2 THE CURRENT | JUNE 20, 2024 REWIND BACK TO 1916 REHOBOTH This week’s cover was photographed by John Yeatman, Jr. A postcard of Cape Henlopen Lighthouse at Rehoboth Beach. Ninety-eight years ago on April 13, the Cape Henlopen Lighthouse, standing since around 1765, fell due to coastal erosion. Built to combat shipwrecks near Cape Henlopen, it was made of ashlar granite and stood 69 feet tall with 6-feet-thick walls. Despite efforts to save it, the lighthouse collapsed on a spring day, becoming a local attraction as its stones were collected as souvenirs. HARI CAMERON + Chef consultant THE CURRENT BITE Crafting Mugolio Syrup from Foraged Pinecones Forest to Fork FORAGING FOR FLAVOR Seasonal foraging has always been a favorite part of my culinary journey. My foraging trips are always an adventure, whether they’re through dense forests or in neighbors’ yards, they allow me to connect deeply with nature and discover unique ingredients that enhance my dishes. Among these, green pinecones, including those from spruce and cedar trees, stand out for their ability to transform into an extraordinary syrup known as mugolio. Each cone type, packed with moisture and essential oils, offers its distinct aroma and flavor profile to the syrup. This syrup has a history as rich as its flavor and dates to ancient times in northern Italy when it was used for both food and medicinal purposes. With its deep, resinous flavor, this elixir is a testament to the magic that happens when nature meets culinary craftsmanship. A VERSATILE INGREDIENT Mugolio syrup is a versatile ingredient that can transform both sweet and savory dishes. One of my favorite ways to use it is to drizzle it over a scoop of vanilla ice cream, creating a delightful harmony of flavors. The syrup's piney notes enhance the ice cream's creaminess, creating a unique and delicious dessert. I also love adding a splash of mugolio to roasted vegetables, which adds a subtle sweetness and complexity, elevating the dish to a new level. The possibilities are endless, and I encourage you to explore the culinary potential of mugolio syrup in your own kitchen. MAKING MUGLOLIO SYRUP Making mugolio syrup is as fascinating as the product itself. This process begins with selecting the suitable sugar to draw out the essential oils, terpenes, and moisture from the pinecones. I employ different sugars in this method —white sugar, which provides a clean sweetness; light brown sugar, which adds a hint of caramel; and turbinado sugar, which lends a subtle molasses flavor—each imparting unique characteristics to the syrup. I have even started to use local pine honey, which adds a floral note and a deep, rich sweetness that perfectly complements the pinecones' natural flavors. Once you have the pinecones, this is an easy food to create. I encourage you to embrace the process, experiment with different ingredients, and, most importantly, explore the journey from forest to fork. DIRECTIONS: ➊ Gently wash the pinecones to remove dirt or debris. Handling them carefully is essential to preserve their integrity and the oils within. ➋ Layer the pinecones with the chosen sugar in a glass jar, ensuring that each cone is well-coated. The sugar will work as a desiccant, pulling moisture from the pinecones and starting fermentation. The sugar draws out the pinecones' moisture over several weeks, creating a syrup as the mixture ferments. This is a vital part of the alchemy that allows the flavors to develop, creating a complex and aromatic syrup. ➌ While it is in fermentation, the mixture of the developing syrup is a natural transformation, with the sugars breaking down and the flavors intensifying. Once the syrup reaches the desired consistency and flavor, I strain out the solids and bottle the syrup. The result is mugolio, a beautiful, amber-colored elixir with a sweet and slightly resinous taste. This process can be ready after two or six months to a year. About 1,800 miles away from their OG spot, you can sip on Swishy Pants, Secret Machines, and Sun Camps thanks to their newest location in the RiNo District of Denver, Colorado. If you’re local and looking for that rocky mountain high a little closer, head on over to Harbeson. You can expect those same Dewey vibes, without the headache you earn from navigating traffic and finding a parking spot. They’re even slinging fresh wood-fired pizzas from right next door at Pizza Machine. Pizza… beer… what about my beach bod? They are one step ahead of you. Every Tuesday at their Dewey location they host their weekly Run Club. Starting at 6 pm, runners and walkers start a threemile loop that heads towards Rehoboth and ends back at the brewpub, often followed by some well-earned refreshments. After your fifth run, you get an honorary Dewey Beer Run Club shirt. Forgot your sneakers at home? No worries, 16-ounce curls are more my speed when it comes to exercise anyway. 