● 3 medium tomatillos ( husks removed )
RECIPE
Chile de ● 10 dried chiles de arbol ( seeds and ribs
tomatillo removed )
● Kosher salt
● 1 teaspoon of fresh lime juice
Ready in 1 3-16 minutes
Serves m edium amount of people ● 3 garlic cloves ( smashed )
Preparation
1. Toast your chiles over medium heat for
about 3 minutes as they start turning
slightly brown in spots. ( don’t char )
2. Place the chiles, tomatillos, garlic, and 2 ½
cups of water in a saucepan and season
with salt ( over medium heat ).
3. Bring to a simmer and cook until
tomatillos turn olive green and burst ( 5-8
mins. ).
4. Remove from heat and let cool for 4-5
minutes with a lid on the saucepan .
5. Use a slotted spoon to transfer chiles,
tomatillos, and garlic to a blender. Add ½
a cup of cooking liquid from the saucepan
into the blender as well.
6. Blend until smooth .
7. Add lime juice and season with salt
before serving.
Tips
If you want a hotter chile, leave the seeds of
the dried chiles in the mixture.
