Parades
There’s nothing that can get you in the mood for Christmas quite like a
Christmas parade. Did you know they are a relic of ancient times? In the
late Medieval and Renaissance eras, Roman Triumphs were held. These
events had music, dancing, banners, and wagons filled with the things
they’d gathered during wars. At the end of the parade, a Dux (Latin for
“leader”) would ride in a Chariot. In modern days, we’ve replaced the Dux
with Santa, but the heart and soul of a parade and a triumph are the
same. We’ve scoured the region, and these are some can’t miss parades.

Town of Forest City
Christmastown USA
For more than half a century, McAdenville, once an industrious mill village, has
transformed itself annually into Christmastown USA. Last Year, USA today did
a Nationwide poll and named Christmastown the 4th best spot to view public
Christmas lights. They’ve actually ranked as high as #2 on the same list in the past.
There’s no charge to view the lights, and the display is massive. The lights stay on
until 10 PM, and if possible, you’ll want to go Monday through Wednesday. You
can visit any evening but it gets very crowded on the weekends.
You can walk or drive, but we recommend walking. The route is 1.3 miles long, and
driving through on weekends can take up to an hour. There’s only one route through
town while the Christmas trees are lit, and the lights are spectacular every step of
the way. The tree lighting ceremony is on December 1, and we think that’s a great
way to kick off the holiday season! On December 16th, they will light the yule log,
with a small parade proceeding. The whole affair is steeped in tradition.

Christmastown The Town of Forest City puts out all
the stops at Christmastime. With
Forest City over a million lights on main street,
the downtown attracts people
from all over the state. Go for the

The Waldensian
Trail of Lights
The Waldensian Trail of Faith in
Valdese hosts an annual light
display. It begins the Tuesday

THE POLAR EXPRESS
The Polar Express is a children’s book written and illustrated by Chris Van
Allsburg and published in 1985. It became an instant holiday classic, and
it was adapted into a computer animated major motion picture in 2004.
The story is pure Christmas magic, and anyone with small children should
be very excited for the opportunity to recreate it. In North Carolina, there
are two Polar Express opportunities. Children should dress in pajamas for
the best experience.

Roasted Turkey
• 4 apples
• 2 oranges
• 2 onions
• 3 TBS each fresh thyme, tarragon, sage and parsley
• 1 cup of butter
• 1 bunch of celery
• 2 carrots
Remove giblets, wash the turkey and pat it dry. Gently separate the skin
from the turkey. Mix the herbs and butter, and apply the mixture between
the skin and the meat. Preheat your oven to 450°. Coarsely chop your
fruits and vegetables and insert them into the cavity of the turkey. Sprinkle
with salt and pepper. Cover with foil. Cook for half an hour, then reduce
heat to 330°. Cook for about 4 hours, until your meat thermometer says
180°. About an hour before the turkey is done, remove your foil. Let it rest
for not one second under 30 minutes. There’s no need to baste, because
you’ve added a lot of moisture. Enjoy!
Star Anise Poached Pears
• Water
• pears, peeled
• 1/2 cup sugar
• 3 star anise
• 1 cinnamon stick
• 4 whole cloves
• 1/2 of a vanilla bean, cut in half lengthwise or tsp of vanilla extract
Add sugar, 3 TBS of water, star anise, clove, cinnamon and vanilla to a pan
and gently heat. Note: star anise tastes like licorice, so if you don’t like that
flavor, just leave those out. The other spices will blend nicely without the star
anise as well. Once your sugar has melted, turn the heat to high and let
the mixture boil, without stirring, for about 8 or 9 minutes. Every once in a
while, wet the sides of the pan and swirl the mixture around, so it doesn’t
burn. Once the mixture turns a deep caramel color, take it off the heat and
add 1 1/4 cups of water, which will bubble, then calm down. Bring back
to a simmer and stir until the caramel dissolves. Add your peeled pears
to the mixture and cover. Cook until they are tender, turning them every
5 minutes or so. Remove the pears, and set aside, but cook the syrup for
about 5 more minutes. Pour over the pears and serve.