10 THE CURRENT | JUNE 20, 2024 SMALL WONDER, BIG BITES BY PAM GEORGE Set to Sizzle Kevin Reading brings the much-loved Abbott's Grill brand to Milton RETURNING TO A RESORT TOWN When Kevin Reading announced that he was opening a new Milton restaurant, longtime foodies and chefs rejoiced. “Kevin,” they said, “is returning to the beach!” It had been years since he opened—and sold— Espuma in downtown Rehoboth and Nage on Coastal Highway. But Reading has long had a home in the Millsboro area, even after opening Abbott’s Grill in Milford and Laurel, and Brick Works Brewing in Smyrna and Long Neck. He just wasn’t as visible in the resort towns where he’d helped launch the careers of respected chefs and restaurateurs such as Hari Cameron, Ted Deptula, Josh Grapski and Sean Corea. The new Abbott’s Grill at Paynter’s Mill, located just off Route 1 and Cave Neck Road, isn’t beachfront, but it’s more accessible to coastal fans. Many came to the friends-andfamily run-through event before the June 7 opening, and it was akin to a welcome-home party, complete with warm hugs for the veteran restaurateur. BREAKING BOUNDARIES If you’re new to the coast, here’s a recap. Reading started his hospitality career at age 12 in Gainesville, Florida and worked his way up the ranks. In 1995, after graduating from The Restaurant School at Walnut Hill College in Philadelphia, Reading opened the Fox Point Grill in Wilmington, known for familiar fare with flair. Unfortunately, a kitchen stove fire put an end to that venture. In 1999, Reading opened Espuma in downtown Rehoboth, which dared to stay open all year, and Nage, which bucked the norm when it opened on Route 1. (Most fine-dining restaurants were in downtown districts.) He sold both and opened Abbott’s Grill locations in Milford and Laurel, followed by Brick Works Brewery in Smyrna. SPOTTING OPPORTUNITIES Reading closed the Milford Abbott’s. However, the concept retained name recognition in Milton, where Reading had participated in the farmers' market. “We were in Milford for 11 years, and people wanted to know when we were coming south,” he says. Sydney’s Restaurant & Lounge’s closing on Jan. 1 allowed him to bring the brand to Milton and its growing population. “The beaches are moving west,” he says. “And we love the facility.” Admittedly, it’s not an easy space, which might be why it’s had three previous occupants. The two-story ceiling over the main dining room and balcony can trap noise. When bands performed at Sydney’s, the conversation came to a halt. Reading’s designers installed distressed-looking wood on the two-story wall to absorb sound and create a coastal vibe, a theme reinforced by a lighthouse and bright coral and teal colors. APPROACHABLE CUISINE Over the years, Reading has perfected his menu of comfort food with a twist, and that’s apparent at Abbott’s Grill. For instance, the lobster bisque is kissed with red curry and served with a lobster Rangoon. The Caesar salad has tangy fried capers, and the pan-seared scallops come with a sweet corn puree and black garlic romesco sauce. Sandwiches are a large part of the menu, and The Big Sussex is a nod toward Reading’s adopted home. Sesame studded rolls are packed with finely diced chicken salad and crispy fried oysters. Entrees include Cajun meatloaf, the bestselling shrimp and grits, and the equally popular short rib pot roast with roasted garlic mashed potatoes and sweetand-spicy Brussels sprouts. “If I take it off of any menu, it’s going to be a problem,” Reading says of the roast. Chef Paul Gallo joined Reading in the new Abbott's kitchen to pump out delectable dish after dish. Not surprisingly, the service on the pre-opening night was a well-oiled machine, even though the team was using the night to work out any kinks. Although Reading was battling a cold, he made time to greet customers and see old friends—and there was no shortage of compliments. The boss was indeed back. 12 THE CURRENT | JUNE 20, 2024 