As a chef who advocates for sustainability in southern Delaware, I've embarked on a delightful exploration of this philosophy, and I want to share this recipe for Carrot Peel Jam. Carrots are a staple in kitchens worldwide, prized for their sweetness, versatility, and nutritional benefits. But what about their peels? Often overlooked and discarded, these humble carrot peels are a hidden treasure packed with flavor, nutrition, and potential. This recipe for Carrot Peel Jam A Beautiful Carrot Peel Jam Made from What Normally Gets Thrown Away flavored with vanilla, orange, and cardamom is a testament to how we can transform these simple scraps into something extraordinary. It's perfect for spreading on toast, swirling into yogurt, or as a unique dessert topping. I created this recipe a few years ago and served it after a charity event for the Lewes Farmers Market, where they screened the Indy Film: Wasted! The Story of Food Waste. This is the first article in a three-part series about sustainable food practices and utilizing food waste. This approach fosters a more mindful way of cooking and eating, where every morsel of food is cherished, and nothing is wasted. Let this Carrot Peel Jam inspire you to view your kitchen scraps in a new light and uncover the hidden flavors waiting to be discovered. CARROT PEEL JAM INGREDIENTS: ▶ Carrot peels from about 900 grams of carrots (about 2 cups of peels) ▶ 300 grams of granulated sugar (1.5 cups) ▶ Juice and zest of 1 large orange (about 80 ml juice and 2 tablespoons zest) ▶ Juice of 1 lemon (about 30 ml) ▶ 1 vanilla bean, cut in half lengthwise, and scrape the seeds. ▶ 5 grams of ground cardamom (1 teaspoon) ▶ 120 ml of water (1/2 cup) ▶ 15 grams of pectin (1 tablespoon) INSTRUCTIONS: ▶ Prepare the Carrot Peels: Ensure the carrots are thoroughly scrubbed and cleaned before peeling. Save the peels in the freezer in an airtight container until you accumulate the required amount. ▶ Cook the Peels: Combine the carrot peels, water, orange juice, zest, and lemon juice in a medium saucepan. Simmer over medium heat until the peels are tender, about 10-15 minutes. ▶ Mix Sugar and Pectin: Mix the granulated sugar and pectin in a small bowl. This step is crucial to prevent clumping and ensure a smooth consistency in your jam. ▶ Add Flavorings and Thicken: Now, it's time to infuse the saucepan with the magic of flavor. Add the sugar-pectin mixture, the vanilla bean (pod and seeds), and the ground cardamom. Keep stirring over low heat until the jam reaches its desired thickness, which should take around 20-30 minutes. ▶ Test and Bottle: To test the jam's setting point, place a small amount on a chilled plate; if it wrinkles when pushed, it's ready. Bottle the hot jam in sterilized jars, leaving about 6 mm (1/4 inch) of head space. Seal while hot. ▶ Process and Store: Process the finger-tight-sealed jars in a boiling water bath for 10 -15 minutes. Once cooled, check the seals. Store in a cool, dark place and refrigerate after opening. Continuing to scan, you see an inviting backyard chock full of hammocks and lawn games. A marquee sign stands out with some punny news on display. Above that, glowing in the sun, you read “Crooked Hammock Brewery” and decide to make a pit stop. Here’s what you can look forward to. Let’s start with some suds. Crooked Hammock has been brewing up the good stuff since its opening in 2015. Director of Brewing Operations, the legendary Larry Horwitz, gives us his must-try beers at the Hammock this summer. If you’re in the mood for something crispy and crushable, his go-to is Hammock Light, an American light lager that is perfect for sunbathing at the beach, mowing the lawn, or doing just about anything. Need a little more hops in your diet? He recommends Sway, their flagship hazy IPA. “This one is super citrusy, you just keep going back for more,” he says. If beer isn’t your thing, they’ve still got you covered. Crooked Hammock has recently begun brewing hard seltzers and teas in-house and has an extensive cocktail program. Now that your thirst is quenched, let’s take a look at the menu. Inspired by the backyard cookout, they’ve got award-winning wings, elevated apps, and burgers that would make your neighborhood grill master jealous. Something new this summer are the specials. Director of Culinary, Chef Ted Deptula, shares that they’re “bringing limited-time offerings to the Hammock all summer long”. Every month, you’ll see three to four new themed menu items cycling through, typically an appetizer, a sandwich, and an entree. Here’s a sneak peek of what’s coming in June. 12 THE CURRENT | MAY 23, 2024 SMALL WONDER, BIG BITES BY PAM GEORGE Step (err, drink) your way back in time The Libation Room On New Year’s Eve 2019, celebrations across the country sported a Roaring ’20s theme, complete with flapper dresses and gin cocktails. However, the revival of the speakeasy era did not end in 2020—especially in the hospitality industry. For proof, consider two new area restaurants inspired by the 1920s: The Cured Plate in Milford and 302 The Local in the Rehoboth Beach