Meal Inspirations

Meal Inspirations brings together local Amy Burns
food suppliers, farmers and growers,
with SPAR own brand lines including (FACTS Director)
enjoy local and The Kitchen, alongside
collaborative work with the Ulster Steven Kennedy
University’s FACT (Food and Consumer
Testing) Suite. (Trading Manager at SPAR)

Working with FACTS Director, Dr Amy
Burns, a selection of products from the
SPAR enjoy local / The Kitchen range
were put under the spotlight in blind taste
tests. Consumers were asked to score
the products on their appearance, aroma,
flavour, texture and quality.

Every product tested achieved a mean
score between 78% and 100% on each
question. Dr Burns stated that the results
were positive “Sensory evaluation is now
widely recognised within the food and drink
industry. In the case of the SPAR enjoy local
meat products that were tested, the results
are above average acceptance levels and
an indicator that this range was very much
liked by the consumer sample”.

Honey Chilli Mini Chicken Fillets
with Grilled Corn Salsa

Serves 4 100%
Cooking time 20 Minutes
1 Preheat oven to 200°C. Place the
760g SPAR enjoy local 100% chicken in the centre of the oven
Honey Chilli Mini and cook for 18-20 minutes.
Chicken Fillets
2 Place the chopped red chilli,
2 Corn on the cobs chopped red onion, lemon juice,
1 dessert spoon cooking oil chopped scallions, olive oil and
1 teaspoon chopped red chilli castor sugar in a bowl and mix well.

Juice from 1 lemon 3 Brush the corn with cooking oil
2 chopped scallions and cook on the BBQ or grill, turning
2 tablespoons olive oil to ensure all sides are cooked
1 teaspoon castor sugar and coloured.

4 Cut the corn to remove the kernels
and add to the salsa mixture.

5 Serve on the side with the Honey
Chilli Mini Chicken Fillets.

Spiced Yogurt Marinated
Grilled Chicken Breast

Serves 4
Cooking time 15 Minutes (2 hours marinating)

450g SPAR enjoy local 1 Mix the natural yogurt, zest of
chicken fillets one lemon, curry powder, ground
coriander and ground cumin in a
150ml natural yogurt bowl to make a marinade. Slash the
1 Lemon top of the chicken breast and rub in
1 teaspoon curry powder the marinade, leaving for 2 hours.
1 teaspoon ground coriander
1 teaspoon ground cumin 2 Heat the grill pan and cook the

each side, or until cooked through.

BBQ Satay Pork Chops

Serves 4
Cooking time 30 Minutes (2 hours marinating)

Marinade 1 Mix the lime zest, soy sauce,

25g grated root ginger 3 For the satay sauce, in a frying pan,

200ml coconut milk in the cooking oil. Slowly add the
Juice from 1 lime coconut milk, peanut butter, soy
3 tablespoons peanut butter sauce, lime juice and brown sugar
4 tablespoons soy sauce together. Bring to a simmer and
1 tablespoon brown sugar whisk. Serve on the side, with the
1 tablespoon cooking oil SPAR enjoy local pork chops.

Pork Chops Griddled with Potatoes,
Chorizo, Scallion & Parsley Dressing

Serves 4 1 Heat a griddle pan until hot.
Cooking time 15 Minutes 2 Brush the chops lightly with oil and

250g baby potatoes, boiled, 3 Place chops on griddle pan. Cook for
cooled and halved
75g chopped chorizo 4minutes each side.
4 scallions, halved 4 Brush the potatoes with oil and
handful chopped fresh parsley
2 teaspoons Dijon mustard place on the pan around the chops.
2 tablespoons white wine vinegar 5 Cook until marked and add the
50ml olive oil
chorizo and scallions. Cook for
a further minute then turn off
and rest.
6 Place the mustard and vinegar in a
bowl and whisk. Whisk in the oil in a
steady stream. Add the parsley and
season to taste.
7 Place the chops, potatoes, griddled
scallions and chorizo on a plate.
8 Mix the juices into the dressing and
then spoon over the chops.

