History

T he family has cultivated our vineyard
since the XVIII century, but it was in
1947 that the brand « Julien Chopin » was
created.
Currently, Emmanuel Chopin (owner and
Julien’s grandson) is one of the wine makers
who want to keep the traditional spirit of his
house. Our vineyard is cultivated in a total
respect. We use a reasoned fight against
diseases, that’s mean, we treat only when it is
necessary, in order to protect the environment.

Our house is situated in Monthelon in
the « Coteaux Sud d’Epernay », 6 kms from
Epernay. Monthelon is a typical Champagne
village, nestled in the heart of the vineyard. Our
vineyard has an average age of 20 years what
allow us to produce grapes with an exceptional
maturity in total respect with

« Coteaux Sfruomd d’Epernay »

« La Méthode Champenoise ».
The vineyard is located where Pinot
Meunier is the main grape-variety,
with the Pinot Noir. Also, we possess
Chardonnay, we have the three grape
varieties to make different
Champagnes…

Tasting

NOTES

Les Originelles

Champagne

Blanc de Blancs Brut 1er Cru Millesime

The yellow color is quite deep and shaded with nice green glints.
The effervescence, very thin, is coming up softly and regularly.

The olfactory impression is intense. Some tastes of Mirabelle,
honey, hot brioche and melted butter are noted. After aeration, the
nose becomes more complex. Some hot spices, exotic fruits and a
small touch of toffee are felt.

The freshness is present all along the tasting. The expression
keeps its balance. Even if, it has a small dose (7 gr/l), the wine
offers an unctuous texture until the end. Acidulous and fruity, it
finishes by a chalky note.

Due to its characteristics, it will be welcomed with hot dishes
cooked with sea products. Try it also with fishes with melted
butter, gratin of shellfishes, Saint Jacques….

Champagne

Blanc de Rose Brut

The Champagne reveals a singular and strong raspberry pink
hue, with ruby red highlights and violet shades.

First nose is delightfully embodied by red heady rose scent,
mingled with scents of raspberry cream, peppermint. When
aerated it evolves towards greedy notes of pomegranate, pink
grapefruit, cherries.

The Champagne develops into silky and round density of ripe red
and black fruits with a tender caress of floral scent. Champagne
finishes with fruity richness and floral delicacy providing us
plenty of positives sensual vibrations.

Cuvée Blanc de Rosé is seducer Champagne that will be a guest
for your one to one romantic moments as well as greedy and spicy
foods. It can be served with our following suggestions of culinary
pairings : sardines, red mullet baked in oiled foil, violet
artichokes…

Champagne

Blanc de Noirs Extra-Brut

The yellow golden color, lightly pink, is quite deep and develops
an extremely thin effervescence which gave a crystalline
impression.

The first olfactive impression is very discreet. A small touch of
hazelnut and a feeling of bread - «baguette» on a note of cherry
are emphasized. Then, the aeration enables the wine to express
itself. The wine is blooming in a floral and warming context,
mixed with some notes remembering the ripe wheat, the anise and
the musk.

The first impression in the mouth is dynamic, stressed by the real
acidity, a tonic sparkling and the lack of sensation of dosage. A
feeling of natural balance, of precision, purity, truth is coming out
until the end.

The aperitif will be the ideal time to appreciate this Cuvee. If we
would like to add something to eat, some salt biscuits or some
pieces of cured ham will be perfect.

Champagne

Blancs & Meunier Brut

The wine has a pure yellow golden color with green glints which
underlines the youth-fullness and the presence of an important
proportion of black grapes in the blending.

The first olfactive impression gives some feelings of lemon, apple
and white pepper are coming out subtly. Then, few seconds later,
we could feel some white flowers (like jasmine), fresh almond
especially delicate.

The flavor in the mouth is sharp, the effervesce is blended in the
wine. It is on the very beautiful acidity of champagne that the
second part of the tasting will be organized. Accompanied by a
delicate winy taste, the taste remains right and strained until the
end.

Finally, we advise you to serve this wine with soft dishes, marine
and salted ones, with firm textures and nice origins (purity). We
suggest: filet of sea bass, hot oysters, crayfish, monkfish.

Champagne

Grand Millesime 2005 Brut

The yellow golden color is quite deep. The effervescence, very
thin, is coming up softly and regularly in order to provide a light
ring of bubbles in surface.

The first olfactive impression is noted. Some feelings of apple,
pears and vanilla are coming out subtly. After aeration, the nose
becomes more complex. Nice, mature nose of tertiary flavours
undergrowth, cocoa.

The flavor in the mouth is sharp, the effersvence is blended in the
wine. It is on the very beautiful acidity of champagne that the
second part of the tasting will be organized. This Millésime 2005
proposes a complex wine. Beneath the first impression of
greediness, with roundness and warmth needed, step by step a
“terroir” with a strong personality is revealed.

Finally, we advise you to serve this wine with soft dishes, with
smooth textures and nice origins (purity).

NOTES

Les Classiques

Champagne

Carte Verte Brut

The wine has a pure yellow golden color with green glints which
underlines the youth-fulness and the presence of an important
proportion of white grapes in the blending.

The first olfactive gives some feelings of lemon, apple and white
pepper are coming out subtly. Then, we could feel some white
flowers (like jasmine), fresh almond on a vegetal aspect very
fresh and especially delicate.

The flavor in the mouth is sharp. It is on the very beautiful
acidity of champagne that the second part of the tasting will be
organized. The taste is liveland, pure and the balance sugar.

