Always going the extra mile Isn't it lovely when people people go out of their way to help others! Earlier this month one of our beautiful brides was sadly let down by one of her suppliers on the morning of her wedding. So what did we do? Our Company Director Gaynor dropped everything to rectify the situation for her Bride, within the matter of a few hours. A BIG thank you to the lovely Elaine from GillyTree Studio who came to the rescue. Elaine selflessly went out of her way to help the bride, who was delighted with her floral bouquets and arrangements that she made.

5 Ironman finishes in the Fifties!
Balbirnie House owner Nicholas Russell has now successfully completed his fifth full distance Ironman Triathlon, all five results achieved whilst aged in the fifties. This latest result took place on Sunday 18th June 2023 at Ironman Austria, which is regarded as the most legendary race in Europe. An Ironman Triathlon consists of a 2.4 mile swim, a 112 mile cycle, and a 26.2 mile marathon. All sections are timed, if you fall behind the cutoff times you are out of the race. Everything must complete within 17 hours. Nicholas joined Glenrothes Triathlon Club a decade ago and said ‘It was such an honour to have once again been able to represent our amazing, local, friendly, and inclusive Glenrothes Triathlon club. Joining the club 10 years ago was a lifechanging circumstance. Austria 2023 was absolutely incredible, racing in very hot weather in some of Europe’s most stunning landscapes, I was absolutely delighted to make the finish line’. What a fantastic event held here at beautiful Balbirnie on the 29th of June! The first 3 male finishers were: 1st: Adam Templeton 2nd: Steve Clark 3rd: Leahn Parry The first 3 female finishers were: 1st: Laura Kent 2nd: Lydia Louw 3rd: Gillian Sangster Balbirnie Duathalon has previously won Triathlon Scotland Event of the Year, and it is not to be missed! Hosted by the Glenrothes Triathlon Club. The course consisted of a 5k run (2 x the 2.5k course), 20k bike (1 loop) and 2.5k run. With both runs set wholly within the park and running alongside Balbirnie Golf Course, there couldn't be a more scenic and safe setting. The bike course is on road and takes in quiet country roads in the Star and Kennoway area before returning to the park. The run and cycle route was marshalled. This month it was such a pleasure to welcome so many local High Schools in Fife & the surrounding area for their Prom night at beautiful Balbirnie. Guests were welcomed to mocktail drinks receptions and canapes before enjoying their meals in our Ballroom and then dancing the night away to a DJ. Many local proms such as Bell Baxter High Inverkeithing High, Kinross High, Levenmouth Academy were also highlighted in The Courier newspaper! Jane & Jason How did your love story begin? I was Events Manager at an Restaurant called Gino’s and I was hosting Jason’s friends birthday party. While I was introducing myself he fell off his seat and said ‘you are gorgeous!’ I laughed but was charmed. Some months later he came in again with his friend for a more quiet drink, missed his bus and I offer him a lift home, that’s when he asked me on a date. We went out the next day as he was travelling Offshore for 2 weeks the following day. Conversation was so easy and from that day on we have been inseparable. Why did you choose Balbirnie as your wedding venue? Growing up Balbirnie was the ‘go to’ for our for big birthday celebrations. Serving us memorable cuisine, a step ahead of the curve on our doorstep. I remember feeling very special as a child going to the beautiful, Orangery restaurant. My Mum always said ‘ I hope you get married here one day’. I have been very fortunate to work alongside the incredible, multi- award winning team at Balbirnie House. As Banquet and Restaurant manager I saw first hand, the attention to detail that was meticulously, planned by Events and carefully, executed by the highly trained, banqueting team. We live in Spain now and weren’t sure whether we would go home for our wedding. What we did know was if it was Scotland, Balbirnie was our only choice. After our show round with Gaynor it was clear it had to be Scotland and we had visited many beautiful venues in Spain. We knew we could trust Balbirnie to deliver the best day. They did not disappoint, in fact they exceeded expectations on every level.
