MEXICAN INSPIRED POKE BOWL
INGREDIENTS:
75g Vegetable mince
55g Chunky Avocado (VEG121)
10g Roquito® chilli pepper pearls (PEP166)
125g Merchant Gourmet Glorious grains red rice & quinoa (CER046) 60g Black beans (VEG375) Wholemeal tortilla wraps (BRE417) 20g Roquito® pepper sauce (SCE185)
Handful of peashoots and grated carrot
METHOD
1. Heat the mince, Merchant Gourmet glorious grains and black beans.
2. Place the hot grains into a deep bowl.
3. Followed by the mince, black beans and Chunky Avocado.
4. Now to top the dish, place pea shoots, grated carrot, Roquito® pearls and a generous drizzle of Roquito® spicy pepper sauce.
5. Serve with pre-baked paprika tossed tortilla shards.
ITALIAN VEGAN BOLOGNESE
INGREDIENTS:
125g prefried onion (VEG044)
2 tsp roast garlic puree (FRZ615)
1 x pack Naturli mince meat (SAM144)
2 tbsp SunBlush® Tomatade (SCE050)
400g Concasse tomatoes (TOM135) 150ml red wine WIN002
2 tsp dried oregano
1 tsp cumin
1 tsp paprika
METHOD
1. Fry the onions and garlic puree in a pan with olive oil. 2. After 3 minutes add the Naturli mince, and continue to fry for a further 3 minutes.
3. Add the red wine at a high heat, and once reduced add the Sunblush® Tomatade, Concasse tomatoes, dried oregano, cumin and paprika.
4. Allow to simmer for 15 minutes, season with salt & pepper and serve with your desired pasta.


With its pulled pork quality, jackfruit has fast shot into the spot light when it comes to meat replacements and vegan cooking. Jackfruit, similar to tofu, absorbs flavours extremely well and works perfectly as a meat substitute in barbecue

SMOKED BBQ JACKFRUIT LOTUS BUNS WITH ASIAN STYLE SLAW
INGREDIENTS
75g Jackfruit (FRU056)
30g BBQ Sauce
1/4 Red Onion, thinly sliced
1 Radish, thinly sliced
1/8 Carrot, thinly sliced
1g Fresh Coriander, chopped 2 Double Sliced Lotus Style Buns (BRE016)

METHOD
1. Defrost the lotus style buns, shred the jackfruit and mix with the BBQ sauce
2. Toss together the red onion, radish, carrot and coriander in a bowl to prepare the asian style slaw
3. Reheat the lotus buns and jackfruit seperately, until piping hot
4. Fill the lotus buns with the hot jackfruit, and top with the asian slaw
INGREDIENTS
250g of Merchant Gourmet mixed grains (CER031) 200g Tofu (VGN017)
1 tbsp sesame
seeds (SEE020)
4 spring onions
Splash of sesame
oil (OIL012)
DRESSING
150ml soy sauce (SCE017) Juice and zest of 1 mandarin
Juice of 1 lemon (JUI041)
1 tbsp sesame oil (OIL012) 1 tbsp sesame seeds (SEE020)
1 tsp ginger puree (PUR030)
METHOD
1. Make the dressing by mixing together the soy sauce, ginger, sesame oil, lemon and mandarin juice together in a saucepan, bring to the boil
2. Simmer for 5 minutes, take off the heat and add the mandarin zest
3. Heat up the splash of sesame oil, add three sliced spring onions and once softened add the Merchant Gourmet rice pouch until warmed through. Serve between two plates.
4. Roll the tofu in sesame seeds, cut into four slices and arrange between the two plates. To serve drizzle with Ponzu dressing and sprinkle over the remaining spring onion

METHOD
Put all the ingredients together in a food processor. Blend for 90 seconds or until it is completely smooth. Season to taste with salt.

250g pounch of Merchant Gourmet® Simple Cooked Super Seed Mix (SEE076)
2 tbsp of peanut butter
2 tbsp of cocoa nibs
2 de-cored dates
pinch of salt
200g unsalted peanuts
METHOD
Place all the ingredients (except the peanuts) in a blender and blitz until a dough is formed. Roll into balls, about 2 tbsp at a time.
Seperately, in a blender blitz the peanuts until fine, then roll the balls in the crushed peanuts. Store in the fridge and have on hand as a high protein snack