area. And, while the décor in The Libation Room is more 1950s than 1920s, it’s still a secretive restaurant within The Summer House. These three establishments are happily aboveboard—Prohibition ended in 1933—and each sports a distinct menu. The Cured Plate: Cocktails and Charcuterie The restaurant’s name is inspired by meat-and-cheese boards, collectively known as charcuterie. However, charcuterie is technically a branch of French cooking devoted to preserved meats, such as smoked sausages. Before Liz and Kenny Klingensmith opened the downtown Milford eatery this past February, they had a business focused on charcuterie, cheese and fruit plates, which became all the rage during the pandemic. When they decided to open a brick-andmortar shop, the craze had quieted but remained strong. So, they added cocktails to their concept. The menu has a page devoted to board selections: artisanal cheeses, cured meats, jams and honey. Small plates, sandwiches and kebabs are also available. The comfortable loungey atmosphere is conducive to conversation. Klingsmith says speakeasies were old-time gathering places where people hung out with a few drinks. “Now, everyone is on their phone,” she says. I think the 1920s speaks to a lot of people because it puts them in a comfortable place.” Unlike actual 1920s speakeasies, families are welcome at The Cured Plates, which has items for kids. 302 The Local: Where Everybody Knows Your Name This new restaurant is in Chaps Pit Beef ’s old location next to Iron Hill Brewery & Restaurant. However, Chaps’ customers will see some familiar faces. Chris Desch was the Chaps franchisee. Speakeasy-style eateries you'll want to find He owns 302 The Local with his brother, Steven. “I wasn’t cut out to be a franchisee,” says Desch. “It isn’t for everyone, especially someone creative who wants to spread his culinary wings.” For the new concept, his goal is to provide a place where area residents can meet. “We love the tourists—they’re great—but we wanted to celebrate the locals,” he explains. However, when it came to décor, he gravitated toward items from the early 20th century, including Delaware license plates, a wall phone, and a piano. “I love the whole 1920 to 1933 Prohibition thing; there’s something mysterious about ‘The Great Gatsby’ of it all,” Desch says. The cuisine, however, appeals to the modern palate. Consider smash burgers, fried chicken sandwiches, hotdogs and sandwiches. Many items are named for 1930s-era gangsters. For instance, the Al Capone burger has ghost pepper cheese, serrano peppers, and mayonnaise with ghost pepper emulsion. “We want to focus on freshness and quality,” Desch says. “We want to do the best we can with quality and price for locals.” The restaurant debuted a separate dinner menu available from 4 p.m. to 8 p.m. and one entire wall is dedicated to the bar and shelves of spirits, including bourbons and whiskies. Well-known area bartender Ryan Minnick designed the cocktail program. The Libation Room: A Restaurant Within a Restaurant The Summer House’s back room was once a refuge for locals escaping seasonal crowds. They didn’t need to leave their beer behind. A sign over the bar read "Libations Served Here," recalls Regan Derrickson, a bouncer at the Rehoboth landmark when he was 21. After purchasing the landmark restaurant in 2022, Derrickson turned the room into a stylish lounge with a Rat Pack attitude. The entire Summer House menu is available. However, The Libation Room’s guests can also select cocktails and tapas from a specialty menu, including black garlic-truffle parmesan popcorn, scallop crudo and caviar cannoli. The Libation Room takes reservations, although The Summer House does not, making it a good option for those who want to ensure a seat during the season. Plus, you’ll feel like Travis and Taylor when you whisper your name to The Summer House host, bypass customers waiting for a table and walk through the double doors to the secret space. BY PAM GEORGE Jazz Yard, a new Wilmington Avenue restaurant owned by investors from the Lehigh Valley. He’d never been to Rehoboth and had a job lined up in California, so he figured he’d make some money over the summer. A SERENDIPITOUS SITUATION Raised in Lewes, Karen’s first job was at the Dairy Queen on Lewes Beach, and that was the extent of her hospitality experience until she and Matt bought One Coastal. While a senior at Cape Henlopen High School, she started working at Quiet Storm, and the owners have become like family. She started taking college classes until she got pregnant. As she puts it: “Life happened.” She and her daughter, Chloe, lived above the flower shop in downtown Lewes and later moved to Dagsboro. She continued working at Quiet Storm, whose parking area was adjacent to Atlantic Jazz. Matt quickly noticed the shy, dark-haired girl. “He came into the store quite a few times, and I would just run away,” Karen recalls. “I was a mom. I didn’t need a man—I was good.” Nevertheless, her coworker played matchmaker by telling Matt that Karen was “crazy about you.” He walked over with a peanut butter dessert in