HOW WE GOT OUR NAME
Roscoe's House of Chicken and Waffles is
a Long Beach, California-based soul food
restaurant chain founded by Herb Hud-
son, a Harlem native, in 1975. It is best
known, as the name states, for serving
chicken and waffles, both together and
separately, although they do offer more traditional menu items as well.
HOW WE BECAME FAMOUS
Soon after it was opened, Hudson had friends in Motown and television such as Na-
talie Cole who would spread the word to other celebrities; Redd Foxx would tell his
audience that he went there.
The Los Angeles Times refers to Roscoe's as "such an L.A. institution that people
don't even question the strange combo anymore." The New York Times refers to it
as a "beloved soul food chain". The original location in Hollywood remains popular
with celebrities.

Ms. Ethel Gardner has come from the most humble be-
ginnings and has endured many tragedies. She grew up
without a mother, a grandmother, or a female men-
tor; this had a significant impact on the life she would
live. She was subjected to imprisonment and domestic
violence, at the hand of her children’s’ father, which
created an opportunity for her to not just survive, but
thrive.

Through the help of a friend, she found the courage to
change her circumstances and pursue her desti-
ny. She knew her calling was for a greater purpose
and it would only be realized if she persevered
and stepped out on faith. During her journey of free-
dom and discovery, tragedy once again disrupted her
newfound peace.

On March 13, 1993, she envisioned a family crisis intervention center and soon thereafter,
she established the Kennedy Austin Foundation, a nonprofit organization aimed at provid-
ing education, physical support, and resources to women and families whose lives have
been impacted by the loss of a child or domestic violence. Ms. Ethel has made it her mis-
sion to educate, equip, and empower women and show them that they too have the
means to turn tragedy into triumph.

As part of her community outreach efforts, she has partnered with the city of Pomona to
be a “first responder” to those in crisis; by providing food, clothing, shelter, and end of life
planning resource services. She has also partnered with Tri-City Mental Health Services to
provide grief counseling and support.

Trudy has over 20 years in computer technology

experiences, over 12 years of Real Estate Sales and

Mortgage Lender expertise, and over 15 years of

Special Events Planning and Marketing Experience.

She has earned her MBA Degree from the University

of LaVerne in (2006), and a Certificate in

Organizational Leadership and Management (2008),

and earned her BS Degree from Azusa Pacific

University in 1995. She has plans to pursue her

Doctorate in Public Administration.

After falling ill in 2004, she has been pushing

hard to recover and gain ground where she left off

with her Juneteenth Education Project. She is keeping

the faith and moving forward with the mission that

God gave her, which she feel is her purpose, of

helping the digital divided community to become

skillfully independent and computer literate,

bringing historical Juneteenth education and cultural awareness into the school and

libraries.

As Co-Founder, and previously served as President of Juneteenth America, Inc. (J.A.I.)
a non-profit community based organization incorporated in February of 1996. Over the past
14 years, She worked in conjunction with numerous community leaders and public
officials. and has worked feverishly in attempts to establish Juneteenth as a legal holiday.