Finally, we advise you to serve this wine with soft dishes, marine
and salted ones, with firm textures and nice origins (purity). We
suggest: filet of seabass, hot oysters, crayfish, monkfish.

Champagne

Carte d’Or – Blanc de Blancs Brut

The colour yellow-lemon with green glints is intense and declares
a mature and adult wine. The effervescence is soft and composed
of small bubbles providing a light white string.

The first nose confirms the visual sensation, melted butter,
candied pomelo and cooked honey.

The flavour in the mouth is soft and accompanied by a subdued
effervescence. The honey dominates and the freshness is
balanced with just enough vinosity without heaviness. At the end,
this freshness reappears and also a good minerality and some
notes of candied citrus fruit.

Because of acidity and the minerality of the wine, it should be
served with sea products. In order to accentuate the creamy texture
and the mature aromas of the wine, choose creamy or butter
sauces to accompany the dishes.

Champagne

Carte Noire Brut Nature

The color, gold deep yellow, expresses a very mature wine.
Pointed out by an effervescence delicate and regular. The general
presentation is lightly and appetizing.

The first olfactive impression is quite subtle. It opens little by little
on aromas of yellow flowers (broom), dried herbs and honey with
delicate touch of grilled almonds. Then, some other notes appear,
like toasted bread and hydromel on a mineral base.

The aromatic persistence is really interesting for a wine without
dose (7 to 8 seconds approx.).

This Cuvée Carte Noire “Brut Nature” proposes a distinguished
wine. At the table, the wine could appear as fragile. So please pay
attention not to serve it with too rich dishes or too complex.
Favour purity and simplicity : shellfish (oysters and cockles) and
seafood for instance.

Champagne

Carte Rose Brut

The color of this wine is salmon, quite deep and with a halo of
orange glints. The effervescence is continuous, very delicate.

The first nose is very fresh, it opens into notes of red fruits
(strawberry, mulberry), of “crème fraîche” on a pepper base.
Few seconds after, the nose is becoming more floral (like peony).

The flavour in the mouth is both soft and sweet, the effervescence
melted. Then, the structure of the wine becomes apparent. Full,
strong and lightly tannic nevertheless with a nice freshness. So,
the mouth is soft and the general texture is very creamy.

It is best served with savoury and sweet dishes, with tender
smooth texture, such as “pâté de têtes”, quenelles, white Boudin,
raw fish (asin Japanese cooking), soft cheese …

Ratafias
Champenois

Ratafia Champenois

Emmanuel Chopin has a great desire to
improve the picture of the “Ratafia
Champenois”, usually we see this drink
as an alcohol but he wants to show it
rather as a tradition of Champagne
which may be associated with food,
cheeses, desserts…

Therefore, he organizes some events
about it, like a competition where
culinary bloggers have to imagine a
recipe with “Ratafia Champenois”.

Moreover, he produces “Ratafia
Champenois” differents. He separates
grape-varieties to show each of them at
their most beautiful, thanks to that it’s
easier to propose them during a lunch
or a dinner.

Ratafias Champenois

Chardonnay

The Blending 100% Chardonnay gives to this Ratafia unique
characteristics such as a bright yellow color and freshness. It also
symbolizes a revolution in the making process of Ratafia.

The first nose brings a note of candied lemon.

If you leave it to breathe you will then smell nut aromas and feel
the sugar and alcohol more intensively. This will bring all its
richness to the liquor. The final notes will be towards laurel, and
underwood.

The best temperature to serve it will be between 8 to 10°C, in a
large glass.
It is wonderful to be drank alone for Aperitif or associated with
deserts, especially dried fruits deserts or to accompany white
flesh fruit such as pear or peach.

Ratafias Champenois

Meunier

This Ratafia is unusual by its colour and aromas. It is far from the
usual fruity flavours. It has a deep mahogany color with copper
reflections.

The nose confirms the color richness and maturity. We can smell
quince, cocoa, dried fruit note like nuts. By aerating your glass,
aromas of spices will appear especially cinnamon and liquorice
and finally cherry brandy or dark chocolate.

In the mouth you will feel caramel, cashew nut and pastry cream
flavours with a touch of freshness. It is a Ratafia with smooth
texture and high aromatic complexity, well balanced and
extremely seductive.

It will suit perfectly a foie gras, or for example game meat with
dried fruits, fat cheeses such as munster, maroille and all kind of

Ratafias Champenois

Pinot Noir

This liquor inverses all common places about Ratafia! It color is
unusually dark, with intense red and purple reflections.

The nose is equally unique and offers an intense and wide
aromatic expression. First you will sense aromas of plum jam,
prune and black cherry and after a few seconds the black current
and raspberries reveal themselves.

On the mouth, this Ratafia is perfectly balanced, deep, just classy!

This Ratafia will be in a perfect association with blue cheese or a
chocolate based dessert. It is also possible to cool with it, to make
a sauce or deglaze.

Ratafias Champenois

Grandes Annees

This Ratafia has a gradation of intense yellow, from mahogany to
amber colour with a touch of emerald green reflection. The thick
aspect of the wine shows a Ratafia rich and complex.

The first nose reinforce the visual sensation with aromas like
candied kumquat and evolves toward plum or cherry brandy.

In the mouth you will feel the strength and richness of flavours. It
is well balanced between the caramelized apple acidity and the
liqueur flavours that emphasized the intensity of the wine.

This Ratafia is an original digestive liqueur of perfect to
accompany dishes. Perfect to pair with truffled foie gras with
ginger bread and fig jelly, or toasted bread with black olives’
tapenade.
