Serves: 2
Prep time: 10 min
Cooking time: 30 min

Hasselback is a technique normally
used with potatoes; the process of
thinly slicing and then roasting
allows more surface area to crisp
up. Adding a honey, mustard and
balsamic glaze towards the end of
cooking results in crispy, sticky,
sweet squashy goodness. This
recipe would work well with spiced
couscous, quinoa, or on its own as
part of a veggie platter.

Ingredients Step 1: Preheat oven to 180°C/Gas 4. Prepare the squash by cutting it in half
For the squash lengthways, then scooping out the seeds with a spoon. With a sharp knife, hasselback
1 medium sized Butternut the squash widthways, by cutting a slice every 3-5 mm, from top to bottom. Make
squash sure you don’t cut all the way down to the chopping board – you want the squash
4 bay leaves to stay intact. Tip: place wooden chopsticks either side of the squash to prevent

Step 2: Rub or brush olive oil over the squash and season with salt and black pepper.
For the glaze Place cut-side down in a roasting tray, then add the bay leaves into the slices in the
1 tbsp light brown sugar squash. Bake for 15 minutes.
1 tbsp honey Step 3: While the squash is in the oven, add all the ingredients for the glaze to a
1 tsp Dijon mustard saucepan. Cook over a low heat until the sugar, butter and honey have melted and
40g salted butter the mix is thoroughly combined.
2 tbsp balsamic glaze Step 4: After 15 minutes, remove the squash from the oven and brush over the glaze.
1 tsp smoked paprika Repeat this every 8/10 minutes until the squash has cooked through: the centre
should be soft and the outside should have crisped up.

SWEET With their rich sweet flesh, sweet potatoes are a vibrant and versatile replacement for potatoes
POTATO AND or squash in scores of dishes. They are packed with plenty of vitamin A, vitamin C, magnesium

200g baby spinach Leave it to simmer while you deal with the sweet potatoes. Wash the sweet potatoes
2 tsp harissa paste and slice them widthways into 3mm discs. Place the slices in a mixing bowl with 2
1 bay leaf tablespoons of oil.
1 tsp cumin Step 5: Season generously with salt and pepper. Toss them together so that the slices
1 tin chopped tomatoes are all coated and seasoned. Preheat your oven to 200°C/Gas Mark 6. Add the
600g sweet potatoes spinach to the lentils. Stir until it wilts. Taste the mix and adjust to your taste with
250g spring greens salt and pepper.

an overlapping shingle pattern. Place in the oven and bake for 25 minutes until the
potatoes are tender and colouring at the edges. Meanwhile, clean the saucepan and
fill it with salted water.
Step 7: Put it on to boil. Wash the spring greens and strip the leaves from their tough
central stalks. Lay the leaves on top of each other and roughly shred them. When
the bake is ready, boil the greens for 3 minutes, or until tender. Drain and serve
beside generous scoops of the bake.

125g butter You will not necessarily use all the stock. Pick the meat from the
125g plain fl our rabbit & mix it in to the sauce with the ham, cream & mustard.
2 tbsp coarse grain mustard Taste, then season with salt & pepper if necessary. Add the fresh
100ml double cream chopped parsley. Allow to cool.
Chopped parsley To make the pie, cut the pastry into 1/3rd for the lid and 2/3rds for

restrictions on face to face consultations,
Citizens Advice South Hams are introducing a
new way of working. In order to continue to

This will allow you to access our services from
