PIZZA DECK OVENS PIZZA DECK OVENS (GAS)
The P110G and P150G are Energy saving, have high productivity and are total safe. By using the finest
technology comes Series P (GAS), an excellent work tool suitable for intensive use with a high quality standard
that is respectful of the environment.
It’s the sum of many devices that makes the difference between a good product and a perfect working tool:
this is the reason why P110G and P150G succeed in going much further the most severe safety standards
required by the approvals.
A special double refractory deck with a vacuum in the middle
distributes heat coming from the burner, allowing for even
baking. The heat generated by the burner rises up on the
sides and to bake the top of the product, and then escapes
through the special chimney.

The P110G is available in natural gas or LPG and 2 different sizes, the P150G available in natural gas and LPG
in just the one size; they have a large list of accessories to customize the oven according to the most diverse
needs. In addition, for greater installation versatility, 2 different solutions for leaking flue are provided.
It is the combined outcome of many large and small details that make the difference between a good product
and an exceptionable work tool: this is why Series P (GAS) is able to go beyond the most stringent security
standards prescribed by the regulations.

BASIC PIZZA DECK OVENS (ELECTRIC) PIZZA DECK OVENS
The iDeck line is characterized by intelligent products that are remarkably easy to use, with an excellent
quality/price ratio, dynamic design and full functionality. All models are made of stainless steel and are
equipped with door with single handrail for easy grip.
The cooking floor is Sand-blasted refractory brick, just like the more advanced Moretti Models. The maximum
operating temperature is 450° C: a characteristic that makes iDeck ovens unique in their category.
The PM and PD models are available in 5 different sizes in the single or double baking Chambers. Heat is
generated through steel-plated elements and electromechanical adjustment of ceiling and floor temperature.
The iDM and iDD models are also available in 5 sizes, in either the single or double chambers. They are heated
using thick steel plated elements. A serparate floor and ceiling temperature can be set, thanks to the Dual-Temp
Technology. The floor and ceiling power is also adjustable separately thanks to the Smart-Baking® Technology
function.
All models are available with a prover (humidified or standard) or a standard support.

Series T range is assurance of constant reliability: a new generational leap in the history of conveyor ovens. Four
international patents and 2 primary goals achieved:
unparalleled cooking quality and the lowest external
temperature in its category, and it’s not just pizza.
Meat, Pastas, Vegetables and many other food
products can be cooked using the Series T.
All ovens are produced with the Cool-Around
New Series T Control Panel Technology; a sophisticated system for cooling the
outer surface exposed to touch for total operator
safety, a cooler working area and also reducing air conditioning costs.
With the Electric versions there is the Adaptive-Power
Technology ®; Proportional Power Control – automatically
manages the power according to the load inside the baking
chamber, thus energy saving is guaranteed. Dual-Temp
Technology ®; makes the Series T extremely easy to use,
with results guaranteed. Just set the time and two
temperatures of the ceiling and bedplate (exclusive patent
from Moretti): the oven will take care of the rest.
Gas versions are equipped with Adaptive-Gas Technology Model TT98E/1
® for optimal cooking quality and considerable savings on consumption by managing the gas power determined
by the load inside the chamber. Temperature management is managed electronically through modulation of
the burner. The T97G and TT98G models are also equipped with the sophisticated patented Dual Flow
Technology ®, which allows you to differentiate the blower capacity of the top and bottom heating for optimal
cooking results.
New T64E - A cutting edge countertop Conveyor oven that unites the best baking process, energy consumption
all adapted from the large units before it, makes it very useful in small working areas. T64E introduces new
solutions such as the stand-by and the smart belt which allow having discontinuous baking process or with the
double passage on the belt, particularly useful on small places.

CONVEYOR OVENS TT98E and TT98G join the other models in the Series T range, ensures constant reliability but with higher
production capacity and is suitable for large production volumes of pizza chains. The oven is able to guarantee
maximum reactivity with energy absorption kept at a minimum, depending on your particular needs. The
cooking efficiency is achieved thanks to the intense air blowing through two fans to cook high quantities of
pizza at temperature, resulting in reduced consumption without neglecting the quality and uniformity of
cooking.

