INTRODUCTION 1. The Background I believe that many people have noticed moldy bread. Some people throw the bread away. But some people choose to cut off the mold and continue eating the bread. But first, let's get to know the "fungus" that grow on these breads. for use in spawning and assimilation of nutrients from the host We can see these fungi when they grow on different foods. Fungi can cause changes in the appearance of the food such as changing color or softening, etc. Fungi produce spores to reproduce. The spores look very small, like dust. It was scattered in the air and could not be seen by the naked eye. It is these spores that give the fungus a variety of colors, whether white, yellow, green or black, depending on the species of the fungus. However, the mold that grows on the bread. It causes unpleasant odors and is harmful to health as well. And because we cannot distinguish fungal species with the naked eye Therefore, the best way is that we should not consume moldy bread at all. Because we don't know if that type of fungus is dangerous or not. Also avoid inhaling moldy bread. Because fungal spores may be inhaled into the body. which if you are allergic to mold spores It may affect the respiratory system or cause asthma. not only that People with weakened immune systems are at risk of infection from inhaling mold on bread and can lead to life-threatening consequences. when reading up to here Many people understand the reason


why we should not consume moldy bread and usually Bread without preservatives It will last for 3-4 days when stored at room temperature and if you want to inhibit the growth of mold. Preservatives and ingredients can be added to bread, and good processing and storage methods can help inhibit mold growth. However, the consumption of preservatives in large quantities can result in harm to our body as well. So we thought of making one product for bread and bakery lovers. Which is “moisture proof, non-toxic” itself. Our products will help make your moldy homemade bread last longer. and besides Our products are also eco-friendly and not contain any chemicals. 2. Statement of the problem Our problem was mold on the bread when we buy bakery stuff. When the bread gets humidity from the air, that’s make the bread can’t last longer, have bad smell and when we eat, it will harm our body. When we can’t prevent the growth of mold, So we can only slow down the growth of the mold. And when we can't know the expiration date of bread with certainty. We therefore need to find a way to slow down the growth of mold as long as possible. 3. Objective 1. To study methods for inhibiting the growth of mold 2. To extend the life of the bread 4. Hypothesis We success making the desiccant that will help other people


and ourselves solve the problem about the mold and make the bakery stay longer. Most of people might don’t want to use chemical with for their foods. So we decided to make the desiccant to solve those problems. We also try to test with various materials so they can decide which one is easier for them to find or prepare. 5. Significant of the projects 1. Know how to work as team, sharing idea together and helping each other 2. Know how to do a research from internet and books 3. Take advantage of your free time and learn something new 4. our products are eco-friendly and chemicals-free 5. We can make our desiccant to help slow down the mold and bakery are stay longer. 6. We can improve our project or ideas to small business. 6. Scope of the limitations 1. We do this work at the house of our friends in the group 2. What we get from this is that we make desiccant in order to slow down the growth of mold on homemade bread. 3.Independent variable Homemade bread Dependent variable How long that we can slowdown mold from homemade bread Control variable Amount of ingredient that we made of homemade bread


4.This project we will spend time doing around 3-4 months 7. Definition of term Mold (living thing grow on mold) desiccant (the product to slowdown the growth of mold) Rice husk,Corncob, Charcoal, Salt (material we put in package for experiments) spunbond clothes (outer package)


ABSTRACT The study of "Extend of the shelf life of homemade bread to get mold harder" have a purpose to make the product that can help to slow down the growth of mold. That is desiccant. Our product suitable for people who don't want to use chemicals to solve this problem. We will be using the natural material instead of using chemicals and choose the material that will not a take long to decompose. The reason why we don't want to use chemicals is Chemicals are very harmful to the body, What we do is a desiccant that we will put in the into the package of food. We should choose to use things that are not harmful to health. We chose this topic because we wanted to study and share the knowledge that we have gained from working on this project.


