was also a
shoe drawer built into the seat.
DOHA TO EDINBURGH
The Al Maha service involved me being met
outside the terminal of Hamad Airport from
my taxi and escorted to the check-in area.
The host assisted with check-in and then
took me through security and Immigration
and I was then shown to the Al Mourjan
Lounge. This is really quite something and
again indicative of the quality and attention
to detail of Qatar Airways, Highlights
include water features, spiral staircases, no
announcements, a games room, quiet area,
showers and endless food and drink options.
A perfect oasis to relax and enjoy before
your fl ight. At Doha they use two jetways to
embark the aircraft - one is for the exclusive
use of Business Class passengers. The return
fl ight was just as good in every way as the
outbound fl ight. Flying time was 7 hours.
AL MAHA SERVICE
A personalised meet and assist service for
arriving, departing or in transit passengers at
Doha with extremely helpful Al Maha hosts.
There are individual and family prices and
this is a great product to offer clients or treat
very good ones too!
I had extremely high expectations of the
Qatar Airways Business Class Product and
they were surpassed in every way!

Tell us about your career prior
to joining Emerald
I have worked on small luxury cruise ships for
over 30 years experiencing both ocean and
river products. I actually started my career as
a waiter and then progressed through the
ranks. One of my career highlights was when
I got a sponsorship to Cornell University to
my further education.
Describe the concept behind
Emerald Sakara
Launched in 2023, Emerald Sakara is
contemporary and innovatively designed to
accommodate just 100 guests - the intimacy
and personalised nature really stood out to me.
The award-winning service works in
tandem with world-class itineraries – guests
for example can experience bucket-list
adventures from a Caribbean BBQ on the
beach in Anegada which is an island you
can only cruise to with Emerald Cruises, to
relishing the sights of smaller ports in the
Adriatic and setting sail for a Greek odyssey
from Athens.

Which type of passenger are
attracted to the cruise line?
Experienced and sophisticated travellers who
are looking for something new and intimate
are attracted to Emerald Cruises. It is fantastic
to continually see repeat guests onboard
the yacht.
What was it that attracted you
to the position on board the
Emerald yacht?
The fl exibility and personalised service is
industry leading. Nothing is too much for
our guests. The Marina Platform, Aqua Pool
and the state-of-the-art water toys are very
popular, especially when experienced in
remote locations that only Emerald Sakara
can visit.
What do you look for in the staff
who want to work on board?
Passion for hospitality – always!
How do you make the cruise
such a special experience?
The crew take advantage of the moment,
which can be easily done on smaller, more
intimate yachts. For example, on a perfect
sunny day if the Marina Platform is open,
I would hop on a paddleboard and serve
ice-cold Champagne to our guests.
Does the passenger
experience differ in European
waters compared to being in
the Caribbean?
Yes. Europe is all about the locations and
discovering those under the radar harbours
and ports, history, art and tours. The
Caribbean is all about relaxing, soaking up
the sun, Zodiac beach landings and drinking
straight from a coconut just dropped from a
palm tree!
What is your personal
favourite port?
Venice is my favourite port - whether that is
sailing in or out of the city. Being a yacht for
just 100 guests makes it very easy and we are
lucky to be able to offer this experience!