BBQ Pork Ribs with
BBQ Beans

Serves 4 1 Preheat oven to 180°C. Place ribs in
Cooking time 60 Minutes a roasting tray and cover with foil.
Roast for 50-60 minutes turning
500g SPAR enjoy local Pork Ribs occasionally.
2 rashers smoked streaky
2 In a frying pan, heat the cooking oil
bacon chopped and add the bacon, cooking until
1 tablespoon cooking oil crisp and golden.
1 chopped onion
1 crushed clove of garlic 3 Add the chopped onion and crushed
1 tablespoon red wine vinegar clove of garlic and cook for a further
1 tablespoon brown sugar 5 minutes.
400g tin cannellini beans, drained
400g tin chopped tomatoes 4 Add the red wine vinegar,
1 teaspoon Dijon mustard brown sugar, Dijon mustard,
1 tablespoon Worcestershire sauce Worcestershire sauce and chopped
tomatoes and leave to simmer for
half an hour.

5 Add the Cannellini beans and
simmer for 5 minutes and check
seasoning.

Minced Beef Empanadas

Serves 4
Cooking time 1 Hour

350g SPAR enjoy local 1 Heat the oil in a saucepan and add
beef mince the onions, celery & garlic.

50g frozen peas 2 Add a lid and cook until soft.
1 teaspoon curry powder 3 Add the mince and cook to seal off.
1 teaspoon ground cumin 4 Add the curry powder, cumin and
½ teaspoon chili powder
1 onion, peeled and finely chopped chilli powder.
1 stick celery, chopped 5 Cook for a minute and add
1 clove garlic, minced
1 tablespoon vegetable oil the tomato puree.
200ml beef stock, made with 6 Cook for a minute and add

one cube the stock.
2 tablespoons tomato puree 7 Add the peas and simmer for 25
1 pack ready rolled puff pastry
1 egg yolk minutes, then leave to cool.
8 Roll out the pastry to make it an inch

wider and cut into 4 pieces.
9 Brush the edges of each square with

egg yolk.
10 Place the mince mixture in the

middle and fold over and gather the
edges to seal.
11 Brush with a little egg and place on a
lightly oiled baking tray. Repeat with
remaining mixture and pastry.
12 Pre-heat oven to 180oc and bake the
empanadas for 15 minutes or until
golden brown.

Homemade Burgers

Serves 4 1 In a bowl, mix the mince,
Cooking time 10 minutes breadcrumbs, egg yolk, ketchup,
mustard and pepper.
400g SPAR enjoy local
beef mince 2 Create 4 patties and then cook on an
oiled frying pan for 2-3 minutes each
100g breadcrumbs side. 3. Place grated cheese on each

Beef Hot Pot

Serves 4
Cooking time 2 Hours 30 minutes

1kg SPAR enjoy local 1 Heat a tablespoon of the oil in a
lean steak pieces frying pan until smoking hot.

4 tablespoons cooking oil 2 Carefully add half the meat, not
2 carrots overcrowding the pan. Seal on
200g turnip, 2cm diced all sides then transfer to a
2 parsnips casserole dish.
4 small onions, peeled and
3 Repeat with remaining meat.
quartered 4 Add the remaining 2 tablespoons
3 tablespoons tomato puree
750ml beef stock (using 2 cubes) of oil and cook the vegetables until
2 tablespoons brown sauce golden. Stir in the tomato puree
2 tablespoons balsamic vinegar and cook for a minute.
1 tablespoon honey 5 Add the brown sauce, vinegar, honey
350g potatoes, washed and stock and bring to
25g melted butter the boil.
6 Pour over the meat, cover and place
in a 160°C oven for about 2 hours or
until the meat is nearly tender.
7 Finely slice the potatoes and place
overlapping onto meat until fully
covered.
8 Brush with the butter and
cover again.
9 Return to oven until potatoes are
soft – about 20 minutes and then
remove lid and cook until potatoes
are golden.

Peppered Grill Steaks with
Balsamic and Honey Glaze

Serves 4 1 Rub the cooking oil over the SPAR
Cooking time 15 Minutes enjoy local Peppered grill steaks
and season with salt.
4 SPAR enjoy local grill steaks
2 tablespoon cooking oil 2 Boil the honey and balsamic vinegar
Pinch of salt until the mixture turns into a syrup.
3 tablespoons balsamic vinegar
2 tablespoons honey 3 Place the steaks onto a hot grill pan.
The Kitchen Carrot, Pea and Cook to seal for 3 minutes each side.

sweetcorn medley 4 Brush with the steaks with the syrup
and cook for a further 2 minutes on
each side.

5. Serve with The Kitchen Carrot, Pea
and sweetcorn medley