Moravian Cookies
• ½ cup brown sugar
• ¾ teaspoon soda
• ½ teaspoon salt
• ¾ teaspoon ginger & cloves & cinnamon
• ¼ teaspoon nutmeg
• ¼ teaspoon allspice
• 1 cup molasses
• ½ cup shortening
• 4 cups all-purpose flour
Whisk together dry ingredients, except flour and spices. Bring the molasses to a
boil (watch closely) and immediately remove from heat, add the shortening, and
stir until it is melted. Beat in the sugar mixture and then one cup of flour. Remove

Man O’ War
• 3 oz high quality
bourbon
• .75 oz Licor 43
• .5 oz Campari
• Dash of Habanero

Shake all and serve over

Eggy Wegg Eggnog
• 6 large eggs, separated
• 3 cups of milk
• 1 cup heavy cream
• 3/4 cup of white sugar
• 1/4 cup bourbon
• 2 tablespoons of brandy or cognac
• 2 Tablespoons of dark rum
• 1/2 teaspoon fresh nutmeg
This is a method exercise, but the effort really pays off in the
end. First, separate the egg yolks into a medium Pyrex bowl and
place this owl over a pot of gently simmering water. Add 1/4
cup plus 2 tablespoons of white sugar to the yolks, and whisk
until pale yellow and thickened, probably around 5 minutes.
Whisk in the milk, bourbon, brandy and rum. Transfer this
mixture to a larger container. Whisk the egg whites with 1/4
cup and 2 tablespoons of white sugar until stiff, white peaks
develop. Combine the egg whites with the egg yolk mixture.
Lightly whip the heavy cream until it starts to thicken slightly,
and then combine the cream with the egg mixture and the
nutmeg. Thoroughly chill the eggnog and enjoy.
Bourbon Wassail Punch
• 32 oz high quality apple cider
• 15-20 oz Seventeen Twelve Bourbon
• 2 lemons, thinly sliced
• 3 Star Anise pods, whole
• 1 cinnamon stick
• 1/2 vanilla bean, split down the middle
• A couple of gratings of nutmeg from the microplane
Slow heat is the key to success with an apple cider punch.
Scorching the cider will produce unlovely flavors. Add all
nonalcoholic ingredients to a heavy-bottomed pot, or slow
cooker. These should be allowed to cook for at least 30
minutes. The quality of the apple cider truly impacts the overall
taste of the recipe. One can add the bourbon at the end of the
cooking period, or to mugs or glasses individually. One to one
and a half ounces per serving.

• 3 oz high quality bourbon
• 1/2 oz of Amaro
Montenegre Italiano
• 1/2 oz of simple syrup
• A slight dash of Orange

Stir all for approximately 30
seconds, and then strain into
a rocks glass over ice. I like a
thin orange zest to emulate the
flatline.
Notes: This is one of my all-
time favorites. It’s essentially
simple, which for me, adds to
the elegance. I named it after
a character in William Gibson’s
novel, Neuromancer. The Dixie
Flatline in the novel was a hard
copy, brain mapping of one
of the best hackers. He had a
reputation for going through
firewalls so treacherous that
his EKG would flatline.
Amaro is essentially a
bittersweet liqueur with herbal
characteristics. The amaro
world is rich and fascinating,
but it’s basically a digestif with
a low alcohol content, usually
between 10% and 40% by
volume.

on the market and,
as with all things,
the quality of the
ingredients will be
represented in the
cocktail. Chinato gets
its bitterness from
chinchona, which is
the bark that produces
quinine, so this drink
is basically medicine.

addition of Sparta Candle Company, a delightful retail store located in the heart
of downtown.
This is a store with a very clear sense of place. It couldn’t exist anywhere except the
rolling mountains of southern Appalachia. The store clearly celebrates the mountains.
As you peruse the offerings, you’ll find candles and soaps that are named after
the geographical features, communities and traditions of western North Carolina.
The company makes candles of extremely high quality. They are made of soy and
each is hand-poured inside the working studio/storefront. If you catch the workers

The Southern Christmas Show
For 54 years, the Southern Christmas Show has been the gold standard
for regional craft fairs. Over 400 merchants are gathered for 4 days, selling

‘Tis the Season Craft Show
This three day event in Fletcher runs Friday, November 19 10am-6pm. Saturday,

Church Plays
For many people, it isn’t
Christmas until the kids at
church put on a Christmas play.
They are all pretty similar...
smiling children who have
learned their lines lining up
backstage, shepherds, angels
and wise men, dressed to the
nines and ready to share the
Christmas story.
Proud parents and grandparents
hold their breath, hoping their
kids remember what to do. And,
they never all remember what
to do, but it’s always delightful
anyway. So many children learn
the real story of Christmas
through acting it out. Watching
these plays is a proud tradition
that we hope never goes away.