THE CURRENT POUR CRAFT YOUR OWN SIGNATURE FLAVORS On its own, vodka is a potent blank canvas, just waiting for whatever flavors you want to give it. Infusing your vodka gives you the freedom to come up with your own creative flavors rather than relying on the good folks at your favorite liquor company. Here’s how to do it and some flavor combinations to get you started. START WITH VODKA You don’t want top-shelf here. You’re adding in your own flavor, so you don’t need the base liquor to be all that fancy. Just be mindful if you’re gluten-free that your bottle wasn’t distilled from grain. PICK A VESSEL Unless you’re working with herbs or fruit slivers, the vodka bottle isn’t going to work. Grab some wide-mouth mason jars next time you’re at the supermarket for a pretty and easy solution. START CONCOCTING Now let your mind go wild. Citrus and other fruits are a great place to start (slice them first. Do not toss in a whole orange, even if it will fit through the mouth of the jar, and call it a day). Chiles are great for heat (cut them, too). Try cinnamon (toast it to release the flavor) and other spices, but go for the whole, not ground versions. Ground herbs and spices can give the finished product a dark color and gritty mouthfeel. Once you’ve got a winning flavor combination, cap it off—if you got the mason jars, they come with lids—and leave it out on the counter for 3-7 days. The alcohol should keep your flavor carriers from spoiling. Shake the jar about once a day and taste it to see how it’s coming along. Once the infusion is to your liking, strain out the solids and toss them. Pour the vodka into a clean jar and cap it. Vodka made with perishables should be kept in the fridge. If you used shelf-stable products, like dried fruits and spices, you can store it at room temperature. You can wash and reuse your infusing jar for your next batch. JUNE 20, 2024 | THE CURRENT 19 PIECE by PIECE Growing up in Wadsworth, Ohio, Susan Thornberg and her two older brothers quickly learned to entertain themselves. Their father was sick for most of their childhood and died when she was 15. Their mother worked at J.M. Smucker Co.—also known as Smucker’s. In those pre-Internet days, the siblings played cards and games and pulled out puzzles. “Any kind of puzzle,” she recalls. “That was our thing.” Today, Thornberg's love for puzzles has evolved into a fun art form. She designs the Rehoboth Beach-themed jigsaw puzzles sold at Browseabout Books. The limited-edition images have a loyal following. “Browseabout has enjoyed working with Susan since 2015, and we could not be happier with our partnership,” says Susan Kehoe, Browseabout’s owner. “Her artwork spoke to us immediately, and we have created beautiful, exclusive Rehoboth-themed products with her.” Puzzles are not an artist’s typical outlet. But then, Thornberg is not your typical artist. In many respects, her medium demonstrates the marriage of art and technology. A CAN-DO ATTITUDE As a child, Thornberg wanted to be an investigator. “I like to figure things out,” she explains. However, she discovered art in high school, when students were largely allowed to select their class schedule. “I took every art class I could because I thought the art teacher was phenomenal,” she says. After a brief period at the University of Akron, she pursued her muse at a two-year fashion institute in Fort Lauderdale. She received her bachelor’s degree in business administration from Nova Southeastern University, also in Florida. Looking back, she realizes she fell in love with the beach while living in Fort Lauderdale. But back in Ohio, she was less enamored by fashion merchandising. After working two years in the field, she moved to Washington, D.C., to get a job as an investigator. What Thornberg lacked in experience she made up for with determination. She tied her tennis shoes, grabbed her resume and went door-to-door between government buildings. She got hired. For 33 years, Thornberg conducted criminal investigations and background checks. Toward the end of her career, she interviewed people before they took a polygraph test or met with psychologists. Meanwhile, she met and married Rich Thornberg and had two daughters, Emma and Rochelle. When she found time for art—which was rare—she pulled out her watercolor paints. THE ROAD TO REHOBOTH When the children were small, the family vacationed in the Outer Banks. They got tired of the travel