Winter 2022

Enriched Teaching & Learning

In January, some of our Year 7 to 9 students had a
wonderful day of outdoor learning with Rosie and Jo
from On The Hill, Devon. They spent a good monring
together planning for the Peace Garden Project here
at KEVICC. The project promises to make great use
of some of our green spaces around the College
to promote student wellbeing and connection.

The Art department ran macrame workshops in January.
Sixth form textiles students enjoyed a brilliant workshop
from ex student and amazing art teacher Hannah Magee.
The quality of their finished products was amazing.

Year 8s Benoit, Bennie and Esme put the final
touches to their hand built, Neolithic ceramic
arch in January. Each brick was hand built and pit
fired using ancient techniques under the expert
guidance of artist (and ex student) Layan Harman.

WATERSIDE BISTRO RECIPES TO TRY AT HOME

DEVON SPRING LAMB

with ratatouille of Mediterranean vegetables and black olives

Find more recipes at Spring is the time when we
watersidebistro.com begin to look forward to the
warmer days ahead and we
will jump at the chance of
cooking something lighter
to suit my mood. We love
to use the flavours of the
Mediterranean to create
something colourful and
light but with its feet firmly
planted in Devon by using
our unbeatable local lamb
and herbs from our garden.

Ingredients for six people What to do
1 large onion finely diced 150ml good olive oil 1. First cut the vegetables into 1cm dice. I like to remove half of the skins

4 cloves of garlic crushed of the aubergines.

2 medium aubergines 2. Sweat the onions in the olive oil until soft and just beginning to colour.

3 red peppers 3. Add the aubergine and garlic, continue to sweat down for 5-8
minutes while stirring. The aubergine needs cooking well, as they are
3 medium courgettes unappealing when underdone.

3 large beef steak tomatoes 175ml glass 4. Now add the peppers and cook for a further 4 minutes before adding
of dry white wine 1 bay leaf the courgettes.

1 sprig of marjoram and 5. Keep stirring and add the tomatoes, white wine, tomato paste and herbs.

One of thyme 6. Reduce to barely a simmer, add the olives, and then allow to finish
cooking for about half an hour.
1 Tablespoon tomato puree Salt & fresh
ground black pepper to taste and a tiny 7. You want the vegetables to retain their individual flavours and textures
touch of sugar should you need it but the dish will get better as the flavours come together with time.
Season with the salt & pepper and it will sometimes benefit from a tiny
Approximately 30 marinated pitted touch of sugar.
black olives

Chef’s notes: Roasting lamb is an absolute matter of taste, however, it must always be rested well after cooking whatever
your preference. For me I would want to see some juices flowing but not too rare as this can leave the meat a little tough.
For an 8oz lamb rump I would recommend sealing it all round in a frying pan before roasting in a pre-heated oven at 175°C
for 12-15 minutes followed by at least 5 minutes resting on a chopping board before being carved.