WOODFIRED OVENS
The Valoriani family have been producing refractory products since 1890 and today remain world leaders as WOODFIRED OVENS
manufacturers of prefabricated woodfired ovens for professional and residential use.
Silvio Valoriani, a specialist in refractory clay, by using all the
century experience acquired from his family, the choice or raw
materials and the structural design of the oven’s dome,
perfect in all its proportions, to such a point that still the dome
shape remains unchanged. The result – family size wood
burning ovens from cotto refractario (refractory clay) quarried
from the hills of Tuscany. These newly designed ovens were
far more fuel efficient and had great heat retention allowing
individual families to afford their own ovens.
With commercial and economic growth and great demand for
its products, commercial businesses needed ovens to be able
to bake a high number of pizzas, quality and with uniform baking, able to keep a constant temperature with low
wood consumption. To meet this demand Valoriani created a
series of professional wood burning ovens, known as “VESUVIO”.
Valoriani is the only company to produce its factory, both dome
and floor tiles baked at 1300°C. Many companies have tried to
copy the VESUVIO ovens, which has been recognised as the
Original Wood Burning Oven ever since. They still remain the
original, the first product in its class and one of the best products
worldwide, chosen and used by some of the most well-known
restaurants and pizzerias.
The company today, after more than 50 years on the market, in its 5th generation and with
over 300,000 ovens delivered, Valoriani ovens are still made in Refrattari Reggello, high in the
hills of Tuscany.
The Professional Range Ovens are all AVPN (True
Neapolitan Pizza Association) Approved Woodfired ovens,
meaning they are a recognised oven that is able to
produce True Neapolitan Style Pizzas.
They are available with a Spitfire Gold 29 Gas Burner (AGA Approved in
Natural and LPG for 120 and 140 internal models). The burner is modulating,
so there is a constant flame whilst cooking pizzas. This feature emulates
burning wood, important if that’s what you would like to perceive. The
Burner is also economical; automatically decreasing the intensity of the
flame once the set temperature is reached, then increasing the intensity if
the temperature begins to drop.

WOODFIRED OVENS The Professional Range consists of;
The GR Series – A modular Kit that requires assembly on site. Its
modular form eliminates the need for heavy lifting machinery, as each
piece can be moved easily into position, weighing at most 60kgs. The GR
Series is suitable for clients that have limited door access and require
assembly in tighter areas.
GR Series
The IGLOO Series – It consists of the GR Components, arriving
complete from Italy, ready to connect to Ventilation. The Oven is
completed with a white (Igloo-like) finish and can be supplied with an
optional support. The IGLOO Series requires a large opening as well as
a crane/forklift to put into place.
IGLOO Series
The OT Series – The OT oven also comes complete from Italy,
consisting of the GR Components. The oven if finished off with a
Metal Cladding, sprayed with fire retardant paint. The OT also has
an optional support available to suit. The OT Series requires a large

The Valoriani Verace Series - OT Series
The First and Only AVPN Approved and Recognised Gas Fired Oven.
Using the RHS (Recycling Heating System), The Valoriani Verace Series
allows for quicker heating using less wood/gas consumptions than
other ovens. The Oven is completed with a white (Igloo-like) finish and
can be supplied with an optional support. The Valoriani Verace Series
requires a large opening as well as a crane/forklift to put into place.

which could have the qualities to bake a Neapolitan style pizza by keeping
the temperature of the entire cooking surface as consistent and as high as
possible. This is thanks to the RHS (Recycling Heating System or Heat’s
recovery system).

Series F - Fanbake is the brand new range of convection ovens that elevates Moretti
up to the best quality and technology level in terms of bakery ovens production. It
represents the finest technical solutions for cooking uniformity and energy savings:
produced with particular attention to design and performance, Series F captures the
vast experience of Moretti in treating dynamic heat flows using high-quality materials
for the maintenance of a low temperature on all the external parts of the oven. They
are equipped with double glass athermic door, smooth control board for easy
cleaning, sophisticated electronic with white bright displays and inside shell in
stainless steel. With Series F it is possible to manage up to 200 programs, with
3 sprays in the same baking cycle.
F50E and F55E are the most compact versions of the Series F range. Ideal solution
for bakery, little traditional pastries and frozen products, a 5-tray 60x40 (66x46 in the
F55E Version) versatile electric oven, also available in the double baking chamber

The model R14E is equipped with the temperature electronic control
