Rhododendrons galore! Here at beautiful Balbirnie we have stunning walks around Balbirnie park. The park boasts an extensive rhododendron collection, in fact it is one of the most significant collections of rhododendrons in the East of Scotland. This collection comprises around 200 varieties from India, China and the Himalayan provinces. The plant collection has been recorded and is clearly labelled throughout the grounds. Northern lights We had the privilege to see the gorgeous Aurora borealis at beautiful Balbirnie on the 11th of May this year. Aurora is a display of dynamic patterns of brilliant lights that appear as curtains, rays, spirals, or dynamic flickers covering the entire sky. It is predominantly seen in high-latitude regions such as the Arctic and Antarctic so it was wonderful to see it visible in the heart of Fife. These snaps were taken by David.
Balbirnie MD Nicholas Russell is on the start line for his 7th IRONMAN in Austria on the 16th of June this year. The IRONMAN consists of a 3.8km swim, 180km cycle, 42.2km marathon. Every section is timed and if you fall behind the clock you are out. The event must be completed within 17 hours. Read all about it here.
We are absolutely delighted to confirm, having installed new technology parking portfolio upgrades in late 2023, these have fully resolved the many problems we previously experienced over decades of inconsiderate parking. It is wonderful to see all of our 100 parking spaces now fully available for our own hotel guests! When new systems went live last year, we initiated with complimentary parking for guests attending all weddings that were booked, all wedding suppliers, all providing entertainment at special events, guests attending milestone special events, birthday events, charity events, all HGV bus and transit drivers delivering and waiting for guests, and all corporate and private residential guests with reservations via our network of Local Privilege Rates. We are further delighted, now that all systems are working so wonderfully well, to also extend Complimentary Parking for all new bookings for Afternoon Teas and Orangery private dining. Bear with us please as we tweak the online reservation process, all that guests need to do is park a car and then type the car number plate into our new front desk tablet. As easy as that! We are absolutely delighted to have delivered totally new capabilities for the combination of disabled parking and electric vehicle charging. For those who are familiar with previous disabled parking, these are located at the paved area at the hedge in our front car park. These are now designated only for disabled electric vehicles. From our previous two designated disabled parking spaces, we have now opened our entire western car park up to complete disabled access. We have made significant investments so as to change all surfacing along the pathway on the southern elevation of Balbirnie House. This has changed from previous large pebbles, to new ‘smooth roll surface’, completely changing disabled access. Find out more information on our parking here. Ingredients: Biscuit Base 300 g digestives 150 g unsalted butter Cheesecake Filling 250 g white chocolate 500 g full fat cream cheese 100 g icing sugar 1tsp vanilla extract 300 ml double cream 250 g fresh raspberries Decoration 150 ml double cream 2 tbsp icing sugar 100 g white chocolate 12 fresh raspberries 10 g freeze dried raspberries. Method: For the Biscuit Base: Blitz the biscuits in a food processor to a small crumb, and add the melted butter – either pulse in the food processor a few times until the mixture is combined, or mix it in a bowl. Tip the biscuits into a 8″ deep springform tin and press down firmly. For the Cheesecake Filling: Melt the chocolate in a bowl over a pan of simmering water, or in the microwave on short bursts until full melted, then leave to cool whilst doing the rest. In your stand mixer with the whisk attachment, whisk together the cream cheese, icing sugar and vanilla together until smooth. Pour in the double cream and whisk until thick! Once completed, pour in the cooled white chocolate, and whisk briefly to combine, and then fold through the fresh raspberries. Spread the mix over the biscuit base, smooth over and chill in the fridge for at least 5-6 hours, or preferably overnight so it will definitely be set. Then enjoy!
