Mr Lucky Salvador, 28, head trainer at

“Start with the more forgiving brewing
methods that require less skill, such as the
Aeropress or French press.”

He says that it is crucial to invest in a
quality coffee bean grinder as the potency
and flavour of pre-ground coffee beans can
fade away three minutes after exposure
to air.

Espresso machines are for those who are
serious about brewing a customised cuppa
at home, given the hefty investment of at
least $2,000.

BREWING TOOLS

T oo lazy to head out to a café? The Sunday Times offers a list of manual

brewing tools and espresso machines for that perfect homemade cuppa.

Aeropress Coffee Maker
Common Man Coffee Roasters (booth 2B14) / $50
This portable brewer combines the best of two manual coffee brewing methods.
First, the beans are steeped in water, like in a French press, before pressure is
applied with a piston to push the water through the grounds and a microfilter.

Bialetti Moka Pot
Espressocups (booth 2B36) / From $80
Steam pressure, which is generated from heating the water in the bottom
chamber, pushes the water to the ground coffee, producing very intense,
espresso-style coffee.

Chemex Three Cup Classic
Chye Seng Huat Hardware (booth 2B31) / $62
The stylish hourglass-shaped flask allows coffee to be brewed and served
conveniently in one place. Coffee brewed with the Chemex tends to have a lighter
body than other Pourover Coffee.

Hario V60 Coffee Dripper
Slayer Coffee/Tiong Hoe (booth 2B24) / $31.50
The dripper’s spiral ridges on the sides create gaps of air between the ground
coffee and sides of the filter paper to give a more complete extraction.

Cold Bruer
Knockhouse Supply Co. (booth 2A3) / $125
Beat the heat with an iced brew. Brewing the coffee at a low temperature brings
out the natural sweetness of the beans, with brighter and livelier tasting notes
and a smoother texture.

ACS Vesuvius Espresso Machine
Grind Coffee (booth 2B34/35) / $7,000
This sleek dual boiler allows users to brew coffee with five pre-set pressure
profiles, which can be varied across seven stages to extract different flavour
profiles from the beans for a well-rounded cuppa.

Rocket Espresso Appartamento
Stellar M (booth 2A8) / $1,999
This compact and no-frills machine is for those who are new to prosumer
espresso machines. Its water supply is controlled by a vibration pump and the
sides are adorned with circular panel patterns.

Quick Mill Andreja Profiles 1
Smitten Coffee (booth 2B38) / $5,200
This dual boiler espresso machine allows users to set five pressure profiling
capabilities to get the best out of coffee beans. Users can change the functions on
its touchscreen display.

COFFEE’S IN THE AIR

T hese on-air personalities wake up at the crack of dawn to be in the studio, to speak to their fans over the radio. Naturally they

kickstart their day with a cup of everyone’s well-loved caffeinated beverage. We asked the radio DJs we love on how they drink their
coffee and the average quantity consumed per day; one of them has a staggering personal record of drinking 14 cups of coffee in a day
before! Have a guess on who that is (follow our social media accounts for the answer). Most of our DJs like their coffee robust and
simple, while others prefer it creamy and sweet. Many enjoy it iced. Coffee, oh coffee. It’s the best part of waking up, wouldn’t you say?

S pecialty coffee isn’t just all about

the beans, the machines and the
drinks - it’s also about the people
behind the machines and what drives
them to do this day after day. To give
the entrepreneurs who took the plunge
to run a cafe and baristas a voice to tell
their stories, our “Beyond the Apron”
series was born.

In this series, our team interviewed
baristas and other entrepreneurs to
uncover their entrepreneurial and
professional journey into the highly
competitive field of food and beverage
services, including the challenges
and fears they faced, and how they
overcame them.

BEYOND What makes a good cup of coffee? A
THE APRON perfect shot of espresso, milk aerated to
the right temperature and consistency, and
topped off with smooth and velvety foam.

- Igbal, Symmetry Cafe

I’m attracted to new cafes that
have their own character and style. It’s
delightful to see cafes that eventually grow
out of a typical F&B establishment, into a
brand that holds strong to their belief of
what they offer and why they do so. It’s
like watching a kid grow and mature, and
discovering what they can do over time.

- Shannon, HIC Juice

There are more and more cafes showing up that actually have really good food and
better yet, good wifi for people like me for whom cafes double up as offices. It’s true – I
organise meetings at cafes and then continue working there once the meeting is over,
taking in the music, the atmosphere and sometimes the view. Sure beats a chilly office!
And I hope more people will do the same, creating a great co-working space and energy.

