History

The family has cultivated its vineyard since

the XVIII century, but it was in 1947 that the brand «
Julien Chopin » was created.
Currently, Emmanuel Chopin (owner and Julien’s
grand-son) is one of the wine makers who want to
keep the traditional spirit of his house.
Our cellar is situated in Monthelon in the «Coteaux
Sud d’Epernay », at 6 kms from Epernay. Monthelon
is a typical Champagne village, in the heart of the
vineyard.

The vineyard is located where Meunier is the main
grape-variety, with the Chardonnay. Also, we possess
Pinot Noir, we have the three grape varieties to make
different Champagnes… The vineyard has an average
age of 22 years what allows the family to produce
grapes with an exceptional maturity. We use a
reasoned fight againts diseases, that’s mean, we
treat only when it is necesary, in order to protect the
environment.

Les Originelles

Champagne

Blanc de Blancs Brut 1er Cru Millesime

The yellow color is quite deep and shaded with nice green glints.
The effervescence, very thin, is coming up softly and regularly.

The olfactory impression is intense. Some tastes of Mirabelle,
honey, hot brioche and melted butter are noted. After aeration,
the nose becomes more complex. Some hot spices, exotic fruits
and a small touch of toffee are felt.

The freshness is present all along the tasting. The expression
keeps its balance. Even if, it has a small dose (7 gr/l), the wine
offers an unctuous texture until the end. Acidulous and fruity, it
finishes by a chalky note.

Due to its characteristics, it will be welcomed with hot dishes
cooked with sea products. Try it also with fishes with melted
butter, gratin of shellfishes, Saint Jacques….

Blanc de Rose Brut

The Champagne reveals a singular and strong raspberry pink hue,
with ruby red highlights and violet shades.

First nose is delightfully embodied by red heady rose scent,
mingled with scents of raspberry cream, peppermint. When
aerated it evolves towards greedy notes of pomegranate, pink
grapefruit, cherries.

The Champagne develops into silky and round density of ripe red
and black fruits with a tender caress of floral scent. Champagne
finishes with fruity richness and floral delicacy providing us plenty
of positives sensual vibrations.

Cuvée Blanc de Rosé is seducer Champagne that will be a guest
for your one to one romantic moments as well as greedy and
spicy foods. It can be served with our following suggestions of
culinary pairings : sardines, red mullet baked in oiled foil, violet
artichokes…

Blanc de Noirs Extra-Brut

The yellow golden color, lightly pink, is quite deep and develops
an extremely thin effervescence which gave a crystalline
impression.

The first olfactive impression is very discreet. A small touch of
hazelnut and a feeling of bread - «baguette» on a note of cherry
are emphasized. Then, the aeration enables the wine to express
itself. The wine is blooming in a floral and warming context,
mixed with some notes remembering the ripe wheat, the anise
and the musk.

The first impression in the mouth is dynamic, stressed by the real
acidity, a tonic sparkling and the lack of sensation of dosage. A
feeling of natural balance, of precision, purity, truth is coming out
until the end.

The aperitif will be the ideal time to appreciate this Cuvee. If we
would like to add something to eat, some salt biscuits or some
pieces of cured ham will be perfect.

Champagne

Grand Millesime 2006 Brut

The yellow golden color is quite deep. The effervescence, very thin,
is coming up softly and regularly in order to provide a light ring of
bubbles in surface.

The first olfactive impression is noted. Some feelings of apple,
pears and vanilla are coming out subtly. After aeration, the nose
becomes more complex. Nice, mature nose of tertiary flavours
undergrowth, cocoa.

The flavor in the mouth is sharp, the effersvence is blended in the
wine. It is on the very beautiful acidity of champagne that the
second part of the tasting will be organized. This Millésime 2005
proposes a complex wine. Beneath the first impression of
greediness, with roundness and warmth needed, step by step a
“terroir” with a strong personality is revealed.

Finally, we advise you to serve this wine with soft dishes, with
smooth textures and nice origins (purity).

Les Classiques

Champagne

Carte d’Or – Blanc de Blancs Brut

The colour yellow-lemon with green glints is intense and declares
a mature and adult wine. The effervescence is soft and
composed of small bubbles providing a light white string.

The first nose confirms the visual sensation, melted butter,
candied pomelo and cooked honey.

The flavour in the mouth is soft and accompanied by a subdued
effervescence. The honey dominates and the freshness is
balanced with just enough vinosity without heaviness. At the end,
this freshness reappears and also a good minerality and some
notes of candied citrus fruit.

Because of acidity and the minerality of the wine, it should be
served with sea products. In order to accentuate the creamy
texture and the mature aromas of the wine, choose creamy or
butter sauces to accompany the dishes.

Champenois

Ratafias Champenois

Chardonnay

The Blending 100% Chardonnay gives to this Ratafia Champenois
unique characteristics such as a bright yellow color and
freshness. It also symbolizes a revolution in the making process of
Ratafia.

The first nose brings a note of candied lemon.

If you leave it to breathe you will then smell nut aromas and feel
the sugar and alcohol more intensively. This will bring all its
richness to the liquor. The final notes will be towards laurel, and
underwood.

The best temperature to serve it will be between 8 to 10°C, in a
large glass.
It is wonderful to be drank alone for Aperitif or associated with
deserts, especially dried fruits deserts or to accompany white
flesh fruit such as pear or peach.

Ratafias Champenois

Meunier

This Ratafia is unusual by its colour and aromas. It is far from the
usual fruity flavours. It has a deep mahogany color with copper
reflections.

The nose confirms the color richness and maturity. We can smell
quince, cocoa, dried fruit note like nuts. By aerating your glass,
aromas of spices will appear especially cinnamon and liquorice
and finally cherry brandy or dark chocolate.

In the mouth you will feel caramel, cashew nut and pastry cream
flavours with a touch of freshness. It is a Ratafia with smooth
texture and high aromatic complexity, well balanced and
extremely seductive.

It will suit perfectly a foie gras, or for example game meat with
dried fruits, fat cheeses such as munster, maroille and all kind of
dessert!
