All South Dakota pork producers are encouraged to attend. Any producer age 18 and older who is a resident of South Dakota and has paid all assessments due may be considered as a delegate candidate and / or participate in the election. 55th Annual Pork Congress Seminars Wednesday, January 10 NPPC & NPB: Working Together — 10:00 AM ~ Amphitheater I Bryan Humphreys CEO NPPC & Dr. Brett Kaysen NPB Senior VP of Producer & State Engagement Please join Bryan and Brett for a candid discussion on current issues and topics NPPC and NPB are addressing and how they work to promote and advocate for the pork producer. They will also detail how both organizations collaborate to support the industry’s needs and concerns. TQA Certification — 10:30 AM ~ Amphitheater II Dr. Ryan Samuel; SDSU Extension Swine Specialist Whether it’s transporting pigs to harvest or moving pigs between farms, animal handlers play a key role in maintaining herd health. This certification program consists of a presentation and a 50-question exam. The presentation will cover a variety of topics like basic animal behavior and handling, transportation of pigs, fitness of the pig, and bio -security. Upon completion of this training course and passing the exam you will receive a certificate card in the mail from the Pork Checkoff. SHIP/Ag View/Secure Pork Supply Plan — 1:00 PM ~ Amphitheater II Dr. Patrick Webb (NPB) & Dr. Tyler Holck (SHIP) Dr. Webb and Dr. Holck will give insight into how SHIP (Swine Health Improvement Plan), AG View and the Secure Pork Supply Plan are all ways of providing up to date data when it’s needed most. For the U.S. pork industry, AgView is the path to protection for America’s pig farms that will help navigate uncertainty in the event of a crisis. US SHIP aims to establish a platform for safeguarding, improving, and representing the health status of swine across participating farm sites, states, and regions. The SPS Plan provides resources to help sites prepare ahead of time rather than during chaos or outbreak. Thursday, January 11 Damian Mason — 10:00 AM ~ Amphitheater II Imagine a talk show host mixed with an agricultural economist with a healthy dose of comedian. That’s Damian Mason. Damian delivers crisp, current, Ag commentary intersected with humor. His positive, hilarious, straight talk resonates with Ag audiences from across the spectrum. Damian is the author of multiple books. His two most recent are: “Do Business Better” and “Food Fear.” He’s also extremely active on social media, Fox News, NewsMax and Cheddar News spreading information and dispelling misinformation about the world’s most important industry: Agriculture. From the Executive Director’s Desk By: Glenn Muller As 2023 draws to a close, we take time to reflect on the past year and look forward with anticipation to the upcoming year. The past year brought about several changes in our organization and the pork industry. In regard to office staff, Cagney Effling got married on November 4, 2023, and moved back to Kansas. We thank her for her contributions to the programs and communications that she helped organize and facilitate. Her resignation provided the opportunity to welcome Abbey Riemenschneider to our staff just in time to organize and manage the information booth at the State Fair and assume her role as the new programs and communications director. Thanks to Tina Erickson and Stephanie Fox for carrying out the additional workload while we were short staffed. We thank Adam Krause for his leadership in serving as President this past year. Finally, I want thank all of our dedicated volunteers for your assistance throughout the year. Our organization would not be able to provide the level of activities and programs without each of you. On January 1, 2023, the reallocation of pork council funding went into effect. The Pork Act funding was reduced from $.45/ $100 value to $.40/$100 value and the Strategic Investment Program (SIP) funding was increased from $.10/$100 value to $.15/$100 value. As you are aware, the Pork Act funds are only used for research, promotion and education and the SIP funds are our primary source of funding to address policy issues which affect our industry at the national, state and local level. Both the National and State organizations have increased their efforts to gain consumer confidence and increase demand for pork products during these very challenging markets for our producers. A positive note is that the industry was able to keep any foreign animal disease out of the US during 2023. We will continue to work with our national organizations, USDA and the South Dakota Animal Industry Board in an effort to protect the health of the swine herd in the United States. As of January 1, 2024, California will begin enforcing the Proposition 12 standards that require 24 square feet per sow and eliminate the use of gestation stalls. Those regulations will apply to pork products sold in the state regardless of where the animals were raised. NPPC and SDPPC continue to advocate that producers should be allowed to utilize production practices that are science based and not be restricted by political pressures from activist groups from