a to-go box and asked her out. “I said, ‘Yes,’ and that’s all she wrote.” Indeed, when Atlantic Jazz closed without making it through the first season, Matt stayed in Delaware to successfully woo Karen. They wed in 2011 and now have a son, Asher. TURNING TABLES Matt worked at Blue Moon in Rehoboth, Perucci’s Classic Italian Restaurant in Millville, and for SoDel Concepts before landing at Salt Air. The hours would be hard on most young families. Karen, however, was accustomed to being a young, independent mom, and she was so busy raising the children that she didn’t miss weekend socializing as a couple. “The kids are a priority, and it just works,” she says. “I never got mad about him working because it’s seasonal in restaurants and retail: weekends, holidays—I totally get it.” Matt, however, was growing weary of the hours and the inability to fully source sustainable products from local providers, the goal he had set since working with Lehigh Valley chefs who followed that philosophy. He felt that too many establishments wanted cooks who could “turn and burn” through service. Lion Gardner, with whom he worked at Blue Moon, knew that Heirloom in Lewes needed an executive chef. Owner Meghan Lee’s opening chef had left before the well-received eatery marked its first anniversary in 2016. The kitchen in the Victorian house was new and filled with equipment, and Lee shared Matt’s passion for a fresh, seasonal menu. Matt From dishwasher to James Beard hopeful, One Coastal Chef Matt Kern opens up about his culinary journey and the unwavering support of his wife Karen, who has sweetened every step along the way. Matt and Karen Kern have little time for weekend getaways in June. They own One Coastal in Fenwick Island, where Matt is the chef and Karen works up to 48 hours a week at Quiet Surf Storm Shop in Rehoboth Beach and is a part-time Realtor. In short, their professions are some of the most stressful at the beach, especially during the season. Nevertheless, the couple will be heading to Chicago on June 9 for a two-night trip because Matt is a finalist for a James Beard Award—the Oscar of the culinary world. The ceremony is on June 10, and if Matt wins Best Chef Mid-Atlantic, he will be the first Delaware chef to earn the achievement for his culinary skills. In 2014, Matt Haley received the Humanitarian of the Year Award, and in 2017, Sam Calagione, founder of Dogfish Head Craft Brewery, won the Outstanding Wine, Spirits, or Beer Professional Award. However, to date, no Delawareans have won for their cooking. While being a finalist is a tremendous honor, the self-taught chef considers it a reward for staying true to his vision. He has no culinary degree, but he has an artistic spirit, a keen eye and the support of his wife, his biggest cheerleader. ON-THE-JOB TRAINING Food was part of Matt’s life from an early age. The Bethlehem, Pennsylvania, native often cooked with his stepmother, Gina, who was from a big Italian family. His mother was Pennsylvania Dutch and proud of the cuisine. At age 14, he became a restaurant dishwasher and moved up the ranks. Although a loner in school, he blossomed in the chaotic kitchen. At every new job, the young cook watched the other chefs. “I would say my two best assets in the kitchen are observation and adaptability,” he says. He still remembers the first time he smelled veal stock. “It was intense; I’ve never smelled anything like that before.” Matt spent three years at The Edge, where French and Asian influences collided, before moving to Bolete, co-owned by Lee Chizmar, a James Beard award semifinalist. “He is so humble but such a badass,” Matt says. Everything was made from scratch.” At Bolete, Matt learned the true definition of a “restaurant family,” composed of the kitchen crew and front-of-the-house servers and managers. He now nurtures those bonds at One Coastal. Admittedly, some learning experiences weren’t pleasant. One night, after cleaning and draining the deep fryer, he poured fresh oil into the machine which leaked from the nozzle he’d neglected to close. The chef and others working the line were far from pleased. Ready for adventure, Matt moved to Rehoboth in 2010 to work at Atlantic Tasting Success
22 THE CURRENT | MAY 23, 2024 hit the ground running, applying the techniques he learned at previous restaurants and building team spirit. He also turned out beautiful plates. Always interested in art, the chef studied color and texture combinations as intently as he watched his mentors. The result is a photo-worthy dish ready for a social media post. While at Heirloom, Matt was a semi-finalist for a James Beard Award in 2019 and 2020, and his name became known in dining and hospitality circles. Despite the accolades, Matt realized he wanted to be a restaurateur. Karen agreed: “I just know he needed his own place,” she recalls. He left Heirloom in 2021 to consider his options, which included leaving the state. FARM TO TABLE The Kerns learned through the grapevine that Scott and Carlie Carey were considering selling their Fenwick Island restaurant, One Coastal, which used