E X E C U T I V E C H E F Kris started working in the kitchens when he was 15 years old as a kitchen assistant, through his hard work and passion he was promoted to a chef at 16. He has developed his cooking skills and style by working in many hotels and restaurants such as the Roxburghe Hotel, Wedgewood the restaurant, Howie’s & the George Hotel just to name a few. Experience in fine dining restaurants, high volume restaurants & large scale conference & banqueting has put him in good stead for taking his first Executive Chef role at Balbirnie at aged 32. He is looking forward to many years here to develop himself and his team & the food offering at beautiful Balbirnie. After the highly praised SEVEN course seasonal tasting menu, here at Balbirnie were are now introducing a more approachable new GRILL menu which has been said to be "The best value for money Grill in Scotland". Balbirnie prides itself on using Scottish seasonal produce wherever possible. How important is this to you, and what exactly does eating local bring to the table? It is extremely important, I think now more than ever as diners want to know that their food is sourced locally and that it is in season. It is down to us as chefs to try our best to plan menus around this and as much as possible continue to source locally and seasonally. It is also better for the chefs as they know they are using good quality produce. Scotland is famous for its world-class meat and fish, but how was it coming up with your vegetarian and vegan offerings? It was actually really interesting, we really want our vegan & vegetarian guests to know we have put a lot of thought & effort into their dishes also, so there is lots of research into products (like making vegan cheese) and lots of trial & error but I think our vegan & vegetarian offerings are fantastic (but I am biased!) and have been very well received. What effect do you think the surroundings at Balbirnie House have on the visitors’ dining experience? I think it has a massive effect, from the moment you park at the hotel & you see the stunning building that is Balbirnie House & its gardens it really sets you off on the right foot for the evening, and that only gets better when you head in to the newly refurbished Orangery . It all adds to the experience. What is one trendy dish or ingredient that you just can’t get on board with? I can’t say there is any dish or ingredient that I can’t get on board with, but like many chefs I’m not a huge fan of sous vide prime cuts like beef fillet or venison loin, I understand the necessity of it with large events as it gives you a high level of consistency however it is a lot harder to get the hard sear & caramelisation you would want from these cuts. The Grill @ The Orangery We are absolutely delighted to now be introducing NEW menus for The Grill @ The Orangery. The GRILL is open seven nights a week and is a wonderful addition to the Fife food scene. Our custom-made Balbirnie Blue Josper charcoal-fired oven grill, is an absolute legend in the world of charcoal gastronomy and is used to cook a selection of Scotland’s finest beef steaks, all sized at a truly wonderful 10oz each. Rhododendrons galore! Here at beautiful Balbirnie we have stunning walks around Balbirnie park. The park boasts an extensive rhododendron collection, in fact it is one of the most significant collections of rhododendrons in the East of Scotland. This collection comprises around 200 varieties from India, China and the Himalayan provinces. The plant collection has been recorded and is clearly labelled throughout the grounds. The Wedding of Cameron & Lynsey 28th April 2023 How did your love story begin? They met at Agenda Leven when Lynsey was in with a friend for a night out and Cameron worked behind the bar. They hit it off straight away and after a few dates they knew they liked each other. Why did you choose Balbirnie as your wedding venue? Cameron and his 2 older brothers both worked at Balbirnie for many years and Kyle (Cameron’s bother) and Claire (Cameron’s sister in law) also got married at Balbirnie. What is the best advice you would give to future couples planning their day? Don’t worry about anything. Everything comes together on the day. The people you choose from your photographers to suppliers to band/piper all know what they are doing, let them do their thing. Balbirnie has won awards for a reason, let them run their show on how they know best. Can you tell us about all the beautiful special touches and ideas for your day? As with many weddings sometimes the people who matter most aren’t always around to see you get married but they are heavily involved in your day. Lynsey’s something blue was a picture of both sets of gran parents on their wedding days attached to her bouquet. And Cameron was wearing his late grandads watch. The 2023 date is now confirmed for the evening of Wednesday the 28th of June. This fantastic event previously won Triathlon Scotland Event of the Year, and it is not to be missed! Hosted by the Glenrothes Triathlon Club. The course will consist of a 5k run (2 x the 2.5k course), 20k bike (1 loop) and 2.5k run. With both runs set wholly within the park and running alongside Balbirnie Golf Course, there couldn't be a more scenic and safe setting. The bike course is on road and takes in quiet country roads in the Star and Kennoway area before returning to the park. The run and cycle route will be marshalled. Don't worry if it all seems a wee bit too much, you can do a relay team with another person. The relay teams will consist of 2 team members. The first team member will complete the first run leg of 5km, the second team member will then cycle the 20km cycle route. Team member 1 will then run the second run leg of 2.5km and both of you will run across the finish line. Fabulous atmosphere and a BBQ on the night!