Chapter 2 Documents related to the study 1. Information In the study of Desiccant to slow down the mold The concepts, theories and evidence from the related documents are as follows 1.1 Mold we see on food, caused by small spores floating in the air and then settled on the food with suitable moisture and conditions. The mold starts to grow and producing Hyphae that work like roots, hold that surface and release Enzymes to digest and re absorb to be use to grow and create spores to spread around to more areas, making it spread itself quickly. Some mold can take 12 to 24 hours to digest food, but other mold may take weeks. We cannot see mold spores that fall into the food but we can start to see the mold when the mold started to grow and produce Hyphae, that are grouped together called a group of Mycelium that has grown the root very deep. Therefore, by the time we know that mold grows on food, it's already too late. Because the mold already covered by the mold. Many people think that heat can destroy the mold. But in fact, even that mold can be destroy by heat at 60 to 70 degrees, some mold has sporulation that heat resistant and still have toxin spread in food, and cannot be destroyed


1.2 Bread is the food that made from flour mixed with water and yeast or baking powder. Other ingredients that used to add color, taste and smell another ingredient that different according to each type of bread. 1.3 Without preservatives bread can be stored at room temperature for 3-4 days depending on the surrounding conditions. If it’s dry and not exposed to the light, it can be stored for the long time. If it's damp and the packaging isn't completely closed, it may encourage mold growth from other fungal spores. 1.4 What is desiccant? Desiccants are chemical substances that attract and absorb moisture from the surrounding air to maintain a state of dryness. These materials remove most of the humidity to ensure an environment remains dry.Moisture absorption helps prevent fungus growth


1.5 They are made from Sodium Silicate with diluted sulfuric acid. Sulfuric acid can absorb humidity also silicate itself has porous that can hold a lot of water. They are 2-5 millimeters and non-edible. In addition to being able to absorb moisture Then the desiccant is also used to measure the moisture content. In order to prevent spoilage of the quality of various products. 1.6 There are 4 types of desiccant with different property; white silica gel, blue silica gel, orange silica gel and silica sand. 1.7 Charcoal is a lightweight black carbon residue produced by strongly heating wood (or other animal and plant materials). Charcoal can absorb humid and bad smell well because they have a lot of porous


1.8 Rice husk are the hard protective coverings of rice grains which are separated from the grains during milling process. Rice husk is an abundantly available waste material in all rice producing countries, and it contains about 30%–50% of organic carbon. They are dry and can absorb water well. 1.9 Keep humidity levels in your home as low as you can. Be sure the air in your home flows freely. Managing your humidity levels is another way to prevent mold, which also slows and retards mold growth. To properly slow down the growth of mold in your home You need a humidity level below 60%, although ideally you want it between 30% and 50%


2. Knowledge Desiccant is the thing that we know what it is. It’s the thing which we can find in snacks package. Initially, desiccant or silica gel extracted from white sand mixed with sulfur. There is a scientific name that silicon dioxide to be used for moisture protection in various products in order not to change the properties of the product prevent mold or maintain the freshness of the dessert not to be wasted and if you ask if it's dangerous to eat, there are actually 2 types of silica gel, namely the type that mixes with other chemicals and with no chemical mix. It should be quickly replaced with a new desiccant. In order to maintain the quality of those equipment or snacks.


3. Advantage and Disadvantage Advantage 1. Our product is useful and eco-freindly so that mean we are good for human and won't damage nature 2. our product is simple and can easy to use hand by hand so we can say that you can use it easily Disadvantage 1. Hard to make we use good ingredient and it make cost higher to develop 2. Our ingredient is in the frame we decided because it's eco-friendly too 3. It's requirement a much budget cause of our target to use with homemade and secure for human 4. Useful and harmful That said, most homemade breads are likely healthier than store-bought breads, which are often high in sugar and preservative. One benefit of making your own bread is that you can control the ingredients. For example, you can use whole wheat flour instead of white flour, or add healthy toppings like nuts and seeds. Useful 1. 5. Guidance This project is simple thing in our life that can be used for daily routine or use it for be storage to keep a bread or food to keep fresh our product is easy to use just put it around a food we want to slowing down we and we recommend you to use it 2-3 foods it the same time and don't forget to change it in every usage to make a product as the best as possible In normally People use original product in their food or snacks so it can stay for longer but it's not good much so after we research information about this thing all of us decided to use ingredient more secure in our product so it's needed to find good and requirement things in our budget so we have obtain a greatest thing we chose - A food that consumer will use is a food that solid and not a liquid - Our product can be use in a few times so if it done make sure you use another one instead - For the consumer that have kid beware to keep away from a kid - make sure the product won't be placed in the high temperature


