Imprints on our Hearts
I was going to Harvesters on a Saturday for Community Service. My dad parked the
car and when I got out, I saw a dog. It looked at me, and I gulped. BAM! It started
chasing after me, and I ran around the car, frantically. Then I slowed down, and it looked
longingly at me as I walked away. After a while, I came out of the Harvester’s Center. I had
forgotten about the dog, but it hadn’t forgotten me! It came trotting next to me and nuzzled me.
I smiled, because these small moments make life special.

The Winding Tornado
We had come back from dinner and a storm was raging outside. I
shivered as I went to pack my bags for school the next day. Then it happened. All the lights
went out and we realized a tornado was very close to where we were. I found my mom through the
darkness and we searched for the candles. I found a flashlight as we rummaged through each
drawer looking for the candles. I couldn't find the candles and the flashlight only gave a dim
beam of light. I saw a flicker of light… Then another. Then, the lights came back on...

Delicious Recipe-Chicken Salad
Have you ever wondered what healthy food to eat? This chicken salad is the best choice
for you! I chose this recipe because of its delicious qualities. I love to cook, but I never know
exactly what to make. Some recipes are too long with complicated ingredients. Others don’t look
appetizing. In the end, when I saw this recipe, I decided that it was easy, quick, and the
ingredients were quite simple. This salad is also very healthy compared to other foods. The total
calories per serving is 334 calories. The amount of protein is 26g. Dietary Fiber is about
8g. Sugars in the salad contains about 8g. Finally, the total fat is only 12g. Making this salad
is also effortless. No extensive kitchen tools are required. Only a few bowls and plates! Even if
guests are coming over to your house, you can make this as your appetizer. This is why I chose
the Chicken Salad. It is not complicated and takes a short amount of your time. You can eat
food that's both scrumptious and benefiting for your body.

Ingredients for the dressing:
o 1 cup plain reduced-fat Greek yogurt
o 1 teaspoon finely grated lemon zest
o 1 tablespoon fresh lemon juice
o 2 teaspoons finely chopped fresh mint leaves

Kosher salt and ground black pepper
Ingredients for the Salad:

o 2 cups finely chopped fresh flat-leaf parsley
o 1/2 cup chopped fresh mint
o 3/4 cup halved cherry tomatoes
o 1/2 seedless cucumber, peeled and chopped into 1/4-inch pieces
o 2 cups cooked white beans (homemade; or canned, rinsed)
o 3 tablespoons fresh lemon juice
o 2 tablespoons olive oil
o 3/4 teaspoon kosher salt
o 1/4 teaspoon ground black pepper
o 4 cups baby greens
o 1 cup chicken, bones removed
1. To make the dressing: Quickly whisk the yogurt, lemon zest and juice, mint, salt, pepper, and
1 tablespoon water together. After this step, set aside.
2. To make the salad: Mix the parsley, mint, tomatoes, cucumber, and beans together in a
medium to large-sized bowl. In a small bowl, whip the lemon juice, olive oil, salt, and pepper
until it is thick and creamy. Next, pour the dressing over the beans and gently toss to combine.
3. Finally, divide the baby greens among 4 plates and top with the beans. Top the salad off,
with the thinly sliced chicken pieces.
