2 tsp vanilla extract
625ml (2½ cups) warm water/milk
oil, to deep-fry

HOW TO DO IT
1 Combine the mung beans with the
coconut and castor sugar in a mixing
bowl. Using your hands, roll the
mixture into 10 – 12 equal-sized balls.
Coat lightly with cornflour.
2 In a separate bowl, combine the
cake flour, baking powder, vanilla
extract and water/milk to form a batter.
It should have the consistency of
flapjack batter.
3 In a deep fat fryer or large, deep
pot, heat oil to 180˚C. Use a sugar
thermometer to check the temperature
