Letter from the CEO

Dear Friends,

Thank you for joining us for our first virtual event, SWEET NOTES! While nothing can replace getting
together in person, we are excited to present this special experience that includes a few surprises! We
hope you enjoy the evening.

It is the passionate commitment of Laura Coleman and the Golden Monarch Council that brings us the
Annual Wine and Food Tasting Extravaganza. This year Laura and the committee have put together a
wonderful virtual program. They have our deepest gratitude. We are also grateful to Gaudin Porsche,
Johnson Brothers of Nevada, Daniel Emmet, and D’Liteful Chocolat and all our wonderful sponsors for
making this event possible.

The funds raised this evening support our Pediatric Hospice Program and our Families in Need Fund. Your
generosity will help many children, families, and patients.

While end-of-life care is never easy for a family, it is especially difficult when the patient is a child.
Nathan Adelson Hospice is committed to providing compassion and comfort to children and their loved ones when they need it
the most. Our Pediatric Hospice Program meets the special needs of children with life-threatening conditions through symptom
management and emotional support. Our Pediatric Team is focused on improving quality of life while minimizing fear
and uncertainty.

Our Families in Need Program provides immediate resources for critical necessities such as food, clothing, or utility services. In
many cases, hospice patients do not have time to wait for routine assistance; for them, every minute counts. The Families in
Need Program allows dollars to be disbursed swiftly for urgent patient needs.

These are unprecendented times and we are grateful for your continued support of the work that we do. We look
forward to seeing you in person at next year’s Wine and Food Tasting Extravaganza!

Golden Monarch Council

The Golden Monarch Council is a group of professional women
from diverse backgounds and careers, who come together to
support Nathan Adelson Hospice and its ideals, goals and mission.

The purpose of this committee is threefold:

To financially support the needs and programs
of the hospice through committee events and programs
To educate the public about hospice, including what it is
and what it means to the community
To provide a vehicle for professional women to network
and meet like-minded individuals who feel the need to give
back to their neighbors and community
The goal and mission of the Council is to provide support and

funds for the Pediatric Hospice Program and the
Families In Need Fund.

TONIGHT’S PROGRAM

CHEF DAYLEEN COLEMAN grew up with a passion for all things culinary. Determined to
explore that most delectable of creative outlets, Dayleen moved to England, where
she studied a myriad of culinary techniques at the famed Le Cordon Bleu i​n London.

Upon completion of her studies, she immediately sought out and found opportunities
to further her knowledge and skills within the demanding culinary industry. Through
that experience, she found that her passion truly lay in the eternally-complex world
that is chocolate-making.

U​ pon her return to the States, Dayleen wanted to share her love of patisserie and
chocolate with her community by starting her own small business. D’liteful Chocolat
was founded in 2017 in San Marcos, California where Dayleen lives with her husband
of 20 years, Curt, and their two daughters, Elizabeth, 14, and Sidney, 10.

HARLEY CARBERY is the District Manager, On-Premise Sales for Johnson Brothers of
Nevada. His passion for wine and hospitality has transitioned from his operational
background to a focus on the sales and distribution side of the beverage industry.

In 2008, Harley joined the team at Robuchon restaurants at MGM Grand Hotel &
Casino. He began as assistant general manager and sommelier at L’Atelier de Joël
Robuchon and, within just one year, was promoted to wine director for Chef of the
Century Joël Robuchon’s Las Vegas restaurants; Joël Robuchon Restaurant and
L’Atelier de Joël Robuchon. Here, Harley managed wine lists consisting of more than
1,900 and 600 items, respectively, trained and educated the wine staff including four
sommeliers, and interacted with guests to ensure that each had an elevated dining
experience.

In his time serving in this position, the wine lists at both restaurants earned the elite
Wine Spectator Grand Award and Best of Award from 2009-2012. Along with his
leadership and managerial skills, Harley is a highly-certified wine professional. In 2009,
he became a certified sommelier by the Court of Master Sommeliers and a
Certified Sake Specialist by the Sake Education Council. Carbery earned the
distinction of Certified Spanish Wine Educator from the Wine Academy of Spain in
2008.