using best management practices. January 10 and 11 are the dates for the 2024 South Dakota Pork Producers Annual Meeting and Trade Show. We look forward to seeing all of you there as we have an excellent program and activities planned. Highlights this year will be the trade show that has all available booths filled. Featured speakers include Damion Mason, as well as Dr. Patrick Webb and Dr. Tyler Holck presenting the process and the value of enrollment in the Secure Pork Supply, AgView, and Swine Health Improvement Program (SHIP). The executive staff of both the National Pork Board and the National Pork Producers Council will be presenting at 10 AM on Tuesday and be available to answer any questions you may have. I encourage all producers to attend both the Annual Meeting of the Checkoff and SIP investors. A full schedule can be found in this publication. If you have an interest in being a candidate for the 2024 NPPC Pork Forum Delegate or the 2025 NPB Pork Forum Delegate, please contact the office and we will give you the information regarding those opportunities. January — March 2024 ♦ 15 National Pork Industry Foundation The National Pork Industry Foundation is a 501 (C)(3) whose mission, since 1984, is to support programs that help create productive and responsible individuals dedicated to advances in the pork industry. It encourages and supports collaboration— connecting students with persons and systems—to maximize and sustain educational opportunities that provide insight into pork industry careers. Opportunities include Foundation programs conducted in an objective, scientific manner, as well as specific research and education that may be requested by interested third parties. Current Scholarship Programs Receiving Funding: The Animal Agriculture Alliance’s College Aggies Online Program (CAO) is a scholarship competition made possible by an alliance of agricultural organizations. January — March 2024 ♦ 17 Pork-inspired Recipes Pulled Pork Pastry Puffs Ingredients 1 (17.3-oz) package puff pastry, defrosted ¾ pound pulled pork ¾ cup BBQ sauce 1¼ cups shredded cheddar cheese 1 egg beaten 1 Tbsp water Directions: Preheat oven to 400ºF. Line baking sheets with parchment paper. Set aside. Unfold pastry sheets. Cut each sheet into 9 squares. Toss pulled pork with BBQ sauce. Arrange pulled pork and cheese down center of the pastry squares. Fold two opposite corners of each square over the filling and press edges to seal. Place on prepared baking sheet. Combine egg and water. Brush each pastry with egg wash. Bake 15-18 minutes, until golden brown. Cheesy Pork and Rice Skillet Ingredients 2 tbsp olive oil 1 lb. boneless pork sirloin chops, cut into bite-sized pieces 1/2 onion, diced 2 cloves garlic, minced 1 cup uncooked white rice 1 tbsp Italian Seasoning 1 cup frozen peas and carrots 2 cups chicken broth 1/2 cup sour cream 1 1/2 cups cheddar cheese, shredded Directions: Heat the olive oil in a large skillet over medium heat. Sauté the pork with the garlic and onions, until the pork is browned and the onions are tender (about 5 to 7 minutes). Add the rice, Italian seasoning, frozen peas and carrots and chicken broth to the skillet. Bring to a boil, reduce heat to a simmer and cover. Cook for about 18 minutes or until rice is tender, stirring occasionally. Stir in the sour cream and 1/2 cup of the cheese until combined. Top with the remaining cheese. Cover with the lid for an additional 2 to 3 minutes, until the cheese melts. Or optionally, you can place the skillet under your oven's broiler for about 2 minutes until cheese is bubbly and melted. French Onion Smothered Pork Chops Ingredients 8 boneless pork chops 1 (8 ounce) French Onion dip 1 1/2 cup shredded cheddar 3 ounces crispy French-fried onions Directions: Preheat the oven to 350 degrees. Place the pork chops in the bottom of a 9x13 baking pan and spread the French Onion dip evenly over the pork chops. Sprinkle the cheddar cheese over the top of the dip and then evenly spread the French-fried onions over the top. Bake uncovered at 350 degrees for 35-45 minutes, or until internal temp reaches 145 degrees. Cooking Temperature of Pork Finding the correct pork cooking temperature is the final step in plating a perfectly juicy, tender cut of meat. Pork today is very lean, making it important to not overcook and follow the recommended pork cooking temperature. The safe internal pork cooking temperature for fresh cuts is 145° F. To check doneness properly, use a digital cooking thermometer. Fresh cut muscle meats such as pork chops, pork roasts, pork loin, and tenderloin should measure 145° F, to ensure the maximum amount of flavor. Ground pork should always be cooked to 160° F. Doneness for some pork cuts, such as small cuts that are difficult to test with a thermometer or large cuts that cook slowly at low temperatures, is designated as “tender.” Fully cooked ham can be reheated to 140° F or even enjoyed cold, while fresh ham should be cooked to 145° F followed by a 3-minute rest. Following these pork cooking temperature guidelines will result in a safe eating experience and also preserve the quality of your meat for a juicy, tender, delicious meal.


