Rocky Mountain Food Tour
An intrepid group of student and faculty foodies, we began our downtown food tour at Spice Island
Grill where amazing Jamaican food reminded Jacob T. of his favorite Trinidadian dishes. At Jack
Quinn's Pub, students tried scratch made shepherd's pie while enjoying a live Celtic music jam session.
Next was Rooster's House of Ramen, owned by Mark Henry, a winner on Food Network's Chopped
Onward to Poor Richard's Pizza and its bookstore, coffeeshop and toy store. Our final stop was Pikes
Peak Lemonade Co., where students enjoyed concocting their own blends of fresh organic lemonade
with all natural flavorings like lavender from Palisade, CO. You could definitely say we turned lemons
into lemonade!

Bingo Night– can you get more classic than that? Ms. Harrison and Ms. Grubb taught students the simple joys of this
favorite game. Prizes, friends, and good times. Who knew the Frautschi Campus Center would make such a perfect bingo

Livin' It Up at the Lins'
Dinner at Mrs. Lin's Home: Students played with the Lin pets, in particular Fluffy, the very chubby
guinea pig; learned how to make Taiwanese fried chicken– street market style– and Thai papaya salad-
inspired slaw. They ate that along with Cantonese roast pork steamed buns and Taiwanese pickle,
Sichuan pickle and sticky rice with Chinese sausage. What a feast! To top it all off, a Smash Brothers
tourney on very full stomachs!

Éclair Cooking Lesson
Madame Kimlicko and Audrey K. sponsored a cooking lesson for the indulgent and iconic French pastry
known as the éclair. With a simple pâte à choux dough made of only flour, butter, water and eggs, these
treats are light and fluffy. Fill them up with a simple vanilla custard and top with an easy chocolate ganache–
ooh là là, magnifique!

CrunchWraps at the Lambaums'
Watch out, Taco Bell, Ms. Birnbaum's CrunchWraps are supreme. Ms. B. and Mr. Lamson were glad to
host and feed a hungry cohort of Staycationers. The master éclair makers brought freshly made dessert
to complete this fiesta of flavor.
Basket Making
Ms. Pelton and Mr. Derr took students to gather reeds from the marshy area near the athletic fields. After
the short walk back to the art barn under gorgeous blue skies, the crew set to work crafting beautiful
artisanal baskets. How lucky we are to enjoy nature's beauty all around us on campus!
