Ingredients PEAR, PARSNIP &
¼ red cabbage, very finely shredded RED CABBAGE
handful of radicchio or chicory leaves, roughly torn
1 beetroot, peeled and cut into fine matchsticks Serves: 6 as a side / Prep time: 10 min
2 tbsp red wine vinegar
½ tbsp Dijon mustard A selection of raw winter veg. Treat it as a slaw over the festive
salt and pepper period, serve it as a salad alongside cold cuts, or extend into a quick
1 pear, finely sliced or peeled lunch by adding some cooked lentils and toasted nuts to the mix.
1 parsnip, cut into fine matchsticks If you put it anywhere near roast beef, then consider adding a dab
½ red onion, finely sliced of horseradish.
1 tsp poppy seeds
pinch of allspice Step 1: Prepare the cabbage, radicchio and beetroot.
2 tbsp olive oil Mix them together in a large bowl with the vinegar,
small bunch of parsley, roughly chopped mustard and a good pinch of salt. Leave for 10 mins
while you prepare everything else.
Step 2: Add everything else and mix thoroughly.
Season with salt and pepper to taste.

GRILLED LEEK & BLUE CHEESE SALAD WITH APPLES,
CELERY & HAZELNUTS

Serves: 4 As long as you take care of the leeks, the rest will take of itself. Make sure they are well cooked
Prep time: 15 min before griddling; the process is more about adding flavour than cooking. It takes so little time
Cooking time: 10 min to mark them – too long, and they’ll burn and turn bitter. The other components can be sliced,
diced or crumbled however you see fit. You could try switching the apples for pears, or using
walnuts or pecans in place of the hazelnuts.

Ingredients Step 1: Put a pan of salted water on to boil. Trim the flared leaf tops away from the
3 small leeks leeks so you are just left with straight lengths.
1 tsp Dijon mustard Step 2: Poach the leeks in the boiling water for about 8 minutes, until they are easily
1 tbsp cider vinegar pierced with a knife tip. Remove them from the pan and allow to cool.
3 tbsp olive oil Step 3: Put a griddle pan on a high heat. Peel away the top layer or two from the
40g hazelnuts, toasted & leeks; they will have become overcooked and water-logged. Spilt the leeks in half
skinned lengthways, and slice into 3cm pieces.
2 celery sticks Step 4: When the griddle is very hot, cook the leeks for 20-30 seconds a side; enough
2 apples to mark them, but not so much that they start to burn. Remove and season with salt.
100g salad leaves Step 5: Make the vinaigrette by whisking together the mustard and vinegar. Whisk
100g blue cheese, crumbled in the olive oil a small bit at a time, until you have a thick, emulsified dressing.
Season with salt and pepper.
Step 6: Break the hazelnuts into coarse pieces. Dress with a tiny bit of oil and a
pinch of salt. The oil helps the seasoning to stick.
Step 7: Thinly slice the celery at a sharp angle. Core the apples and slice them into
thin discs.
Step 8: Throw the salad leaves, leeks, apple and celery together with the dressing.
Pile artfully onto a serving dish and scatter over the hazelnuts and blue cheese.

RICH CHOCOLATE TRUFFLE MIX

to make. As well as for
truffles, it can be used as
a filling or coating for rich
chocolate cakes.

It is worth using a good
quality chocolate for the best
flavour - what percentage
cocoa solids you use is down
to your personal taste.

Learning how to shape them
with a teaspoon takes a lot
of time and practice, but is
really satisfying once you get
the hang of it.

If some of them don’t look
quite so neat then I am sure
you will be able to find a good
home for them anyway!

Ingredients for about 25 What to do
truffles First scald the cream in a heavy bottomed pan.
250g good quality dark Put the chocolate, syrup & Cognac in a bowl, pour on the cream and
chocolate stir until combined.
250ml double cream Finally stir in the butter until melted to give a glossy finish.
1tbsp butter Allow to cool before putting in the fridge overnight.
1tbsp golden syrup If you want to roll them by hand then you can do this from the cold
25ml Cognac tru e mix, however, if you want to try shaping them with a teaspoon
Cocoa powder to dust into losenge shapes like we do at the Waterside, you will need to get
the temperature, and therefore the consistency, just right.
12 Either way chill them again before rolling in plenty of good bitter
cocoa powder.
Perfect with a cup of co ee. Bon appetit.

Well if there was ever a year to look forward to seeing the back of it is 2020.

A huge thank you is owed to our local community groups and individuals who
have stepped into the breach and supported those most in need during difficult

times. The response from these organisations has been nothing short of
extraordinary. Thank you also to our Town Councillors and my colleagues in the

Town Council team for their support and commitment during some very
challenging times.

And as ever, huge appreciation is felt for our our emergency services and NHS
workers who are remarkable in normal circumstances but have been nothing
