300g podded broad beans
(about 900g in their pods) Serves: 4 / Prep time: 10min / Cooking time: 10min
125g self-raising flour These simple fritters make a good vegetarian main course but you could also serve smaller ones
2 large eggs as starters or canapés for a summer party (they can be made in advance and gently warmed

Serves: 2 / Prep time: 15min / Cooking time: 25min

This is a salad in a loose sense of the word. Rather it is the coming together of plenty of complementary elements.

Ingredients Step 1: Preheat oven to 200°C/Gas Mark 6. Spread the almonds out on one of the
40g flaked almonds roasting tins. Toast them in the oven for 2-3 minutes until lightly golden in colour.
1 tin chickpeas Be careful not to burn them. Meanwhile, drain the chickpeas and rinse under cold
light olive oil water. Tip them into the clean tea towel and pat them as dry as you can.
800g carrots Step 2: Remove the almonds, throw them with a dash of oil and a pinch of salt. Keep

Slow Cooked
Shoulder
of Lamb
with Rosemary Scented

Shallots. Serves
6
Preparation time: 30 minutes
Cooking time: 4-5 hours

You’ll need:
1 boneless shoulder of lamb
1 head of garlic
½ bunch of rosemary
2 peeled carrots
50ml olive oil
Salt and pepper
400g whole round peeled shallots
20g tomato puree
Pinch of flour
1 litre of chicken stock
