Not Your Mamas Mashed Taters

INGREDIENTS

5 lbs Potatoes Garlic Powder

1 inch Chicken Broth Salt

2 sticks Butter Pepper

8 oz Cream Cheese

DIRECTIONS

1. Wash potatoes, peel (optional), and dice into 1 inch cubes.
2. Add 1 inch of chicken broth to the bottom of a stock pot on high heat. Wait
for the first bubble and turn down to simmer.
3. Add potatoes. Put air tight lid on. Wait for 1 hour or until potatoes can easily
be punctured.
4. Do NOT remove chicken broth! Add butter, cream cheese, garlic powder,
salt & pepper to taste.
5. Mix until the potatoes have no lumps.
6. Serve!
Tip - for additional flavor add cheese & bacon.

Niehaus Family Scholarship Award

The Niehaus Family Scholarship was awarded to Austin William Finch of
Vincennes. Austin was born and raised in Vincennes, IN. He graduated from
Rivet High School in 2020. Austin is a sophomore at Vincennes University
and will graduate with honors in December of 2021 with his Associates in
Construction Technologies.
Austin has worked for Wolfe Construction his entire life. He has worked on
numerous local projects including - Pioneer Oil, Subways, Steak n’ Shake,
the Isaiah House, French Village and many others. Austin has aspirations to
follow in his fathers footsteps and become a carpenter and later grow into a
management position. When he isn’t busy with school work or work he enjoys
riding his four wheeler, dirt bikes, and anything with a motor! He also enjoys
spending time with his family. Congratulations Austin, and good luck with your
future endeavors!