time and switched to Rehoboth Beach. “You’ve got Funland, the boardwalk—everything is walkable,” she says. “We fell in love with Rehoboth.” So much so that they bought a condo in Spring Lake on the Forgotten Mile and then a home in Rehoboth proper. In 2020, the family leased the condo to traveling nurses assisting Beebe Healthcare with its COVID-19 response. When the couple heard that hospital ICU space was tight, they went to their Reston, Virginia, home. “If we got sick, we didn’t want to take one of the ICU beds because we had another place to go,” explains Thornberg, who continued renting to the nurses without raising the rent as long Artist Susan Thornberg creates colorful puzzles of Rehoboth as they needed the accommodations. The Thornbergs have since sold the Spring Lake condo and now divide their time between Rehoboth and Reston. When Rich retires, they plan to make Rehoboth their primary address. BEHIND THE LENS Credit a Nikon D100 digital camera for rekindling Thornberg’s interest in art. She bought her first camera in 1998. “I was fascinated by it,” she says. “I took photos of my kids, and they were all online. I started playing with it, painting online, and combining technologies to create the vision of whatever I wanted to create.” She taught herself to use Adobe Photoshop, which remains her preferred software. 20 THE CURRENT | JUNE 20, 2024 Susan Thornberg with Susan Kehoe, owner of the beloved Rehoboth Beach store, Browseabout Books. I HAVE THESE CREATIVE IDEAS, AND I NEED TO GET THEM OUT OF MY MIND. The artwork is vibrant—daytime skies are often pale blue, and there are typically touches of fire engine red, tiffany teal and lemon yellow. Meanwhile, sunset scenes are streaked with lavender, gold and pink. The colors—and the Rehoboth settings—caught the eye of Kehoe at Browseabout Books, who approached the artist to create pieces for the store. Meanwhile, Thornberg had unsuccessfully searched for a Rehoboth-themed jigsaw puzzle and suggested they collaborate on a series. They agreed on a lump annual sum. Thornberg does not receive royalties but gets an additional fee if Browseabout reorders a product. “It was a handshake and a hug,” Thornberg recalls. That was in 2015, and the first puzzle sold out within two weeks. CONNECTING THE PIECES A puzzle starts with a scene, and Thornberg continually snaps photos for her massive online library—her source of inspiration. After Browseabout approves the idea, she uses software to add or subtract elements as needed. For instance, her puzzle of the Rehoboth Beach Boardwalk, complete with the old Dolle’s sign, has flags atop the Atlantic Sands Hotel. But they’re not in the original photo. She’s added Hoda Kotb, a regular Browseabout customer and even included Waldo from “Where’s Waldo.” Thornberg’s latest beach puzzle boasts a Rehoboth Beach sign on the umbrella shack, which was not in her photo. Seagulls are frequent additions; at least one usually has a pilfered French fry in its beak. “It’s just your typical beach day in Rehoboth,” she says. “It’s a full day with the ocean, a boat and all different colored umbrellas.” Those in the know look for Thornberg’s Taylor Swift-like Easter eggs, such as the letters VT. (Her daughters and Kehoe went to Virginia Tech.) “You probably can’t see it on the box, but when you’re putting it together, you’ll see a VT on a piece,” she hints. You may also spot the letters, R, E, A and D. She reuses certain aspects, such as a seagull, thanks to digital technology. But she will only insert the image if it fits the scene—and it’s not as easy as it sounds. For instance, the gull may require a shadow. FILLING A NICHE The puzzles are mostly 500 pieces, although some can have as many as 2,000. The smaller puzzles are easier to mail, Thornberg notes. Regardless of size, the puzzles are perfect for vacation rental homes, and Thornberg has even seen them in hotel lobbies. The boardwalk scene with the rooftop Dolle’s sign remains a bestseller. Indeed, when Susan Eliason learned the sign was coming down, the Felton resident purchased the edition. “I wanted to remember [the boardwalk] as it was during my childhood,” she says. When two Dolle’s signs were up, Thornberg created a puzzle called “Double Dolle’s.” The jigsaws also found a grateful audience during the Covid19 pandemic. “I purchased her puzzle from Browseabout, and it really added a lot of joy during that time,” says Karen