South Dakota PorkLine ♦ 18 Cefenil® RTU (ceftiofur hydrochloride sterile suspension) For intramuscular and subcutaneous injection in cattle and intramuscular injection in swine. This Product May Be Used In Lactating Dairy Cattle. Not for use in calves to be processed for veal. Caution: Federal (USA) law restricts this drug to use by or on the order of a licensed veterinarian. Federal law prohibits extra-label use of this drug in cattle and swine for disease prevention purposes; at unapproved doses, frequencies, durations, or routes of administration; and in unapproved major food producing species/ production classes. INDICATIONS Swine: CEFENIL RTU is indicated for treatment/control of swine bacterial respiratory disease (swine bacterial pneumonia) associated with Actinobacillus (Hae- mophilus) pleuropneumoniae, Pasteurella multocida, Salmonella choleraesuis and Streptococcus suis. Cattle: CEFENIL RTU is indicated for treatment of the following bacterial diseases: -Bovine respiratory disease (BRD, shipping fever, pneumonia) associated with Mannheimia haemolytica, Pasteurella multocida and Histophilus somni. -Acute bovine interdigital necrobacillosis (foot rot, pododermatitis) associated with Fusobacterium necrophorum and Bacteroides melaninogenicus. -Acute metritis (0 to 14 days post-partum) associated with bacterial organisms susceptible to ceftiofur. DOSAGE AND ADMINISTRATION Shake for 90 seconds to ensure complete resuspen- sion before using. Swine: Administer intramuscularly at a dosage of 1.36 to 2.27 mg ceftiofur equivalents/lb (3.0 to 5.0 mg/kg) BW (1 mL of sterile suspension per 22 to 37 lb BW). Treatment should be repeated at 24 h intervals for a total of three consecutive days. Cattle: - For bovine respiratory disease and acute bovine interdigital necrobacillosis: administer by intramuscular or subcutaneous administration at the dosage of 0.5 to 1.0 mg ceftiofur equivalents/lb (1.1 to 2.2 mg/kg) BW (1 to 2 mL sterile suspension per 100 lb BW). Administer daily at 24 h intervals for a total of three consecutive days. Additional treatments may be administered on Days 4 and 5 for animals which do not show a satisfactory response (not recovered) after the initial three treatments. In addition, for BRD only, administer intramuscularly or subcutaneously 1.0 mg ceftiofur equivalents/lb (2.2 mg/kg) BW every other day on Days 1 and 3 (48 h interval). Do not inject more than 15 mL per injection site. Selection of dosage level (0.5 to 1.0 mg/lb) and regi- men/duration (daily or every other day for BRD only) should be based on an assessment of the severity of disease, pathogen susceptibility and clinical response. - For acute post-partum metritis: administer by intramuscular or subcutaneous administration at the dosage of 1.0 mg ceftiofur equivalents/lb (2.2 mg/ kg) BW (2 mL sterile suspension per 100 lb BW). Administer at 24 h intervals for five consecutive days. Do not inject more than 15 mL per injection site. CONTRAINDICATIONS As with all drugs, the use of CEFENIL RTU is contraindicated in animals previously found to be hypersensitive to the drug. WARNINGS NOT FOR HUMAN USE. KEEP OUT OF REACH OF CHILDREN. Penicillins and cephalosporins can cause allergic reactions in sensitized individuals. Topical exposures to such antimicrobials, including ceftiofur, may elicit mild to severe allergic reactions in some individuals. Repeated or prolonged exposure may lead to sensitization. Avoid direct contact of the product with the skin, eyes, mouth, and clothing. Persons with a known hypersensitivity to penicillin or cephalosporins should avoid exposure to this product. In case of accidental eye exposure, flush with water for 15 minutes. In case of accidental skin exposure, wash with soap and water. Remove contaminated clothing. If allergic reaction occurs (e.g., skin rash, hives, difficult breathing), seek medical attention. RESIDUE WARNINGS: Swine: When used according to label indications, dosage, and route of administration, treated swine must not be slaughtered for 4 days following the last treatment. Use of dosages in excess of those indicated or by unapproved routes of administration may result in illegal residues in edible tissues. Cattle: When used according to label indications, dosage and route of administration, treated cattle must not be slaughtered for 3 days following the last treatment. When used according to label indications, dosage and route