- Ramya, Oh My Goodness!

There are new cafes opening
every month in an over-saturated
industry. To stay relevant, all
operators will have to really focus
on the quality of the products
they are offering. Consumers
are becoming savvier and you
can’t fool them with substandard
grub. Cafes will have to up their
game and put in more effort to
differentiate themselves.

- Gavin, Hungry Heroes

SINGAPORE COFFEE FESTIVAL 2016 25

I had to dig deeper into the world of coffee, knowledge-wise and skills-wise; coffee is
a very dynamic product which makes learning about it a continuous process. In regards to
skills, my senior baristas at that time were well decorated, meaning they were champions
from various barista competitions, so the challenge for me was to get into the same league
as them.

- Mark, Common Man Coffee Roasters

It was difficult establishing our niche
as a premium beer for events as a new
local brand... We had to create confidence
in the quality of our beers, and build the
entire experience of our mobile draft beer
bar for customers! It’s been quite a ride
so far!

- Emily, Wunderbar

As a barista, I am more focused on the
quality of my espresso which I consider
very significant because it is the base of
my coffee. In line with this, I ensure that
my coffee bean is fresh and well roasted
according to its characteristics, then I
cautiously monitor the fine/gross level of
my grinder and measure the ground coffee
powder according to the ratio of my water.

- Mhariel Tolentino Vargas, The Coastal
Settlement

With the explosion of many indie
coffee shops and boutique roasters, getting
a good cup of coffee is easier than ever
(no more sugary drinks at Starbucks!).
Also, the third wave coffee movement
largely driven by increasingly popular
phenomenon of “cafe-hopping” and
consumers wanting instagram-worthy
food and beverage advocates coffee
lifestyle; it is so much more than just a
drink / commodity.

- Yoke Peng, The Tuckshop

The fact that there are so many cafes out there has its pros and cons. Every now
and then, there are new interesting places opening up, and most of the time, these
spots are great to visit and indulge as a customer.

- Shawn, Chye Seng Huat Hardware

acidic nature and for those who dislike the bitter after-taste.

are exceptionally easy to drink and you’ll be pleasantly surprised to discover the unique
refined flavors in each one.

CAFFEINE-SPIRATIONS

I n addition to fervently aiming to support the café culture in Singapore, our festival is equally pleased to encourage and showcase

local talents in the arts. Aimed at engaging local artists and designers, as well as showcasing our vibrant coffee scene and culture, we
organized The Design-The-Cup competition in partnership with packaging company Detpak. We’re delighted to receive a flood of
fabulous entries in a diverse range of styles. Here’s sharing the finalists and winning design.

TracyTan -WinningDesign

Despite both coffee makers coming from
vastly different stories and backgrounds,
nevertheless, each cup of coffee is
crafted with passion. These scenes
portrayed bring a sense of familiarity to
Singaporeans and thus, I felt it would
be most suitable and unique for the
celebration of coffee drinking during this
national event.

AARON LIM

The concept behind my submitted design
was to blur the lines (quite literally)
amongst the different coffee lifestyle and
culture we have in Singapore. Taking
inspiration from the good ol’ Kopitiams
to your hipster joints/cafes of today.

CASSIA THE

The inspiration comes from the vibrant
energy surrounding this urban jungle
called Singapore. It is about getting that
cup of coffee in the morning and going
out to explore new adventures.

(coffee) KENNETH WONG WEI LIANG

I was having breakfast at a Kopitiam and
overheard some uncles giving a treat to
each other during their coffee sessions
in Hokkien dialect. Makes me feel very
local and at the same time prompt some
originality in it. Something worth seeing
everywhere that serves coffee, as it
connects the young and old.

The design concept displays the evolution
of coffee culture in Singapore ranging
from trending coffeehouse, different
coffees and the evolving containers. It
aims to trigger nostalgia and improve
local awareness, at the same time
bringing knowledge to people who are
unfamiliar.

T he relationship between coffee and writer goes way back. Sure, you may take a break every now and then, but once you’ve fallen in

love with coffee, it’s hard to ever really commit to a long term separation. As a writer’s muse and ally, coffee improves brain function,
aids focus and attention, wards off sleepiness, and speeds the refresh rate on new ideas. Perfectly designed for late nights of crafting

how they enjoy their coffee. The next time you flip your morning papers to take in the day’s news, there’s no more guessing on how