local products, including produce grown on the Careys’ property. Matt was intrigued. “Out of 1,200 restaurants in Sussex County, there are about 2% that are farm to table,” he says. “This place had such a strong, local following.” The excellent reputation was an advantage, considering restaurants took it on the chin during the pandemic. Karen and Matt met with the Careys and struck a deal, which included Matt becoming their executive chef until the transfer of ownership was complete. The new owners spent a month painting and redecorating the dining room. It was quick work; One Coastal reopened in early 2022 so the staff could make money. Along with keeping his team happy, Matt was on a mission to espouse the slow food movement and support local farmers. In other words, he wanted to “focus on delicious food that is representative of where we live and make everyone who walks in the door feel like a VIP.” The 49-seat restaurant quietly gained new fans while pleasing longtime customers. One Coastal has always had an “if-you-know-you-know” vibe that makes it feel like a hidden gem despite its location on Coastal Highway. JAMES BEARD RECOGNITION AND LIVING THE DREAM It was enough to attract the attention of the James Beard Foundation, which manages the nomination process and award ceremony. The foundation honors the legacy of James Beard, a cookbook author, instructor and TV personality who made American cooking respectable. After his death, his friend, Julia Child, led the movement to preserve his New York townhouse. The James Beard Foundation was founded in 1986 in his honor to protect and promote the American culinary tradition. Matt learned he was a semi-finalist in January and a finalist in April. Both announcements were met with tears of gratitude. “I’m just making good food, trying to support local agriculture the best way I can and believe in my staff,” he said in January. “This is how I make my living, and I’m not going to get rich in a 50-seat restaurant.” To be sure, it’s not an easy profession. After the couple bought One Coastal, Karen would get calls from Matt panicking about a broken oven, or the cook who called out sick. “I would be like, ‘Oh, my god!’” she says of the day’s crisis. For the retail veteran, it was baptism by fire—welcome to the restaurant world. While she pitches in when needed, she primarily works on Thursdays and handles bookkeeping. Despite the daily adrenaline rush, she’s happy that her husband is running a restaurant on his terms—and so is he. “I’m doing what I believe in and what I really love to do,” he says. When he gets a break in the off-season, he goes camping and fishing in Pennsylvania’s “Grand Canyon.” “I sleep better in a sleeping bag on the ground than on the bed,” he notes. One day, he would love to be a fly-fishing guide who takes groups into the woods to learn to fish. “That’s the dream,” he says. Based on his past, he’ll likely realize it. Because whether Matt wins or not on June 10, he knows that dreams do come true. He got the woman, the family—both at home and on the job—and the kudos. Life is good. LIFE IS GOOD.” A CULINARY Love Story Despite their busy schedules—Matt as chef at One Coastal and Karen working up to 48 hours a week at Quiet Storm Surf Shop and part-time as a Realtor— the couple manages to find moments to connect, especially in the kitchen.

MAY 23, 2024 | THE CURRENT 27 VENTURE OUT Take Mac (and Cheese) to Fleetwood Pond BY NANCY SAKADUSKI It’s not just rumours. Fleetwood Pond in Prime Hook National Wildlife Refuge, located just north of the crowded beach areas, really rocks. There are many wonderful spots in Prime Hook, but Fleetwood Pond hits just the right note. Grab some mac (and cheese) and take Route 1 to Broadkill Road (adjacent to The Rookery Golf Course), turn left on Turkle Pond Road, and follow the signs. Next to the parking area is a short walkway to a boardwalk pier with a viewing area and benches. This would be the perfect spot to decompress and enjoy your mac and cheese. Watch for painted turtles—they love to bask in the sun, and if a good log comes along, they may well pile on top of each other as a sort of turtle Jenga game. I’m told there are bass, bluegills, and pickerel in the pond (all state fishing regulations apply on the refuge) and there’s a place to launch small boats. A few folding chairs would do you well if you plan to fish, and there’s an area perfect for any children who want to fish. When you’ve finished your mac and cheese (and, of course, picked up after yourself), head back to the parking area and look for the Pine Grove Trail, an easy 0.8-mile loop that winds through a pine and hardwood forest adjacent to Turkle Pond and Fleetwood Pond. A spur off the trail leads to a viewing platform overlooking the marsh. Prime Hook National Wildlife Refuge hosts a wide range of birds (300 species have been spotted), and you may even glimpse North America’s largest rodent — the endangered Delmarva Peninsula fox squirrel. It’s the one who missed several orthodontist appointments, but then said “Dam! No matter where on Earth you live.” As