Falk of Rehoboth Beach, who assembled it with her husband and two children. “It also took over the dining room table, but that was OK.” Jennifer DeBernardis is another Browseabout customer who bought a puzzle during the pandemic. “I wanted to support a local business and artist,” says the Millsboro resident. Locals like items that salute their hometown. Says Falk, “We were saying that we know we live in a special town when an artist makes a puzzle from a landmark where you live.” Thornberg would be happy to hear it. She’s so attached to Rehoboth Beach that she hopes people enjoy putting the pieces together, she says. MORE THAN PUZZLES Thornberg retains the rights to the illustration, and her agreement with the bookstore isn’t limited to puzzles. Thornberg’s illustrations can appear on towels, mugs and other items that Browseabout wants to sell. She works with third-party vendors through the production process. On her Etsy site, customers can purchase prints, some of which were used for puzzles. She also sells botanicals, such as lotus flowers and dogwood, and there are scenes from Spain, Long Island and Reston, Virginia. (Her work is available at The Blue House, a Bethesda, Maryland, store.) Now that Thornberg has been bitten by the pickleball bug, she has a line of greeting cards featuring a pickle in a pleated pink skirt holding a paddle. “I have these creative ideas, and I need to get them out of my mind,” she says. On average, she spends about 20 hours a week on her art. However, when she’s designing a puzzle, that number jumps to nearly 80 hours. When the collaboration began, Thornberg did up to three a year. Because Browseabout only has so much room to store the boxes, Thornberg does about one a year. The beach scene, available now, is her 17th puzzle, and Kehoe is eager for more of the artist’s colorful, whimsical products, be it puzzles or other gift items. “We look forward to working with Susan to collaborate on new and exciting items for years to come,” she says.

Consider that: If a hurricane were to track up the Delmarva coast, our visitors and residents would end up sharing crowded evacuation routes with Marylanders and Virginians who will have a head start. To support an orderly evacuation, Delaware established evacuation zones in low-lying areas that are susceptible to storm surge and wind effects. Authorities may issue evacuation notices for all or some of these zones, depending on the magnitude and severity of the storm. They may also advise certain locations to shelter in place. The storm generated evacuations and a storm surge of 5.06 feet above the predicted tide in coastal Delaware, leading to widespread flooding and property damage. HURRICANE IRENE brought heavy rain, a tornado to Lewes, and widespread power outages. 24 THE CURRENT | JUNE 20, 2024 VENTURE OUT BY NANCY SAKADUSKI LUXURIATE IN LAVENDER A FAMILY FARM OPEN TO THE PUBLIC Located just 15 minutes west of Route 1, Lavender Fields at Warrington Manor is Delaware’s only free-to-visit lavender farm. Although it’s a family farm and a private residence, it’s open to the public nearly every day, 10-4. Owner Caitlin Spieker-Gee took over Lavender Fields in December, but the farm has been operating for thirty years. WHY LAVENDER? Lavender has been used for more than 2,500 years. Its fragrant flowers are thought to relieve stress, ease headaches, and promote calm. “People visit for different reasons, says Caitlin. Parents come out with their kids…I always tell them they can take their shoes off and let them be as feral as they want.” Some people come for the labyrinth, a type of path that’s been used for more than 4,000 years for spiritual purposes. The Lavender Fields’ labyrinth is an exact duplicate of the one in the floor of the Chartres Cathedral in France. Others enjoy the Cottage Store for its lavender sachets, soaps, candles, bath and body products, teas, seasonings, and even bug repellent. A new feature at the farm is the Wildflower Café, which offers lavender tea, lavender lemonade, and a PBJ made with peanut butter, triple berry, and lavender jelly. INCLUSIVE AND ACCESSIBLE Caitlin wants the farm to be available to everyone. “We really lean in the direction of inclusivity—for all socio-economic [levels], we align ourselves with the LGBTQIA community and people with differently abled family members…everybody can come out here and walk around.” She notes that visitors with mobility