the lonely creature. He promptly began telling outlandish tales of mischief and mayhem
from his journeys along the river.
The creature told of one of his first encounters with people along the Red River in 1873,
when he met a crew of men in charge of breaking up the log jam. These men were the
first to accept the monster for who, or what, he was. Immediately, an unwavering kinship
between the crew and the River Monster develop. The crew finished clearing the log jam
and never returned. Heartbroken and confused by the loss of his friends, the River
Monster wandered back out into the Red River only to return to the Shreveport/Bossier
area periodically to play his practical jokes on the townspeople and LSUS, until now.
Tales of this River Monster scaring faculty and staff members on the fourth floor of
Bronson Hall surfaced for many years, but he never revealed himself. This led people to
believe that Bronson Hall was haunted. These hauntings go back as far as 1973; however,
sometime in early 2017 the River Monster was spotted one night by a LSUS staff member.
He was invited by members of the LSUS community, as they believed he had something to
offer the university. After meeting with him, they agreed wholeheartedly that he did and
was offered a place to call home on the LSUS campus and the role of the university’s
mascot.

LSUS AUXILIARY SERVICES TINUTEERSNADTAIOYNASL
ATTHE PORT GRILLE
WRITTEN BY: LSUS AUXILIARY SERVICES
LSUS is an incredibly diverse university with many of our own faculty, staff, and students coming
from all over the world! Sharing and learning about one another's cultures is an integral part of
our campus community, and what better way to do that than through food. Food is an especially
connective tool. It can be through meals, hangouts at The Port Grille, or preparing food for and
with others that we strengthen our bonds with friends and family. Ultimately, the feelings and
experiences that we have with food helps us to build connections with others!
In early January 2022, we at Auxiliary Services launched “International Tuesdays” in cooperation with The
Port Grille to ensure that our Pilots have access to this cultural experience. Giving everyone the chance
to “explore the world, one dish at a time” which was the main objective of this effort. Likewise, we also
wanted our international students along with faculty and staff to have a bit of home with them even for
just a moment, while getting an opportunity to showcase their culture! One of the unique characteristics
of International Tuesdays is that nearly, if not entirely, all of the featured dishes were provided by
members of the LSUS faculty, staff, and student body. From savory Filipino chicken adobo, flavorful
Honduran flautas, aromatic Indian tikka masala, to tantalizing Nigerian beef stew, The Port Grille offers
something fresh every Tuesday!
As previously stated, this is a team effort; our Pilots send recipes, and The Port Grille grants the dishes. ABOVE: MS. COMBS PLATING
HONDURAN FLAUTAS
With the help of our Director of Food Services, Steve Sittenauer, and Catering Chef, Rhonda Combs, who
spearheads this effort on behalf of The Port Grille. Ms. Combs has over 25 years of experience in the food
services industry, many of which were spent working with the U.S Army. Due to her military career, Ms.
Combs has traveled extensively, having been stationed in a variety of nations. She has had the
opportunity to experience other cultures firsthand, particularly with regard to cuisine. She really “enjoys
cooking food from different nationalities” and feels that International Tuesdays is important as “it does
help [one] grow because it expands [one’s] pallet”. Ms. Combs was enthusiastic in providing our Pilots
with a more diverse menu, so it was no surprise that she was on board with International Tuesdays from
the beginning.
International Tuesdays has been a huge success and a favorite
among faculty, staff, and especially students from the previous
semester to the present. Soraya Karimi Sarab Berrios, president
of the International Student Association (ISA), is one of them and
says, "It just makes me happy seeing kids try new things and
touch a little of each country via food." She also discusses how
International Tuesdays serves as a fantastic means of bridging
our diverse campus community. “Since the majority of people are
unable to travel to try the food”, she observes, "at least they can
sit down to dine at LSUS and discuss about their culture."
Moreover, she finds it valuable that Pilots can "touch each
country without having to leave campus" thanks to International
Tuesdays. So, if you find yourself at LSUS on Tuesdays at The Port
Grille, get a taste of International Tuesdays so you too can explore
the world, one dish at a time!