an oceanographer, author, explorer, and lecturer, Earle knows well about what she speaks. She understands the hazards posed to our environment from pollution, climate change, and habitat destruction. With increased boating activity and the depletion of fish stocks, the ocean and its inhabitants are exposed to innumerable life-threatening dangers. Education is the most important tool in turning the tide on oceanic health. Understanding the delicate balance between the well-being of the oceans and humans can help protect and preserve the ocean’s life-giving powers. The vast ocean remains the planet’s most important asset, as it holds 80 percent of the Earth’s living things and spans millions of miles of rich, dynamic ecosystems. To help put it into perspective, consider that the depth of the Mariana Trench (in the Western Pacific Ocean) is a mile and a half longer than the height of Mount Everest. Unveiling the Crucial Role of Our Oceans in Sustaining Life and Ecosystems 1 The ocean regulates our climate and provides us with the air we breathe Our ocean absorbs about 25 percent of all carbon emissions (cement production, deforestation, burning fossil fuels) and generates about 50 percent of the oxygen we need. Oceans are essentially the lungs of our planet and regulate temperatures on land by taking in more than 90 percent of the climate’s excess heat. 2 The ocean feeds us Seafood is a major source of protein for billions of people However, destructive fishing practices mean more than 10 million tons of fish go to waste annually. We must protect marine life to ensure future food security. If we continue our current practices, experts predict more than 50 percent of global marine species may face extinction by the year 2100. 30 THE CURRENT | MAY 23, 2024 SCOTT ALLEN Swinging for inclusivity ASK THE GOLF COACH BY LANA MORELLI Scott Allen has been coming to the Delaware beaches for 30 years, and, after accepting his position as Senior Southern Delaware Coordinator of First Tee—Delaware, has been a proud full-time resident for the past 3 years. First Tee—Delaware is a non-profit golf youth development organization serving the entire state of Delaware, as well as several counties in Maryland. “We provide exposure to the sport and the culture of golf for kids aged 4 through 18,” Scott explains. There are currently 150 chapters of First Tee across the nation and Scott leads the teams in Southern Delaware. “Golf gets a bad reputation that it can be unwelcoming to kids, women, and minorities. But I think no matter who you are or where you’re from, there are places to play golf.” Scott has athletic roots and started golfing at 11 years old. “I was introduced to the sport by my grandma who was a Physical Education instructor and coach. During a time when many women didn’t work or play golf, she taught Physical Education at the University of Delaware and loved golfing.” Scott’s mother was also an avid golfer, and it was “par for the course” that she encouraged him to play during his undergraduate career at George Washington University. While completing his master’s degree in International Affairs, Scott obtained his PGA membership and starting instructing. “It was always something I enjoyed,” he said. He coached Division 1 golf at both George Washington University and University of Pennsylvania. Scott has parlayed his love of golf into a career and expanded his interest from hobby/pastime to a philanthropic journey, exposing as many people as possible to this amazing sport. “We even use golf to rehabilitate veterans,” Scott asserts. He was the former Executive Director of The Salute Military Golf Association (SMGA), an organization that supports the mental and physical rehabilitation of post-9/11 wounded and injured veterans. In 2010 Scott joined First Tee— Delaware, as a lead instructor, then Executive Director, and now holds his current position. Last year alone his organization taught golf to over 200 children in Sussex County. First Tee— Delaware helps provide exposure to golf while eliminating any intimidating factors. Golf can often be considered an exclusive sport that requires private memberships or club access. But Scott has always felt the contrary. “I want the culture of golf to not be intimidating with all the rules and etiquette. For me, golf is non-discriminatory and is truly a lifetime sport that anyone at any age can play.” He also describes golf as character building, and, by its very nature, teaches composure. “You’re competing against yourself. You play the course how you play and challenge yourself.” Scott is also a part of the First Tee— Delaware School Program, where he and his colleagues create curriculum that meets state standards and train PE teachers on coaching golf. (A full circle homage to his grandma and the origins of golf for him.) They visited 18 schools in Sussex just this year. “Through the schools we are able to introduce over 7,000 kids to a sport with which, otherwise, they may not come in contact.” In addition to curriculum and online access, they also provide equipment to the schools.