What is the best advice you would give to future couples planning their day? Take it in your stride, enjoy it. Remember with all the planning, don’t forget why you are doing it. On the day the only thing that really matters is that the two of you are joining in matrimony. That is the most beautiful part of the day. Not the dress, kilt, flowers, music. Do things together, work as a team, have the day you want and try not to please everyone else. Be kind to each other along the way. You don’t need all the extras, have them if you want but the ‘stuff’ you forget, it’s the love between you that really matters. Can you tell us about all the beautiful special touches and ideas for your day? I imagined it being relaxed, not too fussy and a little bit wild in parts. My dress : Victoria Jane by Roland Joyce. Dress name ‘Petra’ Veil: Rainbow Club Shoes: Martinelli Hair: Nicole Hughes my best friend. Makeup: Myself on the day but trained by my life friend, who is a make up artist, she has worked at London fashion week and gave me a masterclass before my Hen do. Florist: The Red Petal Company Ceremony music and drinks reception entertainment: Piper and Balbirnie’s playlist. With some personalised tracks from my husband in charge of the tunes for the day. Entrance song of ceremony: A million dreams’ from The Greatest Showman, for bridesmaids and flowers girls. I was piped down to ‘Highroad to Gairloch’ piped up to ‘Maire’s Wedding’ Cake: Fisher and Donaldsons, designer and confectioner Jade Milne events coordinator Chloe Milne made the most special cake. Favours: Fisher and Donaldson- Highlander Shortbread and Belgium, chocolate heart. Personalised thank you note. Kids favors Placemats download from Etsy and crayons. Tablescapes: Candelabras and tea lights Band: Funkeilgh trio of brilliant musicians, James from Funkeilgh was the DJ into the evening and took all our requests and mixed them into the night. Wedding Thanks Dear Gaynor, We attended my brothers wedding at your hotel this week, staying from Wednesday through to Friday for the wedding taking place on Thursday. I just wanted to write to say we had an absolutely wonderful time, and in particular commend a few members of your team. I’m afraid I didn’t catch everyone’s names, however on Wednesday when we checked in one of the front desk staff was particularly helpful in arranging a new fan to be sent to our room, and changing our breakfast time for the following morning, the male Manager on duty delivered our luggage to the rooms for myself & wife and my parents, and also helped my brother when last minute one of the suppliers contacted him approx. 17:00 on Wednesday evening to cancel! This was for the selfie booth, and the Manager assisted in making contact with another supplier last minute who was able to step in and avert the crisis. At a very stressful time I just want you to know how helpful this was. My highest praise and regard must go to the hospitality/catering/event Manager who was on duty and supported across the entire stay. I’m so very sorry that I didn’t catch her name, but she really was outstanding. At every point she was present, directing, assisting, smiling, greeting, helpful and just a wonderful woman. From BBQ set up, to corralling the troops for the beginning of the ceremony, to the turnaround of reception room from dinner to dance she was outstanding with no request too demanding (including finding a jewel that had fallen off my Mums shoe – needle in a haystack!). She really made the difference, obviously excels in her role and truly is an asset to your team. I do hope that you may pass on our thanks and praise to those I have mentioned, and the entire team who were wonderful hosts. Ingredients Biscuit Base 300 g digestives 150 g unsalted butter Cheesecake Filling 250 g white chocolate 500 g full fat cream cheese 100 g icing sugar 1 tsp vanilla extract 300 ml double cream 250 g fresh raspberries Decoration 150 ml double cream 2 tbsp icing sugar 100 g white chocolate 12 fresh raspberries 10 g freeze dried raspberries Method: For the Biscuit Base: Blitz the biscuits in a food processor to a small crumb, and add the melted butter – either pulse in the food processor a few times until the mixture is combined, or mix it in a bowl. Tip the biscuits into a 8″ deep springform tin and press down firmly. For the Cheesecake Filling: Melt the chocolate in a bowl over a pan of simmering water, or in the microwave on short bursts until full melted, then leave to cool whilst doing the rest. In your stand mixer with the whisk attachment, whisk together the cream cheese, icing sugar and vanilla together until smooth. Pour in the double cream and whisk until thick! Once completed, pour in the cooled white chocolate, and whisk briefly to combine, and then fold through the fresh raspberries. Spread the mix over the biscuit base, smooth over and chill in the fridge for at least 5-6 hours, or preferably overnight so it will definitely be set. Then enjoy!