Chapter-3: Methodology General Procedure This study is a type of experimental and artificial study, the processof researching case as follows: 1. Find material for making desiccant 2. Bake bread for experiment 3. Create our last product 4. Survey people 5. Conclude the best material to make desiccant Material Required 1. ingredient for baking bread: 1.1 breadflour 1.2 cake flour


1.3 vanilla extra 1.4 yeast 1.5 salt 1.6 sugar 1.7 egg 1.8 unsalted butter


1.9 milk 2. cooking equipment: 2.1 digital scale 2.2 measuring spoon 2.3 spatula


3. material for making desiccant: 3.1 salt 3.2 corncob 3.3 charcoal 3.4 rice husks 3.5 sponbond 3.6 container with lid


Procedure /Method In our project we have three sub-processes including; making bread, desiccant experiment and making last product. 1. Making bread To make our own bread is to make sure that there is no chemical put in to make the bread get mold slower, the process of making bread as follows: 1.1 measure and get all wet ingredients together; 1 egg, 90gram of milk, 1 teaspoon of vanilla extra and 50 grams of sugar


1.2 mix all wet ingredients and sugar until it’s mixed well 1.3 Measure and pour all dry ingredients together; 160 grams of bread flour, 40 grams of cake flour, 5 grams of yeast, ¼ teaspoon of salt.


1.4 blend all ingredient together until we get the dough. 1.5 Knead the dough with butter for 40 minutes. 1.6 Bench the dough for 1 hour.


1.7 Shape the dough and bench them for 20 minutes. 1.8 Put them in the bread mold and bake at180c, 40 mins 1.9 take them out of the bread mold


2. Desiccant experiment In this method is to test which material we chose can be used to make desiccant and can make the bread stay last long, following processes: In the experiment we have 5 boxes of bread; bread with rice husk, bread with corncob, bread with charcoal, bread with salt and the one with only bread then we put them in the same place to watch the changes for 1 week. Day 1: In day 1 from observation, we can see that none of the bread got mold.


Day 2: In day 2 from observation, there are still have none of the bread got mold. Day 3: In day 3 from observation, all boxes still have no changes.


Day 4: In day 4 from observation, bread without any desiccant is start getting mold along with bread with corncob on the crust of bread Day 5: In day 5 from observation, bread without any desiccant and bread with corncob is having more mold from day 4.


Day 6: In day 6 from observation, bread without any desiccant and bread with corncob is having more mold but the other 3 boxes still have no mold at all. Day 7: In day 7 from observation, bread without any desiccant got mold all over the crust as same as the one with corncob.


Day 8: In day 8 from observation, bread without any desiccant and bread with corncob is having a lot of mold on the crust, bread with salt has small dot of mold on the crust, bread with rice husk also have a big dot of mold on the crust as same as bread with charcoal.


3. Making last product From the experiment we picked the most efficient material to make the last product, by the following steps: Step 1 we need to cut the cloth we use spunbond cloth, the size is 10 cm long 5 cm width Step 2 fold in half of a spunbond cloth and use clamp


Step 3 thread in and suture side by side (2 sides) Step 4 put the variable we choose in the groove after that we suture it


Result’s We test a homemade bread with 4 materials to make our desiccant and 1 that without them. we put each material with same loaf of homemade bread in the plastic box to see which materials we can use to slowdown the mold. To see the changes clearly we put them in the same place when it done and while it in experiment we take a photo single by single box day by day. After our experiment we have chosen 3 materials; rice husk, salt and charcoal because of proved that all of them can slowing down the mold, to make a desiccant. The size we made are simple but if demand is higher we can make it larger than it is. We decided to make our clearly noticeable so we use different color of spunbond; salt desiccant is black, charcoal desiccant is gray and rice husk desiccant is light yellow and put the label on them. They are square with the sides of 5 cm so they are light and portable.
