The dulce de leche (milk caramel) used in gelativo is made locally to an
Argentinean recipe to give our milk caramel gelato its authentic taste.
Dulce de Leche originated in Argentina in 1829 in the city of Cañuelas in
Buenos Aires. Unlike caramel, however, which is made by heating sugar,
dulce de leche is prepared by heating milk and sugar to create a rich,
decadent caramel sauce or spread. It is also widely used in candy, cakes,
alfajores (cookies), ice cream and gelato!

The Australian honey in gelativo comes from the gold rush region of
country Victoria, where one of the miners realised that there was a better
living supplying liquid gold to the miners in exchange for solid gold.

Our Greek yoghurt is made by fermenting milk from the green pastures of
Victoria, Australia, with live bacteria cultures. The mixture is then strained
multiple times, removing the liquid whey, and giving the yoghurt a rich
velvety texture. The end result is a more solid yogurt with less sugar, fewer
carbohydrates, and more protein compared to regular yogurt.
