The joint installation ceremony was held on the 09th of October 2021 from 7.00 PM
onwards. It was conducted Online via zoom platform due to the pandemic. As the
chief guest, Leo Nawod Kiriwaththuduwa, District President of Leo District 306 A2
was invited. As the guest of honor, Leo Praminda Vindika, Immediate Past District
President of Leo District 306 A2 was invited. As a special guest, President of Lions
District 306 A2 District Governor, Lion Budika Rathnayaka pmjf maf was invited.
Also, many Leos and Lions participated to the ceremony. Past Presidents of the Leo
Club of Rattanapitiya and the Leo Club of Papiliyana Woodlands and the Newly
inducted Presidents of the Leo Club of Raththanapitiya and the Leo Club of
Papiliyana Woodlands conducted the meeting while inducting new members and
the executive board for the 2021/2022 Leostic year.
The ceremony was lead with insightful speeches from the guests and
entertainment events from the club members. Greetings were offered to both
Clubs.

For The Chicken:
2 large eggs
1 tablespoon minced garlic
2 tablespoons fresh chopped parsley
Salt and pepper to season
3 large chicken breasts halved

1 tablespoon olive oil
1 large onion chopped
2 teaspoons minced garlic
14 ounces (400 g) tomato puree
(Passata)
Salt and pepper to taste
1 teaspoon dried Italian herbs
1 teaspoon sugar (optional)

8 ounces (250 g) mozzarella cheese
sliced or shredded
1/3 cup fresh shredded parmesan
cheese

For The Chicken:
Preheat oven 430°F | 220°C. Lightly grease an oven tray (or baking dish) with non stick
cooking oil spray; set aside.
Whisk together eggs, garlic, parsley, salt and pepper in a shallow dish. Add chicken into
the egg, rotating to evenly coat each fillet in the mixture. Cover with plastic wrap and
allow to marinate for at least 15 minutes (or overnight night if time allows for a deeper
flavour).
When chicken is ready for cooking, mix bread crumbs, Parmesan cheese and garlic
powder together in a separate shallow bowl. Dip chicken into the breadcrumb mixture to
evenly coat.
Heat oil in a large skillet over medium-high heat until hot and shimmering. Fry chicken
until golden and crispy, (about 4-5 minutes each side).
Place chicken on prepared baking tray / dish and top each breast with about 1/3 cup of
sauce (sauce recipe below). Top each chicken breast with 2-3 slices of mozzarella cheese
and about 2 tablespoons parmesan cheese. Sprinkle with basil or parsley.
Bake for 15-20 minutes, or until cheese is bubbling and melted, and the chicken is
completely cooked through.
For The Sauce:
Heat oil in a medium-sized pot. Fry onion until
transparent (about 3 minutes), then add the
garlic until fragrant (about 30 seconds).
Add the tomato puree, salt and pepper to taste,
Italian herbs and sugar (If using). Cover with lid
to simmer for about 8 minutes, or until sauce
has thickened slightly. Taste test and adjust salt
and pepper, if needed.
Notes:
For this recipe, we use both chicken thighs and
breasts.
Serve with pasta, mashed potato, a salad, steamed
veggies, zucchini noodles or cauliflower rice for the
perfect meal!

pen and a paper to make our bucket list to get them done. But did you missed the
part that I said you're sick? I bet you have. When you're sick and dying, you won't have
enough time to take care of yourself, even so will you be able to give something to the
world? This is the story of a girl who beat the system.
Claire Wineland was born on April 10, 1997
and diagnosed with cystic fibrosis “CF”, a life-
threatening disease that damages lungs and
other organs. At that time, the life expectancy
for a child born with CF was approximately 10
years old. Claire was a force to be reckoned
with, despite her CF diagnosis. She was a
playful, compassionate, and energetic child.
A day after her 13th birthday, Claire
undergoes a routine surgery to repair severe
gastric reflux called Nissen fundoplication , in
which caused her lungs to fail. She went into
a medically induced coma for 16 days and
doctors gave her a 1% chance of survival.
Thereafter Claire remained in the hospital for
3 months and slowly regained her strength
following the medical crisis.
She realized her life with cystic fibrosis would never be normal but it could still be
wonderful and enjoyable. At the same time, she decided that she wanted to help
others with CF.
