8 l THE SANDHURST DIRECTORY So what do we associate with a new year? • Diet and lifestyle resolu� ons that may be broken by lunch� me on the 1st January? • Plans for major life changes that may never happen because of anxiety or fear? • Holiday plans to go to places on the bucket list that may not transpire because either you or your travelling companion is worried about foreign travel ? Whatever the New Year brings for you it may well give you an opportunity to consider the direc� on of your life and what you hope to achieve in the future. It may also give you the � me to stop and refl ect on those challenges you may need to face in order to achieve your goals. For example, now may be the � me to work on those anxie� es and fears, and build the confi dence to be able to face any challenges that might arise. One thing that I know holds several people back from making a major life change such as changing job, is that they may be required to make presenta� ons in a more senior role, and a fear of public speaking may be holding them back. Likewise, many may worry that they may have to travel in their new role, and they have always been anxious about fl ying, or driving on a motorway or travelling by train, or using escalators in the Tube. Of course, fear of public speaking isn’t limited solely to work situa� ons. This fear can triggered by the need to give a speech at an upcoming wedding or family event. I am happy to report that I have helped more than one budding Best Man over the years. Some individuals may want to improve their health by making posi� ve changes in their diet, or do more exercise, or stop smoking, but not know the best way to go about this. Other people might want to have a child, but may be terrifi ed about the whole prospect of what bringing a child into the world entails. Many people will be able to make these changes on their own without outside assistance but the good news is that if this is proving too diffi cult to achieve by yourself, or if you have tried and failed in the past, then all of the above can be helped with the use of hypnotherapy. Hypnotherapy is a completely natural form of therapy which does not involve popping a pill prescribed by your doctor to help you to get to sleep, or feel calmer. As a hypnotherapist, I aim to empower my clients to take control of their own lives so that they can feel able to make the changes they need to make. So on another note, you may be reading this a bit later into the New Year, and feel that it isn’t as relevant then. But I would ask you to consider this… every day of the year is the fi rst day of the next 365 days. What you did not start on the 1st January doesn’t have to wait un� l next December to get considered again!! But for many this will not happen unless careful arrangements have been made to protect their assets from being taken towards the end of their life to pay care home fees. To help protect a couple’s estate, the solution may be a Will incorporating a Trust. A testamentary Trust can only be executed whilst both partners remain alive. 36 l THE SANDHURST DIRECTORY Method Preheat the oven to 200°C. Peel the potatoes and cut into 2cm chunks, then boil for around 15 minutes, or until tender. Meanwhile, make the sauce. Melt the butter in a saucepan over a low heat and stir in the flour. Add the bay leaves. Then gradually add the stock and the milk, stirring after every addition until the sauce is smooth and silky. Bring to the boil, then reduce to a simmer and cook for 10 minutes, or until thickened. Drain the potatoes well and leave to air dry. Stir the mustard into the sauce, grate in half the cheese, then squeeze in the lemon juice. Pick, finely chop and stir in the parsley, then keep stirring until the cheese is melted. Season with a little salt and black pepper, then remove from the heat. Check that there aren’t any stray bones lurking in the fish fillets, then slice into 2.5cm chunks and spread them evenly over the base of a 25cm x 30cm baking dish alongside the prawns. Fry the shallots in a little butter until golden, then add the spinach to wilt. Add to the dish on top of the fish. Remove the bay leaves, then pour over the white sauce and allow to cool slightly. Mash the potatoes with a little extra virgin olive oil, a splash of milk, 50g of the cheddar cheese and seasoning. Spoon over the pie and scuff up the surface with a fork. Grate the remaining Cheddar over the top and bake in the oven for 45 minutes, or until the fish is cooked through, the sauce is bubbling up at the sides and the top is golden. Serves 6 ukshallot.com FISH PIE For the topping 1.5 kg floury potatoes such as Maris Piper Extra virgin olive oil Splash of milk 75g Cheddar cheese Salt and pepper, to taste For the filling 50 g unsalted butter, plus a little extra for frying 50 g plain flour 2 fresh bay leaves 350 ml quality fish stock 350 ml semi-skimmed milk 1 heaped teaspoon English mustard 50 g Cheddar cheese ½ a lemon A few sprigs of fresh flat-leaf parsley Salt and pepper, to taste 200 g skinless, boneless haddock or cod; 150g skinless boneless salmon and 150g skinless, boneless, undyed smoked haddock OR 600g fish pie mix 200g large raw prawns 200g round shallots, peeled and halved 1 tbsp olive oil 200 g baby spinach Enjoy a British staple this winter by indulging in this deliciously comforting fish pie. Preparation Time: 15 minutes Cooking Time: 1 hour

The Village Grapevine So, 2023 is now past and we all look forward to what 2024 may have in store for us: wet, dry, gales, snow - probably all of them and all in January! The good news is that the days are slowly creeping out and you will gain about a minute extra sunlight every day. It’s also when most start planning for the year ahead; make a few resolutions that we may or may not keep: I always say I will spend more time on the allotment and I do but not as much as I was resolving too! In the garden, depending on the weather, it’s a quieter time of year, but there are a few jobs that can be done. Roses can be given a good cutback removing dead or diseased branches and apple and pear trees can have their annual cut back or shaping while they’re dormant (although any bigger cuts should be sealed with cut paint). Ornamental grasses can also be given a cut back and tidy up so that the new growth has a chance to push on and show when the weather warms up. If you’re quick you can still get some spring and summer bulbs in the pots and ground ready for the fi rst fl ushes of colour. 40 l THE SANDHURST DIRECTORY

Down the Plot... By now Jack Frost should have visited and this is good for your Brussel Sprouts (cold and frost improves the taste and fi rms them up so they don’t go as soggy when cooked!), but not so good for gardener’s toes and fi ngers! It is also a good time to put some compost on your vegetable beds and let the frosts break it all down ready to be dug in before the new season’s sowing. This gives the worms a chance to do their work. Parsnips will be at their best too after a dusting of frost. Keep an eye on the Brassicas and remove any yellowing and fallen leaves as pests and disease can easily hide in them and take hold. Leeks will be about ready as well and if your partial to some early peas get out the cloches or fl eece and get them on the ground to gently warm up the soil a few degrees ready for some early sowings in a few weeks. You can start chitting your early potatoes on a window sill or a sunny cool greenhouse again ready for planting in a few weeks. If you didn’t get your Garlics in last autumn you can do them towards the end of Jan early Feb. Maybe the most important job for me is ordering my new seeds I may need and planning where it’s all going to go so I can prepare beds accordingly. That’s all for now and remember, enjoy your garden!
