The Village Grapevine The clocks will have sprung forward and so will the gardening tasks, whether it be the weeds scrambling to go forth and multiply, or the grass actually seeming to grow before your very eyes. The birds will be busily building their nests to bring up this year’s new brood. All that good work you put in over the winter months (you did didn’t you?) will start to reap its benefi ts now, which could give you some precious time to spend on some of the pressing matters in the garden and more importantly to also step back and enjoy your garden. It’s not too late to give the lawn a little bit of tlc a with a spring/summer fertiliser that will go a long way as the months tick by. If you have taller herbaceous plants it’s a good time to get the supports out and in the ground so you can train the stems through the hoops or tie them up as they grow. You should see the welcome sight of a few early perennials peeking their faces towards the sun by now as well, and the option of casting any fl owers seeds where they are to fl ower is now an option. So how about this year sow some Poppies or Wildfl owers in a small area to give the Butterfl ies, Bees and all the little bugs and wildlife somewhere to feast or indeed hide. It’s easy to do and the benefi ts to nature are immeasurable. Just think if every garden, balcony or even a single pot in the UK created just a small wildlife area you would create passageways that run the length and breadth of the country that would total thousands of acres for all creatures to go about their business. 20 l THE SANDHURST DIRECTORY

Now is a very busy time down the plot and a vast amount of veg can go outside at last and get growing in the ground, whether it be Sweetcorn out in their blocks or the fi rst of the Cabbages in their rows. the Brussels can be fi rmed in for their long growing season and not to forget the salad crops which if you use successional planting will romp away and give you unlimited salads till late into the autumn months. Carrots can be sown in the same way as salad, as in a little every couple of weeks which stops you getting great gluts and thus saves wastage. As in the garden, also on the plot, keep a hand on the weeds this time of year as they can’t wait to cover your plot with their seeds or spread their roots just to make your life just that bit harder. When it does come to watering there are a couple of very simple practises that are so often not followed. Firstly, water early in the morning or later in the evening so the water gets the max amount of time to get to the roots without evaporation. Next, it is far better to water with a good soaking once or twice a week to really soak the ground/compost. Often if you’re doing a little bit every day you are actually doing your plants no favours, by watering a bit less you are encouraging the roots to grow deeper and actively search out water deep in the ground whereas the little and often makes plants live the easy life and never go looking for it, and become shallow rooted and thus dry out far quicker. Now I know it can be hard to get hold of some seeds, many sell out quickly and often delivery dates are weeks ahead! But do not worry too much, nature has an amazing way of catching up. So, although you may be late getting them in as such you can still have a great harvest come the summer. When looking for seeds, if you have ever seen F1 after the name this means it is the result of cross pollinating two plants. Which creates a better improved version of the plant. The downside is they are genetically unstable and cannot be saved for they will not produce a true plant or in the following years and in some cases are infertile. And some may have even seen F2 varieties these are merely the crossing of two F1 varieties. But the same principal afi ects these as well. If you’re wondering what the F1 means, Its Filial 1 or literally “fi rst children” and they are developed to create a more uniform size or colour and, in many cases, defi nite harvest date or durability and shelf life for the likes of supermarkets. If you are a fan of saving your seeds (Runner Beans are a classic example) you will need an open pollinated (a normal packet of seeds) or heritage varieties to achieve this. You can join the Heritage Seed Library (HSL) www.gardenorganic.org.uk and become a seed guardian thus saving the veg of yesteryear which still has much to ofi er.

A tyre that is either too infl ated or not infl ated enough can signifi cantly alter your vehicle’s handling. Wipers and screen wash Screen wash is vital in all seasons for clear visibility when driving, but it’s useless without fully functioning wiper blades. Additionally, keep an eye out for any damage such as cracks or chips on your windshield. Small issues, if neglected, can quickly escalate into major concerns. Lights Ensuring that all your vehicle’s lights are operational is crucial for visibility and communication with other drivers on the road. Ensuring your car is in fi ne fettle before it begins its journey is not just advisable – it could be the diff erence between a day out, mini-break, or week-long holiday… and staying put! Here are eight checks to make before you leave the driveway. Perform a thorough inspection of your vehicle’s headlights, turn signals, and brake lights before embarking on a lengthy trip. Air con You’ll know when your air con has gone – even the simplest, shortest journeys feel like you’re sat in a sauna. Unfortunately there’s no real way of knowing when it’ll go, until it goes, but regassing your air con is a simple enough process at the garage, and temperate temperance will be quickly restored. Oil Oil is the lifeblood of your car’s engine. No oil, no journey. While topping up is smart – different types of cars have different oil types – don’t overdo it, as too much of the stuff can impact your running effi ciency. Engine coolant Coolant keeps your car’s engine healthy by regulating the temperature of the cooling system. Many newer cars have a closed cooling system which means they don’t need topping up, but with older motors the fl uid level in the reservoir is easily located and it’s simple to top it up. Tyre tread depth Balding tyres really mess with your car’s mojo on the road, affecting everything from swerving around squirrels to hitting the brakes in time. Before you set off on an epic road trip, it’s a good move to check that your tyre treads are adequate. If you don’t own a fancy gauge, just use a 20p coin – its raised edge measures 2.5mm, so slot it into your tyre tread, and if you can’t see the outer band, you’re good to go. Fuel Finally, although it sounds obvious, always fi ll up before a long journey. Or if going abroad, perhaps to mainland Europe, stop in at one of the fi nal stations before making the crossing. Next add the dried chillies, followed immediately by the sauce mixture. Bring the sauce to a vigorous boil for 3–4 minutes until syrupy, then add the deep-fried meat, tossing the wok a few times so that the sauce fully coats the chicken. Sprinkle with sliced red chilli and spring onions and serve immediately with steamed rice. Method Recreating one of the tastiest Chinese takeaway dishes couldn’t be easier with School of Wok superstar Jeremy Pang. Simple, supremely tasty with the perfect balance of sweet and sour, you won’t believe it didn’t come out of a carton. Introduction 1. Soak the dried red chillies in hot water for 10 minutes, then drain. Mix the sauce ingredients together in a small bowl. 2. Place the chicken in a mixing bowl and massage the marinade ingredients into the meat. Then pour the seasoned cornfl our over the chicken and massage until each piece of meat separates and has a dry dusty white coating. 3. Deep-fry the coated chicken in vegetable oil at 180°C for 4–5 minutes until golden brown. Transfer the chicken to a plate lined with kitchen paper. Ingredients If using your wok for deep-frying (step three), carefully pour out the oil into a heatproof bowl to cool and give your wok a quick wipe with kitchen paper before continuing with step fi ve. Top Tip Jeremy Pang’s General Tso’s Chicken (serves two): • 10 dried red chillies • 300g skinless, boneless chicken thighs, diced • 200g cornfl our, seasoned with ¼ teaspoon salt and ¼ teaspoon pepper • ½ thumb-sized piece of ginger, peeled and fi nely sliced • 2 garlic cloves, fi nely sliced • 2 spring onions, fi nely sliced • vegetable oil Sauce • 30g sugar • 1 teaspoon sriracha chilli sauce • 1 tablespoon sweet chilli sauce • 1 tablespoon oyster sauce • ½ tablespoon black rice vinegar • 1 tablespoon light soy sauce • ½ teaspoon dark soy sauce • 50ml water Marinade • 1 teaspoon sesame oil • ½ teaspoon sugar • 1 tablespoon light soy sauce • 1 egg, lightly beaten To serve • sliced red chilli • sliced spring onions • steamed rice
