the island. Last but not least, what could I say about my Etrusco? This is
where I fulfill all my culinary dreams. I try to make it better each passing
year, to always keep it on top, but also help it evolve. What I really care
about is for our guests to leave our restaurant taking along the memory
of an impeccable dining experience, which begins from the personalized
welcoming and ends at the heartfelt farewell”.

When did the Ikos Green programme start?
Ikos Green started from the beginning of the company, it

was one of the main pillars of our values. The programme
is built upon three axes. The first axis has to do with the
sustainable operation of our hotels – all things regarding
how the hotels operate and how we can minimize their
footprint in every action associated with energy, water,
waste. The second axis is about local biodiversity. We
implement specific programmes aimed at protecting and
enhancing local biodiversity. The third axis has to do with
both local community and our guests.

Here we include innovative, I must say, actions for an
all-inclusive hotel. For example, we work with local restau-
rants and provide our guests free MINI cars in all properties
in Greece and Tesla cars in Ikos Andalusia, so they feel free
to visit and get to know the local communities, not just

I have been sailing since I was very little, and that brought

me to many tiny islands I am still in love with.So I am biased to
recommend small and isolated ones.Overall,Dodecanese is my
cluster of islands that speaks closer to my heart, particularly
Chalki, Symi, Tilos, and of course the southeast tip of Greek
water, Kastelorizo.