of administration, a milk discard time is not required. Uses of dosages in excess of those indicated or by unapproved routes of adminis- tration, such as intramammary, may result in illegal residues in edible tissues and/or milk. A withdrawal period has not been established in pre-ruminating calves. Do not use in calves to be processed for veal. PRECAUTIONS The effects of ceftiofur on cattle and swine reproduc- tive performance, pregnancy, and lactation have not been determined. Swine: Areas of discoloration associated with the injection site at time periods of 11 days or less may result in trim-out of edible tissues at slaughter. The safety of ceftiofur has not been demonstrated for pregnant swine or swine intended for breeding. Cattle: Following intramuscular or subcutaneous ad- ministration in the neck, areas of discoloration at the site may persist beyond 11 days resulting in trim loss of edible tissues at slaughter. Following intramuscular administration in the rear leg, areas of discoloration at the injection site may persist beyond 28 days resulting in trim loss of edible tissues at slaughter. STORAGE CONDITIONS Do not store above 30ºC (86ºF). Shake well before using. Protect from freezing. Contents should be used within 42 days after the first dose is removed. January — March 2024 ♦ 19 Legislative Preview Mary Duvall At noon on Tuesday, January 9, lawmakers will gather in their respective chambers in the State Capitol to begin the 99th Session of the South Dakota Legislature. Legislators are planning on 38 legislative days, with the Main Run concluding on March 7. Veto Day will be March 25. We have already been in discussions with legislators on several issues that could potentially affect pork producers. One of the bill drafts we are analyzing is a proposal from the Noem administration dealing with foreign ownership of agricultural land. South Dakota has had a law on the books for nearly 45 years limiting foreign ownership of ag land to a maximum of 160 acres. Many believe that the current law is working and that food security issues need to be dealt with on the national level. The Governor’s Office has expressed concerns that existing law is difficult to enforce and that it doesn’t address leases or ownership by foreign corporate entities. Last year’s proposal from the Governor would have given the governor of the state ultimate authority to approve any sale of agricultural land. SDPPC joined a slate of agricultural organizations and other affected parties to defeat this bill. The goal of this year’s bill, according to the Department of Agriculture and Natural Resources (DANR), is “developing a clear and enforceable law protecting our producers and preventing foreign persons, entities, or governments from threating our food security.” As with any legislation, the proverbial devil is in the details. We are working with other interested groups to identify and address any unintended consequences from this legislation, including the potential effect on export markets. Overall, South Dakota exports about $6.7 billion worth of goods and services to foreign countries each year, with 75% of that from agricultural products. The U.S. pork industry exports about 27% of its total production of pork, with top markets in China, Japan, and Mexico. We also expect the issue of carbon pipelines and eminent domain to draw legislative attention. Several groups are involved in discussions about how to balance property protection and public safety with the opportunity for economic development and increased tax revenue for counties. Again, we will be diligent about analyzing any legislation to ensure that a poorly drafted bill doesn’t create problems for landowners or for entities that currently use eminent domain such as rural water systems and rural electric cooperatives. Other issues that could potentially affect the pork industry range from property taxes to transportation issues. Since this is an election year for all 105 legislative seats, there are apt to be some bills that are introduced simply to gain media attention. Because of legislative term limits, there are eight senators and seven representatives who are ineligible to run for re-election to their current seats. However, nothing precludes a term-limited legislator from being elected to the other chamber; several termlimited House members have already indicated that they plan to run for the Senate.