limitations can be dropped off in front of the buildings, and there is a ramp into the café. So, why not take a break from the busy beaches and visit Lavender Fields? You might just see those frowns turn upside down. ROB RECTOR + Protected Species Observer WHALE WATCH Delaware's Coastal Giants and Our Role in Their Story The Delaware coastline has had a long, complicated history with whales. The state of Delaware was founded by the Dutch in 1631 in an attempt to establish a whaling colony. Upon arrival, they soon realized Delaware was not considered a “hot spot” for whale activity. That said, the state is still home to at least 10 species that move far off the coast. Occasionally, some will swim closer to shore and sometimes even strand on our beaches (which occurred in May when a 51-foot subadult fin whale beached just north of the Indian River Inlet). And while public perception has shifted and our appreciation for these breathtaking animals has evolved following centuries of research, there is still a need for the human population to change its behavior in order for much of the whale population to survive. A recent finding regarding beached marine mammals, including whales and dolphins, has revealed that many have ingested microplastics. While it may not have been the direct cause of their strandings, it does demonstrate that our over reliance on plastics has a greater impact than one might think. According to researchers, whales and dolphins are closer to humans than many realize. For example, they are found to have spindle neurons in the brain, which allow them to feel more complex emotions similar to that of humans, such as empathy, playfulness, stubbornness, and sensitivity. And some scientists believe that with advancements in artificial intelligence, humans’ ability to decode whale songs may progress to the point of actually bridging a language gap between the species. Scientists are learning more and more about these creatures all the time, and we have the ability to help these mammals and their habitats through mindful changes to our everyday behavior, such as saying “no” to plastics, banning sonic testing, and decreasing carbon output. The more we learn about them, the more we can learn from them, so listed below are the various species found off the Delaware coast and interesting facts about each: SHORT & LONG FINNED PILOT WHALE: (Population estimate: 780,000 in North Atlantic) The Pilot Whale (which is more closely related to the dolphin) is found throughout the world and will eat small fish but prefer squid. The female short-finned whale has been known to actually go through menopause. ORCA: (Population estimate: 50,000 globally) Even though they are categorized as whales, they are actually more closely related to dolphins. They are the only non-human animal on the planet to have evolved with its culture, following a study of whales in the Pacific and Antarctic Oceans. SPERM WHALE: (Population estimate: 300,000 to 450,000 globally) The largest (up to 52 feet) of the toothed whale species, the Sperm Whale are world-class divers, known to hunt for food at depths of up to 3,000 feet. PYGMY SPERM WHALE: (Population estimate: not known, as they actively avoid ships and planes) Not to be confused with its cousin the dwarf sperm whale, measuring about 9.5 to 11.5 feet in length, the Pygmy Sperm Whale is the smallest of the whale species and is not much larger than an average dolphin. SEI WHALE: (Population estimate: 8,600 in North Pacific, the only estimate available) The Sei Whale is a baleen whale, which means instead of teeth it has a system of filters in its mouth used to capture its food. The bristly system is actually keratin, the same substance that makes up human fingernails and hair. FIN WHALE: (Population estimate: 2,700 in North Atlantic) The second-largest whale on the planet (bested only by the Blue Whale), it can reach lengths of up to 85 feet and weight up to 80 tons. Fin Whales tie Blue Whales for making the lowest-frequency sounds of any animal. Having graduated from Penn State with a degree in Kinesiology and Exercise Science, he always “had a calling to fitness.” In early 2014 he completed his personal training certification and Les Mills Training certification. Austen is a Delaware beach local, who, over the past decade, has trained hundreds of people across the country. “I only want to teach people what’s authentic and real.
